1/2 cup baking cocoa
1/4 cup cornstarch
1/2 teaspoon salt
4 cups whole milk
2 tablespoons butter
2 teaspoons vanilla extract

Steps:

  • In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. Gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. If desired, garnish with whipped cream and M&M's.

1 cup milk
1/3 cup semisweet chocolate chips

Steps:

  • In a small saucepan, combine sugar and cornstarch. Add milk; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, 1-2 minutes longer. , Stir in chocolate chips; cook and stir until melted. Remove from the heat. Stir in vanilla. Spoon into dessert dishes. Serve warm or chilled.

4 cups whole milk
4 (1 ounce) squares bittersweet chocolate
1 ½ cups white sugar
6 tablespoons all-purpose flour
¼ teaspoon salt
4 large egg yolks, beaten
2 tablespoons unsalted butter
2 teaspoons vanilla extract
1 (11 ounce) box vanilla wafer cookies
3 medium bananas, sliced, or to taste

Steps:

  • Combine milk and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted and mixture is hot, about 5 minutes.
  • Mix sugar, flour, and salt together in a bowl. Add some of the hot liquid to the dry ingredients; mix well. Pour dry ingredients into the double boiler and stir well. Cover and cook over a rolling boil, stirring often, until thickened, about 15 minutes.
  • Pour some of the hot mixture into the beaten egg yolks, whisking quickly to avoid scrambling the eggs. Pour the mixture back into the double boiler and whisk to combine. Whisk in butter and vanilla.
  • Line the bottom of a serving bowl with wafer cookies. Pour in some of the pudding to cover and top with sliced bananas. Repeat layers until all of the pudding is gone, ending with bananas on top.

As proof of my lifelong love of chocolate, I give you the recipe that is listed in my baby book as my favorite food. I still request it every year for my birthday, and I make it for St. Patrick's Day, but it's rich and creamy any day. I used to make it for an after-school "snack" when I was in junior high. Pour milk over your serving or slather whipped cream. Sprinkle toasted slivered almonds for added yumminess. I suggest small portions, especially for children. My kids love to lick the pan when I'm done. I've also had great success with this recipe in making a chocolate pie with a vanilla wafer crust (sprinkle vanilla wafer crumbs on top)

3/4 cup semisweet chocolate, chopped finely (you can use anything from generic chocolate chips to a high quality chocolate, you get what you pay )
2 eggs
1/3 cup sugar
2 tablespoons cornstarch

chocolate shavings, to garnish

Steps:

  • Scald milk in a saucepan over medium low heat (bring it almost to a boil in a thick bottomed saucepan, stirring constantly). Remove from heat, immediately add chocolate and stir until it has melted.
  • Whisk together eggs, sugar, cornstarch, and salt in a large bowl. I would get these ready in the bowl before I prepare the milk.

  • 4. Remove the pot from the heat.Add your chocolate chips, butter and vanilla into the pot. Stir until the chocolate is melted and everything else is incorporated
  • 5. Pour the pudding into four small individual containers Chill for at least 2 hours
  • 6. *Note* whether your using a mixer or a hand held one; put the bowl that you will be using in the fridge or freezer for a few minutes before making this recipe. It will help the cream whip faster and a lot more fluffier (is that even a word?!?! LOL)
  • 7. Take your bowl out of the fridge or the freezer Add your heavy cream and powder sugar and vanilla Mix on high until you get stiff peaks Top your pudding with the whipped cream and enjoy!
