No Thanksgiving is complete without cranberry sauce. This recipe is very customizable to your family's palate. In this version, I've used honey, orange juice, and crystallized ginger. But I have made it in the past with a sweet white wine and apples, which is also delicious. Using fresh cranberries, the sauce still gets a jelly-like consistency because when the cranberries pop open during cooking, they release pectin, which is a natural way to make jelly or jams. Once you try this recipe, you'll never go back.

2 oranges, zested and juiced
½ cup honey, or more to taste
2 pieces of crystallized ginger, chopped - or more to taste
1 cinnamon stick
¼ teaspoon salt
1 (12 ounce) package fresh cranberries

Steps:

  • Stir orange zest and juice, honey, crystallized ginger, cinnamon stick, and salt in a saucepan over medium heat; bring to a simmer. Stir cranberries into orange juice mixture, cover, and bring to a boil; let boil for 1 minute. Reduce heat to low. Simmer cranberry sauce until cranberries have popped, about 15 minutes. Remove from heat and discard cinnamon stick. If a sweeter sauce is desired, stir in more honey. Serve warm or chilled.

1 (12 ounce) bag fresh cranberries
1 3/4 cups sugar
1 granny smith apple, peeled, cored and chopped
1 orange, juice and zest of, grated
1 lemon, juice and zest of, grated
3/4 cup raisins
3/4 cup walnuts or 3/4 cup pecans, chopped

Steps:

  • Cook the cranberries, sugar and 1 cup of water in a saucepan over low heat for about 5 minutes, or until the skins pop open.
  • Add the apple, zests and juices and let cook for 15 more minutes.
  • Remove from heat and add the raisins and nuts.
  • Let cool, and serve chilled.

2 cups fresh cranberries
1 ½ cups all-purpose flour
2 teaspoons baking soda
½ cup hot water
½ cup light molasses
½ cup white sugar
½ cup unsalted butter
½ cup light cream
2 teaspoons good vanilla extract

Steps:

  • Grease a 2-quart metal pudding mold well or a clean 1-pound coffee can. Pick over whole cranberries; wash and drain.
  • Sift flour into a bowl and dredge cranberries in flour mixture.
  • Dissolve baking soda in hot water; stir in molasses and allow to foam up. Add to the flour and cranberry mixture and stir until well blended. Spoon into the prepared mold; cover with a double layer of aluminum foil and fasten with heavy elastic band or string.
  • Place into a deep saucepan and fill with water up to about the halfway mark on the mold. Cover the saucepan and place over high heat; bring water to a boil. Reduce heat and simmer until pudding is firm and a toothpick inserted into the pudding comes out clean, 1 to 1 1/2 hours. Remove from the water and allow to cool.
  • Invert pudding onto a pie plate and carefully remove from the mold before it cools.
  • While the pudding is cooling, combine sugar, butter, cream, and vanilla in a saucepan; bring to a boil. Reduce heat and simmer until sauce has thickened, making sure it doesn't boil over, about 5 minutes. Serve warm sauce over the pudding.

2 cups water
3/4 cup sugar (or to taste)
2 oranges (juiced and zested)
1 lemon (juiced and zested)
2 tablespoons gelatin

Steps:

  • Put washed cranberries into pan with water.
  • Add orange and lemon zest.
  • Simmer 10 minutes until berries soften.
  • Sweeten to taste with sugar.
  • Add gelatin to the orange and lemon juice. Mix together and add to the cranberries.

1 cup apple juice or 1 cup any combination juice
1 cup pure maple syrup
3 tablespoons lemon juice (or use orange zest, lemon zest, lemon juice, anything citrusy) or 3 tablespoons orange juice (or use orange zest, lemon zest, lemon juice, anything citrusy)

Steps:

  • Wash bag of cranberries under cool water, then dump into a medium saucepan.
  • Pour in a cup of cranberry juice or whatever juice you choose.
  • Pour in a couple of maple syrup.
  • Add orange juice or use lemon zest, orange zest, lemon juice.
  • Stir together and turn heat on high heat until it reaches a boil.
  • Once it comes to a rolling boil, turn the heat down to medium low and continue cooking over lower heat for about 10 minutes, or until the juice is thick. Turn off the heat.

3/4-1 cup sugar
1 lemon, juice of
1/4 cup orange juice
water, to cover
1 -2 tablespoon cornstarch

Steps:

  • Place cranberries, sugar, lemon juice, and orange juice in a small sauce pan.
  • Add enough water to cover cranberries.
  • Bring to boil, then simmer for about 30 minutes or until cranberries have split open.
  • Dissolve 1 to 2 tablespoons of cornstarch (depending on desired consistency of cranberry sauce) in an equal amount of cold water.
  • Stir cornstarch paste into cranberries to thicken, then remove from heat and allow to cool about 20-30 minutes.
