HOMEMADE APPLE CIDER BEEF STEW

Homemade Apple Cider Beef Stew image

It's especially nice to use this recipe in fall, when the weather gets crisp and Nebraska's apple orchards start selling fresh apple cider. This entree's subtle sweetness is a welcome change from other savory stews. We enjoy it with biscuits and slices of apple and cheddar cheese. -Joyce Glaesemann, Lincoln, Nebraska

HOMEMADE HOT APPLE CIDER

Homemade Hot Apple Cider image

I had a bunch of apples and decided I wanted apple cider. So I started to play around with apples and spices. I made sure to write down every step in case it came out ok. Well it came out great. It's a little on the strong side but my family LOVES it. We will be making this again. I used Honey Crisp Apples but I'm sure other types would be great also. You could also use 3 cinnamon sticks instead of ground cinnamon and 1/4 tsp ground cloves instead of whole cloves.

Time 1h20m

Yield 10 cups, 6-8 serving(s)

Number Of Ingredients 8

10 cups honey crisp apple juice
1 teaspoon allspice
1/2 teaspoon nutmeg
1/2 tablespoon cinnamon
1 tablespoon clove
1/2 cup sugar
1/2 cup dark brown sugar
1/2-1 cup water, to taste (you could also add more juice to make the flavor lighter)

Steps:

  • 1. Juice apples in juicer until you have liquid for 10 cups.
  • 2. Pour juice into large pot.
  • 3. Add allspice, nutmeg, cinnamon, cloves, sugar, brown sugar, & water to pot of juice.
  • 4. Put about 1 TBSP of cloves in a tea steeper and hang it on the side of the pot so the cloves are in the juice. (You could also use a cheese cloth bag or just throw them in, they come out when you strain the juice). You could also use ground cloves but only use about 1/4 teaspoon.
  • 5. Cook on med heat just until boil then reduce heat to simmer.
  • 6. Cook on simmer for about an hour or as long as you want.
  • 7. Strain cider through small mesh strainer or through cheese cloth. (I used an extremely thin dish towel) Make sure to squeeze any extra juice that might be left in the cheese cloth.
  • 8. Your cider is ready to serve.
  • This cider is also really good cold.

HOMEMADE APPLE CIDER VINEGAR

Homemade Apple Cider Vinegar image

Apple cider vinegar has so many uses, including salad dressing and turning milk into buttermilk. Some people swear by cider vinegar as a digestive aid, a skin care product, and a hair conditioner. It costs next to nothing to make, and it doesn't require any work. If you can make a spot for the jar on your counter, you can make this vinegar. This does need to sit for 6-7 weeks. From Real Food, Real Deals.

Time 10m

Yield 1 batch

Number Of Ingredients 4

6 -8 apples, cores and peels from (ideally organic)
2 tablespoons honey (raw or processed)
water, to cover
1 tablespoon apple cider vinegar (optional)

Steps:

  • You can use the apples for something and save the peels and cores. Place the cores and peels in a large, wide-mouthed jar. I used a 4-cup jar, but you can adjust the size of the jar to the amount of apple scraps you're using.
  • Cover the scraps with water and stir in the honey. Add the apple cider vinegar is using(this may help to jump start the process of fermenting). If possible, use an unfiltered vinegar, like Bragg's or Heinz. This wasn't in the original recipe, but recommended by another blogger.
  • Place a paper towel on top of the jar, and secure it with a band.
  • Let the mixture soak for 2 weeks in a dark place, and then strain out the liquid.
  • Return the liquid to the jar and cover it again with a paper towel and band. Leave it for 4 more weeks, stirring daily.
  • Taste it and see if it has the acidity you would like. If it does, transfer it to a covered bottle for storage. If not, leave it in the wide-mouthed jar for a little while longer, checking every few days.
