These hobo dinners are a delicious and easy dinner cooked up in foil. Great cooked over a campfire, or in your oven at home. Packed full of flavor and customizable so everyone will love them!

Number Of Ingredients 7

1 can cream of chicken soup
1 1/2 cups thinly sliced golden potatoes ((this was about 4 potatoes for me))
1 lb ground beef
1/2 cup fresh green beans
1/2 cup baby carrots
1/2 cup onion slices
salt and pepper to taste

Steps:

  • Spray for sheets of heavy duty foil with nonstick spray.
  • Spread a small amount of cream soup on the bottom of each piece of foil.
  • Divide the potatoes evenly between the foil pieces.
  • Create four patties (approx. 1/4 pound each) with the ground beef. Place on top of the potatoes.
  • Top with remaining veggies, divided evenly.
  • Sprinkle each with salt and pepper.
  • Spoon remaining soup evenly over the entire dish.
  • Foil foil over the food and seal edges well.
  • Place the packets on warmed coals. Cook for 45- 60 minutes, turning every 10 minutes or so, or until the meat is cooked through and veggies are cooked to desired doneness.**

36 large marshmallows
1 (16 ounce) can dark chocolate frosting
1 1/2 cups graham cracker crumbs
1 1/2 cups mini chocolate chips, mini-morsel
36 lollipop sticks or 36 wooden popsicle sticks

Steps:

  • Line cookie sheet with waxed paper.
  • Insert a stick into each marshmallow (into one of the flat ends, so it can sit on the other without falling over).
  • Put mini-morsels into a shallow bowl.
  • Put graham cracker crumbs into a shallow bowl.
  • Microwave frosting for 20 - 30 seconds (don't overdo - else it will be too thin to adhere well to the marshmallows).
  • Dip one marshmallow at a time into the frosting, allowing excess to drip off.
  • Dip the bottom and one side of the chocolate coated marshmallow into graham cracker crumbs. Dip the opposite side into the mini-morsels.
  • Stand the flat ends down on the cookie sheet.
  • Refrigerate for one hour before serving.
