SUNNY'S EASY HOLIDAY SPIRAL HAM

Number Of Ingredients 8

1/2 cup dark brown sugar
1/4 cup honey
Zest and juice of 1 orange
2 teaspoons pumpkin pie spice
6 to 8 scrapes of fresh nutmeg, using a rasp
One 6- to 7-pound bone-in half spiral ham
10 to 12 sprigs fresh thyme
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oven to 325 degrees F.
  • In a bowl, mix together the brown sugar, honey, orange zest, 1/4 cup orange juice, pumpkin pie spice, and nutmeg. Season with salt.
  • Roll out enough aluminum foil to surround the ham and place the ham in the center of the foil. Peel back the layers of the ham and place a sprig of thyme between every other layer of the spirals. Pour half of the glaze over the ham allowing it to sink into the slices. Tightly wrap the ham in the foil and place on a rack in a roasting pan. Fill the pan with an inch of water and roast in the oven until the internal temperature reaches 140 degrees F, about 20 minutes per pound.
  • Pour the remaining half of the glaze in a small saucepot on medium heat and bring to a simmer. Whisk until small bubbles appear all over, then turn off the heat. The glaze will thicken as it rests.
  • Raise the oven temperature to 400 degrees F.
  • Remove the ham from the oven. Using caution and tongs to help, peel back the aluminum foil from the top, leaving the aluminum foil on the sides and underneath the ham to catch the glaze and juices. Slather the remaining glaze all over the top of the ham and place back in the oven uncovered for 15 more minutes. Remove and let rest before slicing.

1 (16 ounce) package dried lima beans
2 quarts water
1 ham bone with meat
1 large onion, sliced
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon hot pepper sauce
1 teaspoon dry mustard
½ teaspoon salt

Steps:

  • Place lima beans in a large bowl and cover with several inches of water; soak 8 hours to overnight.
  • Bring water, ham bone, and onion to a boil in a pot. Reduce heat, cover, and simmer until onion is tender, about 1 hour.
  • Drain and rinse lima beans and add to the pot with the ham bone. Add brown sugar, Worcestershire sauce, hot sauce, dry mustard, and salt. Simmer, covered, about 2 hours. Uncover and continue simmering soup until beans are tender, about 30 minutes more.
  • Remove ham bone from soup; cut the meat into bite-sized pieces. Discard bone and return meat to the soup.

1 bone-in fully cooked spiral-sliced ham (8 pounds)
1 fresh pineapple, peeled, cored and cut into four wedges
1 package (12 ounces) fresh or frozen cranberries
3 medium apples, peeled and cubed
1-1/4 cups sugar
1 medium navel orange, peeled and cut into chunks
3 tablespoons lemon juice

Steps:

  • Place ham on a rack in a shallow roasting pan. Arrange pineapple wedges around ham. Cover and bake at 325° for 1 to 1-1/2 hours. , Meanwhile, in a large saucepan, combine cranberries and apples. Cook over medium heat until the berries pop, about 15 minutes. Add the sugar, orange chunks and lemon juice. Cook and stir until sugar is dissolved. 2 teaspoons pumpkin pie spice
6 to 8 scrapes of fresh nutmeg, using a rasp
10 lb Smithfield spiral ham

Steps:

  • Place all ingredients except the ham in a small saucepan and heat. Pour half of the sauce over the ham. Reserve the rest for basting. Place ham in a shallow pan with a small amount (1/4-1/2 inch) of water or fruit juice, cover pan tightly with aluminum foil or lid, and heat at 325 degrees F for 8-10 minutes per pound. Baste halfway thru with the rest of the sauce. Overheating and overcooking will make the ham dry and the spiral slices will start to curl and separate.. Ham was heated in about an hour and a half.
