quick weeknight dinners work for me! 3/25/08- this was made for freezer tag in the OAMC forum and they asked me to post the following, "To freeze: Prepare recipe as directed through step 3. Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."

1/4 cup hoisin sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 teaspoons cornstarch
2 teaspoons water
1 pinch salt
1 pinch garlic powder
1 pinch ground ginger
1 pinch five-spice powder
1 pinch black pepper
4 boneless skinless chicken breasts
cooking spray

Steps:

  • Preheat broiler. combine hoisin, honey, vinegar, sesame oil, in a saucepan, bring to a boil.
  • Combine cornstarch and water and add to mixture, stirring.
  • Cook 1 minute, remove from heat and set aside. mix spices and rub evenly over both sides of chicken. Spray a broiler pan with non stick spray, add chicken, broil 5 minutes.
  • Brush with hoisin mixture and cook for 5 minutes more. turn over and brush with sauce, broil 5 minutes, basting often, until done.

4 boneless skinless chicken breasts
4 onion sandwich buns
1/4 cup honey
1/4 cup soy sauce
1/2 cup hoisin sauce
1 garlic clove
1/4 teaspoon ginger
1/4 teaspoon dry mustard
1/4 cup shredded cabbage (to taste)
2 tablespoons green onions, sliced (to taste)
1 tablespoon mayonnaise (to taste)
1 tablespoon hoisin sauce (to taste)

Steps:

  • Cut chicken breasts into strips and set aside.
  • Mix together all sauce ingredients thoroughly and marinate chicken for at least 2 hours.
  • Drain chicken, reserving marinade. Grill for 10 minutes, basting with marinade.
  • Grill buns at the same time chicken is grilling.
  • You can also choose to stir fry the chicken and cooking time will decrease significantly, and simply toast the buns under the broiler.
  • Put the chicken on the onion buns and add desired toppings. Good served with your favorite coleslaw.
  • I use my bread machine onion buns "Recipe #296559".

1 1/2 cups hoisin sauce
1/4 cup rice vinegar or white vinegar
1 1/2 pounds flank steak, sliced thin against the grain
2 cups mayonnaise
1/4 cup Sriracha sauce
2 carrots, julienned
1 small head cabbage, sliced in thin strips
1 medium red onion, sliced thin
Kosher salt and freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter
Four 6-inch French baguettes or long rolls, halved lengthwise

Steps:

  • For the steak: In a medium bowl, whisk together the hoisin sauce and vinegar. Add the flank steak and marinate for 30 minutes.
  • For the spicy slaw: Mix the mayonnaise and Sriracha together in a small bowl. Combine the carrots, cabbage and red onions in a large bowl. Add the spicy mayonnaise and combine thoroughly. Season with salt and pepper. Chill until using.
  • For the toasted baguettes: Heat a pan over medium-low heat. Butter the baguette halves, add them to the pan and toast until golden brown. Remove the bread from the pan, but leave the pan on the heat.
  • Add the flank steak to the pan and cook for 3 to 4 minutes, adding a splash of water to the pan if the sauce is too thick.
  • Divide the steak among the baguette bottoms, top with some spicy slaw and the baguette tops and cut in half. Enjoy!

My father would make this super spicy chicken dish ("Hacked Chicken") where the chicken was gently poached without seasonings and then topped with a super spicy sauce. I always loved that dish; the chicken was like a blank canvas and this jarringly spicy topping just woke it up. In college, I created this dorm room hybrid, bulking it up for my roommates with a pound of pasta, and I randomly added hoisin sauce (because I had a jar of it). The dish looks to recreate that contrast of something searching for flavor and a sauce that offers nothing but. The textures of the pasta only amplify the dish. These are really great eaten right out of the bowl or made and left to marinate for a few hours or overnight. To that end, they make great leftovers, if you have any. A note about the chicken stock: I love enriching stock with chicken, so make sure you reserve and use the poaching stock from this recipe for a soup, risotto or pan sauce.

