Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

This is a variation on the traditional cranberry/pineapple salad; red and green layers with a cream cheese layer in between. My mom makes this at Christmas and/or Thanksgiving and I can't stop eating it. Would be good for potlucks, too. Yum!

1 (6 ounce) package cranberry Jell-O gelatin or 1 (6 ounce) package cherry gelatin
1 (16 ounce) can whole berry cranberry sauce
1 (6 ounce) package lime Jell-O gelatin
1 (20 ounce) can crushed pineapple, undrained, divided
1 cup sour cream (8oz container)
1 (8 ounce) package cream cheese
2 cups boiling water, divided

Steps:

  • Dissolve red jello in 1 cup boiling water and stir in half the can of pineapple and all of the can of whole berry cranberry sauce.
  • Spread in bottom of 9x13 glass dish and chill until partially set.
  • Combine sour cream and cream cheese and spread over red jello layer.
  • In a separate bowl, dissolve green jello in 1 cup boiling water and stir in the remaining half can of pineapple; chill until partially set.
  • Spread over the top of the cream cheese layer.
  • Cover with plastic wrap and refrigerate overnight or several hours until completely set.

I gave a classic salad a holiday twist by making green, white and red layers. The combination of salty, sweet, creamy in this strawberry-lime pretzel dessert and fruity is always a hit! -Renee Conneally, Northville, Michigan

3/4 cup butter, melted
3 tablespoons sugar
2 cups crushed pretzels
1 cup boiling water
1 package (3 ounces) lime gelatin
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
3 to 5 drops green food coloring, optional
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 cups boiling water
2 packages (3 ounces each) strawberry gelatin
4 cups sliced fresh strawberries
Optional: Additional whipped topping and miniature pretzels

Steps:

  • Preheat oven to 350°. Mix melted butter and sugar; stir in pretzels. Press onto bottom of an ungreased 13x9-in. baking dish. Bake 10 minutes. Cool completely on a wire rack. , Meanwhile, for lime layer, in a large bowl, add boiling water to lime gelatin; stir 2 minutes to completely dissolve. Refrigerate until partially set, about 1 hour. In a bowl, beat cream cheese until smooth. Add cooled lime gelatin mixture; beat until smooth. Fold in whipped topping; if desired, add green food coloring. Spread over crust. Refrigerate until set but not firm, 25-30 minutes. , For cream cheese layer, in a bowl, beat cream cheese and sugar until smooth. Fold in whipped topping. Spread over lime layer. Refrigerate until set., For strawberry layer, in a large bowl, add boiling water to strawberry gelatin; stir 2 minutes to completely dissolve. Refrigerate until partially set, about 1 hour. Stir in strawberries. Gently spoon over cream cheese layer. Refrigerate, covered, until firm, 2-4 hours. To serve, cut into squares. If desired, top with additional whipped topping and miniature pretzels.

2 packages (3 ounces each) lime gelatin
5 cups boiling water, divided
4 cups cold water, divided
1 package (3 ounces) lemon gelatin
1/2 cup miniature marshmallows
1 package (8 ounces) cream cheese, softened
1 cup mayonnaise
1 can (8 ounces) crushed pineapple, undrained
2 packages (3 ounces each) cherry gelatin

Steps:

  • In a large bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish; refrigerate until firm but not set, about 1 hour., In a large bowl, dissolve lemon gelatin in 1 cup boiling water. Stir in marshmallows until melted. Cool for 20 minutes. In a small bowl, beat cream cheese and mayonnaise until smooth. Gradually beat in lemon gelatin. Stir in pineapple. Carefully spoon over the lime layer. Chill until firm but not set. , Dissolve cherry gelatin in 2 cups boiling water. Add remaining cold water; stir. Spoon over the lemon layer. Refrigerate entire gelatin salad overnight. Cut into squares to serve.
