Old Fashioned Chocolate Covered Cherries are a favorite of ours around Christmas. They make the sweetest gift for friends and family.

36 Maraschino cherries (with stems)
3 tablespoons butter (softened)
3 tablespoons corn syrup
2 cups powdered sugar (sifted)
1 1/2 bags chocolate chips (semi-sweet or milk chocolate)
2 teaspoons oil

Steps:

  • Drain cherries and set on paper towel to dry
  • In a medium bowl, combine butter and corn syrup until smooth. Stir in powdered sugar and knead to form a dough. Chill to stiffen if necessary.
  • Wrap each cherry in about 1 tsp of dough. Chill until firm.
  • In a microwave-safe bowl melt chocolate chips with oil for about 20 seconds at a time (stirring each time) until chocolate is just melted and completely smooth.
  • Dip each cherry in by its stem and place on wax paper-lined sheets. Place in an air-tight container (like a large tupperware) and store in a cool place for TWO WEEKS (yes, it is a long time-- but patience... I promise they taste best if you wait until the fondant softens)!

1 pound chocolate confectioners' coating

Steps:

  • Drain cherries and set on paper towels to dry.
  • In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.

2 cups sifted confectioners' sugar
3 tablespoons butter, softened
3 tablespoons light corn syrup
¼ teaspoon salt

Steps:

  • Sift confectioners' sugar several times into a bowl to eliminate all lumps.
  • Beat butter, corn syrup, and salt with an electric mixer on medium speed until light and fluffy, about 5 minutes. Beat in the sifted confectioners' sugar until thoroughly incorporated.
  • Turn fondant out onto a work surface generously dusted with confectioners' sugar. Knead until smooth and workable, 5 minutes; cut dough in half. Wrap each piece of dough in plastic wrap and chill for at least 30 minutes.

2-1/2 cups confectioners' sugar
1/4 cup butter, softened
1 tablespoon 2% milk
1/2 teaspoon almond extract
2 jars (8 ounces each) maraschino cherries with stems, well drained
2 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a small bowl, combine the sugar, butter, milk and extract. Knead until smooth and pliable. Shape into 1-in. balls and flatten each into a 2-in. circle. , Wrap one circle around each cherry and lightly roll in hands. Place with stems up on waxed paper-lined baking sheet. Cover loosely and refrigerate 4 hours or overnight. , In a microwave, melt chocolate and shortening; stir until smooth. Holding on to the stems, dip cherries into chocolate; allow excess to drip off. Place on waxed paper until set. Store in a covered container. Refrigerate 1-2 weeks before serving.

  • In a mixing bowl, combine sugar, butter, milk and extract; mix well.

  • Roll into 1-inch balls and flatten each into a 2-inch circle.

1 (10 ounce) jar maraschino cherries
½ cup rum (such as Bacardi 151®)
3 ¾ cups confectioners' sugar
½ cup butter, softened
¼ cup milk
1 teaspoon maple syrup
1 (6 ounce) bag chocolate chips
2 (1 ounce) squares semisweet chocolate
2 tablespoons butter, softened
2-inch square food-grade paraffin wax

Steps:

  • Pour cherries, with their juice, into a glass bowl. Cover cherries with rum. Cover with plastic wrap and store in the refrigerate for 1 week.
  • Drain and dry rum-infused cherries.
  • Line a baking sheet with waxed paper.
  • Mix confectioners' sugar, 1/2 cup butter, milk, and maple syrup together in a bowl until smooth and pliable. Wrap each cherry with sugar mixture. Arrange on baking sheet. Cover loosely with plastic wrap and chill until firm, about 30 minutes.
  • Combine chocolate chips, semisweet chocolate, 2 tablespoons butter, and paraffin wax in a saucepan. Heat over medium-low heat, stirring, until melted, about 5 minutes.
  • Dip each wrapped cherry into the melted chocolate mixture using a toothpick. Return to baking sheet. Repeat with remaining cherries. Cover loosely with plastic wrap and chill until set, about 1 hour.
