I usually don't like brussels sprouts, but my aunt made these and I fell in love. Great for the holidays. Try them, you just might like them too:-)

1 lb brussels sprouts, halved
1 c chopped walnuts
2 tsp olive oil, extra virgin
salt and pepper to taste
1 c dried cranberries

Steps:

  • 1. Heat oven to 425. In lg bowl, toss sprouts, walnuts, oil, salt and pepper.
  • 2. Place all ingredients, except cranberries, in roasting pan. Roast 25 mins. Stir everything together.
  • 3. Roast 20 more mins. Remove from oven and toss in cranberries.

1 package (16 ounces) frozen Brussels sprouts
1 package (10 ounces) frozen peas
2 tablespoons butter
2 celery ribs, chopped
2 bacon strips, cooked and crumbled
2 tablespoons minced fresh chives

Steps:

  • Cook Brussels sprouts and peas according to package directions; drain., In a large skillet, heat butter over medium-high heat. Add celery; cook and stir until crisp-tender. Add Brussels sprouts, peas, bacon and chives; toss to combine.

This recipe is from my mother. It may sound strange, but these are really good and very easy to make. The Brussels sprouts should be brown with a bit of black on the outside when done. Any leftovers can be reheated or even just eaten cold from the fridge. I don't know how, but they taste sweet and salty at the same time!

1 ½ pounds Brussels sprouts, ends trimmed and yellow leaves removed
3 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Place trimmed Brussels sprouts, olive oil, kosher salt, and pepper in a large resealable plastic bag. Seal tightly, and shake to coat. Pour onto a baking sheet, and place on center oven rack.
  • Roast in the preheated oven for 30 to 45 minutes, shaking pan every 5 to 7 minutes for even browning. Reduce heat when necessary to prevent burning. Brussels sprouts should be darkest brown, almost black, when done. Adjust seasoning with kosher salt, if necessary. Serve immediately.
