- In a large saucepan, heat butter over medium heat. Add shallots; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add cream; cook and stir until heated through. Stir in Asiago, 1/2 cup Parmesan, Romano cheese, salt and pepper; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 10 minutes, whisking occasionally., Meanwhile, cook pasta according to package directions. Drain, reserving 1 cup pasta water; place pasta in a large bowl. Add sauce; toss to coat. Thin as desired with reserved pasta water. Serve with the remaining 1/2 cup Parmesan cheese.

- In a medium sauce pan, add butter, heavy whipping cream, and cream cheese.
- Cook over medium heat and whisk until melted.
- Add the minced garlic, garlic powder, Italian seasoning, salt, and pepper.
- Continue to whisk until smooth.
- Add the grated Parmesan cheese.
- Bring to a simmer and continue to cook for 3 to 5 minutes or until it starts to thicken.

- In a medium sauce pan, melt butter.
- Add in cream cheese.
- Pour in about 8oz (half the jug) of half and half, whisking as you do until mixture combines smoothly.

- 1. Bring cream cheese and butter to room temp.
- 2. Measure a cup of milk. Measure 3/4 cup of grated Parmesan. Make sure you use just the jarred kind because if you use the more fancy one it comes out more lumpy.
- 3. Cube or cut cream cheese and butter into bits.
- 4. Place cream cheese and butter in a saucepan on low heat.
- 5. Add the milk when the cream cheese and butter starts to melt. Keep stirring for 5 mins.
- 6. Then add the Parmesan cheese in. Stir until smooth.
- 7. Don't overcook, it will be a little lumpy and thick. If you want a thinner sauce just keep adding a 1/2 c of milk at a time until you get your desired consistency).

- In a medium bowl, whisk together the flour and salt.
- Combine the aquafaba and olive oil in a small bowl.
- Make a well in the center of the flour, then pour in the aquafaba and oil. Use a fork to slowly incorporate the flour into the wet ingredients. Once it comes together as a shaggy dough, turn out onto a clean surface and knead for 5 minutes, discarding any unincorporated floury bits, until the dough is smooth and springs back when pressed with a finger.
- Wrap the dough in plastic and let rest at room temperature for 30-60 minutes.
- Cut the dough in half. Wrap one half in plastic, then shape the other half into a rectangle. Roll out the dough into a larger rectangle. Fold the top and bottom third over the center of the dough and roll out again to a thinner rectangle. You should be able to see your hand through the dough.
- Fold the top and bottom third of the rectangle to meet in the center of the dough, then fold in the top and bottom third again. Cut the dough into thin strips. Unroll the dough strips and transfer to a floured baking sheet, tossing to coat the strips in flour so they don't stick together. Repeat with the remaining dough.
- Bring a large pot of salted water to a boil.
- Meanwhile, make the lemon alfredo sauce: Melt the butter in a deep skillet over medium heat. Add the garlic and cook for 1 minute, until fragrant. Add the flour and whisk to combine. Cook for 3-5 minutes until the flour is golden brown and the mixture is bubbling.
- Gradually whisk in the warmed milk. Bring the mixture to low simmer and cook, whisking frequently, until thickened, 5-7 minutes.
- Remove the pan from the heat and stir in the Parmesan, salt, and pepper until the Parmesan melts.
- Whisk in the lemon zest, then gradually whisk in the lemon juice, a little at a time, to prevent the sauce from curdling.
- Add the pasta and frozen peas to the boiling water and cook for 1-2 minutes, or until al dente. Reserve a bit of the pasta cooking water, then drain the pasta.
- Add some of the reserved pasta cooking water to the sauce and whisk to incorporate, loosening the sauce a bit. Add the pasta and peas to the sauce and gently toss until well coated.
- Divide the pasta between 2 plates and top with a bit of freshly ground pepper. Serve immediately.

This alfredo sauce has great taste, minus the calories of other alfredo sauces. We added to pasta and grilled chicken as Chandra suggests, and it went really fast in the Test Kitchen. Don't have cassava flour on hand? You can substitute with cornstarch and it'll turn out just as good.

- 1. Sprinkle the cassava flour into the bottom of a small saucepan. Add canned milk slowly and whisk cassava flour while adding the milk. When it's mixed well, add the regular milk.
- 2. Place the saucepan over medium heat and add the garlic. (I prefer to buy a large bottle of minced garlic and keep it in the refrigerator for freshness. It's inexpensive and tastes as good as fresh garlic.)
- 3. Continue to whisk the mixture often (to prevent scorching) until mixture begins to thicken. Add Parmesan cheese and continue to whisk until mixture is fully thickened (usually at almost a slow boil).
- 4. Add a pinch of salt and pepper, to taste. Serve over prepared pasta.
- 5. I pan-fry a chicken breast, without seasoning, and slice thin to add on top.

- In a medium sauce pan, melt the butter over medium low heat. Once melted, add the garlic and cook about 1 minute. Then add the flour and whisk constantly and cook about 1 more minute.
- Slowly pour in the milk, whisking constantly. Once all the liquid is added, increase heat just a touch and whisk occaiosnally while allowing to cook until gently simmering and bubbling around the edges of the pan.
- Once bubbling and thickened, turn off the heat, add the herbs, salt, pepper and both cheese. Whisk to combine.
