Ginger-Tomato Chicken image

This recipe I made when I ran out of ingredients in my kitchen and all I had was tomato and ginger. It came out delicious.

Number Of Ingredients 11

5 tablespoons sunflower oil
1 cup thinly sliced ginger
4 tablespoons minced garlic
1 cup chopped onion
1 pound chopped tomatoes
2 ½ pounds skinless, boneless chicken breasts, cut into chunks
3 tablespoons tomato paste
2 cubes chicken bouillon
1 teaspoon ground black pepper
3 tablespoons fish sauce
1 pinch salt

Steps:

  • Heat oil in a large skillet over high heat. Add ginger and cook until golden brown, 3 to 5 minutes. Reduce heat to medium, add garlic, and cook for 3 minutes. Add onion and cook until it becomes translucent, about 5 minutes. Add chopped tomatoes and simmer until tomatoes are fully cooked, 7 to 10 minutes.
  • Add chicken and continue to simmer, stirring from time to time to prevent sticking, for 10 to 15 minutes. Stir in tomato paste, bouillon cubes, and pepper. Pour in fish sauce and simmer for 5 minutes. Season with salt. Simmer until sauce has reduced and thickened, about 20 minutes. Serve hot.
