1 pound sweet potatoes, peeled and cut into 1/2-inch cubes
3 tablespoons extra-virgin olive oil, divided
2 teaspoons kosher salt, divided
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper, divided
½ cup diced onion
½ cup diced red bell pepper
4 cloves garlic, minced
1 pound bulk regular pork sausage (such as Jimmy Dean®)
1 cup baby spinach leaves
½ cup shredded mozzarella cheese
1 tablespoon minced fresh rosemary
10 large eggs
2 tablespoons milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
  • Combine sweet potatoes with 2 tablespoons olive oil, 1 teaspoon kosher salt, garlic powder, and 1/2 teaspoon black pepper on a large baking sheet in a single, even layer; toss to coat well.
  • Bake in the preheated oven until slightly browned, about 30 minutes.
  • Meanwhile, heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add onion and red pepper; cook and stir until translucent, 2 to 3 minutes. Add garlic and stir for 1 more minute. Transfer mixture to a medium mixing bowl.
  • Heat the same skillet over medium-high heat. Add sausage; cook and break apart with a spatula until cooked through, 5 to 7 minutes. Drain sausage and add to the bowl with the veggie mixture. Add spinach, mozzarella cheese, and rosemary to the mixture.
  • Gently whisk eggs, milk, and remaining kosher salt and black pepper together in a bowl until well combined. Pour over the sausage and veggie mixture and gently toss to combine.
  • Place roasted potatoes in the bottom of the prepared baking dish. Pour the veggie and sausage mixture evenly over top.
  • Bake, uncovered, in the preheated oven until eggs are set in the center, about 50 minutes. If the egg mixture starts to brown, put a loose sheet of aluminum foil over the baking dish to cover it.

2 pounds parsnips and/or carrots, peeled and cut into 1/2-inch pieces
2 pounds sweet potatoes, peeled and cut into 1-inch pieces
½ cup reduced-sodium chicken broth
¼ cup whipping cream
5 tablespoons butter, chopped and divided
¾ teaspoon salt, divided
½ cup packed brown sugar
¼ cup all-purpose flour
1 teaspoon dried rosemary, crushed
½ cup pecans, chopped
2 tablespoons maple syrup

Steps:

  • Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
  • Add parsnips and/or carrots to a large microwave-safe bowl. Add 1/4 cup water and cover with wax paper. Microwave on high for 5 minutes. Uncover and add sweet potatoes. Cover and microwave 15 minutes more or until tender, stirring once. Drain and return vegetables to bowl.
  • Pour broth and cream into the bowl with vegetables. Use a potato masher to mash to desired consistency. Stir in 3 tablespoons butter and 1/2 teaspoon salt. Transfer to prepared baking dish.
  • Combine brown sugar, flour, rosemary, and 1/4 teaspoon salt in a medium bowl. Using a pastry blender, two forks, or your fingers, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in pecans and maple syrup and sprinkle over sweet potato-mixture.
  • Bake 20 to 25 minutes or until pecan mixture is just starting to brown.

A favorite at our Thanksgiving table every year. Add marshmallows if you like. Versatile recipe- - you can vary the spices and type of nut used. One of my family's favorite variations is cinnamon or allspice in place of the ginger, with a splash of brandy, finely minced orange zest, a few tablespoons peach preserves, and a sprinkling of Sweet & Spicy Pecans, recipe #117774. 1/2 cup packed brown sugar
1/3 cup broken cashews
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 lbs sweet potatoes, cooked, peeled, and cut crosswise into thick pieces (5 or 6 medium)
1 (8 ounce) can peach slices, well drained
3 tablespoons butter (or margarine)
ground cinnamon (optional)
allspice (optional)
1 dash brandy (optional)
minced orange peel (optional)
peach preserves (optional)
sweet and spicy pecans, Sweet and Spicy Candied Pecans - With a Kick in place of the cashews (optional)

Steps:

  • Combine brown sugar, cashews, salt, and ginger.
  • In 10x6x2-inch baking dish layer half the sweet potatoes, half the peach slices, and half the brown sugar mixture. Repeat layers.
  • Dot with butter or margarine.
  • Bake, covered, at 350 degrees for 30 minutes.
  • Uncover and bake mixture about 10 minutes longer. Spoon brown sugar syrup over before serving.

3 lbs sweet potatoes, baked
3 granny smith apples, peeled (or other firm apple)
1/4 cup fresh lemon juice
1/4 cup butter
1/2 cup light brown sugar
1/2 cup honey
2 tablespoons Bourbon or 2 tablespoons dark rum
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg or 1/4 teaspoon mace
1 cup pecan halves (optional)
1 cup miniature marshmallow (optional)

Steps:

  • Combine all sauce ingredients and cook on medium heat until sugar is dissolved, stirring frequently.
  • Set aside.
  • Slice apples lengthwise and toss with lemon juice.
  • Slice baked sweet potatoes.
  • Spray 9x13x2-inch casserole with non-stick cooking spray.
  • Arrange apples and sweet potatoes in layers in casserole.
  • If using pecans, sprinkle them on top.
  • Pour sauce over casserole.
  • ***If making ahead, refrigerate at this point.
  • Add 10 minutes to cooking time below.
  • Bake at 350 degrees, uncovered, in middle of oven, basting occasionally, for about 30-45 minutes or until apples are tender and sweet potatoes are hot.
  • VARIATION: If using marshmallows, add them on top of casserole during last 15 minutes of baking.