2 tablespoons sesame seeds
2 cups chicken stock
4 small boneless, skinless chicken breasts
Kosher salt
12 ounces dried vermicelli (or angel hair) pasta
1/4 cup hoisin sauce
1/4 cup low-sodium soy sauce
3 tablespoons grated ginger
2 tablespoons sesame oil
1 tablespoon apple cider vinegar
1 teaspoon hot sauce (Tabasco recommended)
6 scallions, thinly sliced

Steps:

  • Place the sesame seeds in a dry skillet over medium heat and toast until lightly browned, 2 to 3 minutes. Remove from the heat and set aside.
  • Cook the chicken. In a medium skillet, bring the chicken stock to a simmer over medium-high heat. Submerge the chicken breasts in the stock, then reduce the heat to low and poach until the meat is completely cooked through and the internal temperature in the thickest part of the chicken breast registers 165 degrees F on a meat thermometer, 8 to 10 minutes. Transfer the chicken to a cutting board and let rest for 5 to 10 minutes. Use a sharp knife to cut the meat into 1/4-inch-thick slices. Set aside. Let the chicken stock cool and reserve for another use.
  • Make the pasta. In a medium pot, bring 4 quarts of water to a boil over medium-high heat. Line a sheet pan with a clean kitchen towel and set aside. Season the water with salt until it tastes like sea water. Plunge the pasta in the water and cook until cooked but still chewy ("al dente"), 4 to 6 minutes. Place a colander in the sink. Reserve a little pasta water, then drain the pasta thoroughly. Shake the colander a few times to remove excess water. Spread the pasta on the towel so it cools more quickly. Gently use a second towel to cover and pat the pasta dry. (Removing the excess moisture assures that the sauce will have a full flavor effect on the noodles.)
  • Make the sauce. In a large bowl, combine the hoisin sauce, soy sauce, ginger, sesame oil, vinegar and hot sauce. Adjust the seasonings. Stir in half of the scallions. Set aside.
  • Add the pasta to the sauce and toss to coat evenly. Add some of the reserved water if necessary. Transfer the pasta and sauce to a large serving bowl. Set aside.
  • Arrange the chicken on top of the pasta. Top the pasta with the reserved sesame seeds and remaining scallions.

6 flour tortillas (10 inches), room temperature
4 miniature cucumbers, cut into thin ribbons
Fresh mint or basil leaves

Steps:

  • In a small bowl or shallow dish, combine hoisin sauce, soy sauce, 2 tablespoons brown sugar, lime juice and garlic. Add chicken; turn to coat. Refrigerate 30 minutes. , Meanwhile, in a large bowl, whisk vinegar, 1/8 teaspoon Sriracha and remaining 1 tablespoon brown sugar. Add carrots and radishes; toss to coat. Set aside. , Preheat air fryer to 400°. Drain chicken, discarding marinade; pat dry with paper towels. 1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/3 cup plus 2 tablespoons hoisin sauce
3 tablespoons ketchup
2 tablespoons honey
1 tablespoon soy sauce
3 cloves garlic, finely chopped
1 tablespoon plus 1 teaspoon Sriracha sauce or chili garlic paste
1 tablespoon plus 1 teaspoon grated peeled fresh gingerroot
2 teaspoons toasted sesame oil
3 lb boneless skinless chicken thighs (about 12 thighs)
3 tablespoons rice vinegar
1 tablespoon plus 1 teaspoon sugar
2 teaspoons Sriracha sauce
1 teaspoon toasted sesame oil
4 cups coleslaw mix (from 14-oz bag)
8 burger buns

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, mix broth, 1/3 cup of the hoisin sauce, the ketchup, honey, soy sauce, garlic, 1 tablespoon plus 1 teaspoon Sriracha, the gingerroot and 2 teaspoons sesame oil with whisk. Add chicken; toss to coat. Cover; cook on High heat setting 3 to 4 hours.
  • During last 30 minutes of cook time, make coleslaw. In large bowl, beat rice vinegar, sugar, 2 teaspoons Sriracha and 1 teaspoon sesame oil with whisk. Add coleslaw mix; toss to coat. Cover and refrigerate 30 minutes, tossing occasionally.
  • Remove chicken from slow cooker using slotted spoon. Remove sauce to another bowl. Place chicken on cutting board. Shred chicken using 2 forks, removing any bits of fat.
  • Return chicken and 1 1/2 cups of the sauce to slow cooker. Stir in remaining 2 tablespoons hoisin; decrease to Low heat setting. Cook about 20 minutes or until thoroughly heated.
  • Serve on buns; top with coleslaw. Serve with remaining sauce, if desired.