3 lbs potatoes, peeled &,quartered
1 cup butter
2 (3 ounce) packages cream cheese, softened
1 cup cheddar cheese, shredded
1 (2 ounce) jar pimiento, drained
1 small green pepper, finely chopped
1 bunch green onion, finely chopped
1/2 cup parmesan cheese
1/4 cup milk
1 teaspoon salt

Steps:

  • Cook potatoes in boiling water to cover 15 minutes or until tender; drain and mash.
  • Add butter and cream cheese; beat at medium speed with and electric mixer until smooth.
  • Stir in 1/2 cup Cheddar cheese and next 6 ingredients; spoon into lightly buttered 11x7x1 1/2 inch baking dish.
  • Bake at 350F for 30 to 40 minutes, or until thoughly heated.
  • Sprinkle with remaining cheese; bake 5 minutes or until cheese melts.

  • Boil peeled potatoes until consistently is right for mashing.

Not neccessarily for holidays, but for anytime you want a nice comfort dish. As usual, I do not peel my potatoes. Also, to prevent lumps, I add the flour to about 2 tablespoons of chicken broth in a jar, shake it hard, then add to the butter. Cooks Illustrated suggests using the large, coarse grains of kosher salt which makes sprinkling easy. They also suggest if you can find it, try substituting rich, creamy Italian (not Danish) fontina cheese for the Gouda. Adapted from Cooks Illustrated, Nov. 1999 issue. Hope you enjoy!

8 ounces gouda cheese, shredded (about 2 cups)
4 medium garlic cloves, minced (about 1 1/2 tablespoons)

3 1/2 cups chicken stock or 3 1/2 cups canned low sodium chicken broth
1 bay leaf
2 lbs yukon gold potatoes, peeled and sliced 1/8 inch thick
2 lbs russet potatoes, peeled and sliced 1/8 inch thick
3/4 teaspoon kosher salt
3/4 teaspoon ground black pepper

Steps:

  • Adjust one oven rack to lower-middle position and second oven rack to highest position; heat oven to 400 degrees.
  • Toss together cheese, garlic, and thyme in small bowl; set aside.
  • Heat butter in medium saucepan over medium heat until foaming; whisk in flour and cook until golden and bubbly, about 30 seconds.
  • Whisking constantly, gradually add chicken stock. Increase heat to high, add bay leaf, and bring to boil.
  • Reduce heat to medium and simmer, stirring occasionally, until mixture thickens, about 2 minutes. Off heat, remove and discard bay leaf; cover to keep sauce warm.
  • Alternating Yukon Gold and russet slices, arrange a third of potatoes in snug overlapping rows in 9x13 baking dish, Sprinkle potato layer evenly with 1/4 teaspoon salt, 1/4 teaspoon pepper, and a third of cheese mixture. Make a second layer with same amount of potatoes, salt, pepper, and cheese. Make a third layer with same amount of potatoes, salt, and pepper, but reserve remaining cheese. Pour warm sauce over potatoes, tilting pan side to side to distribute evenly.
  • Cover with foil and bake on lower-middle rack 45 minutes.
  • Remove foil and continue to bake until potatoes are tender, about 45 minutes longer.
  • Remove potatoes from oven and sprinkle with remaining cheese; bake on highest rack until cheese is golden brown, about 5 minutes.
  • Cool 10 minutes and serve.

I have several versions of this recipe already posted, but this one is a wee bit different. At any rate it is very cheesy, tasty, delicious, quick & easy to make. I am sure you...

1 bag(s) frozen shredded potatoes-10 cups- (1 lb14 oz) thawed
1 bunch green onions, chopped
1 jar(s) diced roasted red peppers,8 oz. drained
3/4 c cottage cheese, (small curd)
8 oz cream cheese, softened & cubed
1/2 c evaporated milk
1 can(s) cream of chicken soup, undiluted
1 stick butter- melted, (6 tbs+ 2 tbs) divided
1 tsp each granulated garlic & coarse black pepper
1/2 tsp kosher salt
8 oz shredded sharp cheddar cheese,(2 cups)
CRUNCHY TOPPING
1 1/2 c corn flakes, crushed
2 Tbsp melted butter

Steps:

  • 1. PREHEAT THE OVEN TO 350 DEGREES F. Spray a 9 X 12 size casserole dish with non stick cooking spray and set aside till needed. These are most of the main ingredients.
  • 2. Add half of the shredded potatoes to the casserole dish and set aside while you prepare the soup and cream cheese mixture.
  • 3. Using a medium size bowl, add in the soup, cottage cheese, milk, spices, diced cubes of cream cheese, chopped green onions, & diced roasted red peppers.
  • 4. Stir until mixture is combined together, then pour half of the soup mixture over the thawed potatoes in casserole dish.
  • 5. Now add half of the shredded cheddar cheese. I used sharp cheddar shreds for added burst of flavor. Now repeat with remaining potatoes, soup mixture & cheese.
  • 6. Now add the remaining 2 tablespoons of melted butter to the crushed corn flakes, and sprinkle over the top of the casserole.
  • 7. Place casserole in preheated 350 degree F. oven and bake for 55 -60 minutes or until casserole is hot and bubbly along edges, or internal temperature reaches 180 degrees F. Allow to rest at least 10 to 15 minutes before serving. Serve and enjoy.

1 cup pecans, chopped
1/2 cup self-rising flour
1/2 cup butter, melted (1 stick)
3 cups cooked sweet potatoes, mashed

1/2 cup raisins
2 large eggs, lightly beaten
1 teaspoon vanilla extract
