1/4 pound ground beef
1 potato, sliced
1 carrot, sliced
2 tablespoons chopped onion
1 sheet heavy-duty aluminum foil (18 inches x 13 inches)
Salt and pepper to taste, optional

Steps:

  • Shape beef into a patty; place in the center of foil with potato, carrot and onion. Sprinkle with salt and pepper if desired. Fold foil over and seal well; place on a baking sheet. Bake at 350° for 45 minutes. Open foil carefully.

CAMPFIRE HOBO DINNER

In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative!

1/2 lb meat
1 cup potato, sliced
1 cup carrot, sliced
1/2 cup onion, sliced
4 teaspoons butter
garlic powder
salt
pepper
cooking spray
aluminum foil

Steps:

  • Spray 18-inch square of aluminum foil with cooking spray.
  • Place 1/4 of the meat in center of foil.
  • Place 1/4 of the vegetables on top of meat.
  • Season with butter, salt, garlic powder and pepper to taste.
  • Fold top and sides of foil several times to seal food.
  • THREE WAYS TO COOK: Always place seam side up when cooking. You may want to double wrap if cooking on a campfire or grill.
  • •CAMPFIRE: Place on hot coals near the edge of your campfire and allow to cook 25-30 minutes, or until meat is done.
  • •GRILL: Place on medium/hot grill for 40 minutes; rotate 1/2 way through cook time.
  • •OVEN: Preheat oven to 350°F Place on cookie sheet or cooking stone; bake for 30 to 45 minutes, or until meat is done.
  • OPEN CAREFULLY!

CAMPER'S HOBO DINNER

My kids had this at their summer camp. My version's a bit easier, they had to peel the potatoes with their teeth!

1 large potato, peeled & diced
1 large carrot, peeled & diced
1 medium onion, sliced
1 frozen hamburger patty
1 teaspoon seasoning salt, to taste

Steps:

  • Place veggies and hamburger pattie in middle of large sheet of aluminum foil.
  • Sprinkle with seasoned salt.
  • Bring up the two long sides of the foil to meet above the food, fold (crimp) the foil several times until it is snug against the food.
  • Fold (crimp) the short ends of the foil several times until snug against the food.
  • This will seal the food in and prevent leakage.
  • Place package directly on hot charcoal and cook for about 15 to 20 minutes each side (or, you can place package in a 350-degree oven for 45 minutes to 1 hour).
  • Make as many packages as needed.

1 medium cube steak...or hamburger pattie
1 medium potato........peeled and sliced
1 medium carrot....... scraped and sliced
1 small onion.......peeled & sliced
12x15 pc. of foil

Steps:

  • 1. Lay piece of foil on table. Place uncooked cube steak on the foil. Then the cut carrot coins. Next the sliced potato. Last the sliced onion. Dot with butter...salt & pepper. Close up foil to make a sealed package. Bake 1 hour at 375 F.Open and enjoy. Careful...steam is hot... **As it turned out .. I was at home , running a fever.. so this turned out to be my birthday dinner!... I only need a couple bites......YUM!! Then finished it two days later!

This version of hobo dinner is one my mom and dad made when we were growing up. It uses smoked dinner sausage slices (Hillshire Farms, etc.) instead of ground beef or other meats. Everyone loves it. It only takes one dish to make this in, and it's an entire meal by itelf in my house. Amounts can be easily increased if more servings are needed. Keeps well in the refrigerator for 2-3 days, and is delicious reheated. Not sure if it can be frozen for later....

7 -8 medium potatoes, peeled and cut into 1 to 2 inch chunks
1 -2 lb carrot, peeled and cut into 1 to 2 inch slices
2 lbs smoked sausage, sliced 1/2 inch thick
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of celery soup
1 medium yellow onion, peeled and sliced

Steps:

  • Preheat over to 350 degrees.
  • Line a 9x13 baking pan with aluminum foil, if desired (makes for easier cleanup).
  • Layer the potatoes and carrots together in the bottom of the pan.
  • Layer the sausage slices on top of the vegetables.
  • Layer onion slices on top of the meat slices.
  • Mix cream of mushroom soup and cream of celery soup together, or pour together over casserole.
  • Add water or milk to the soup for thinner gravy, if desired.
  • Pour over other ingredients.
  • Cover with aluminum foil.
  • Bake at 350 degrees until vegetables are tender, about 1 hour 30 minutes.

The traditional adobo marinade with ground beef gives it a smoky, southwest taste. Red peppers and green onions add a little kick to the potatoes. Monterrey Jack cheese is the fun surprise in the middle! Busy moms can make these foil dinners one night, and serve them the next. The neat little foil packets will keep for a few days in your refrigerator until it's time to bake them. The longer the meat can season through, the more flavorful it becomes.

1/2 teaspoon paprika
1 teaspoon oregano
1 teaspoon cumin
1/2 red bell pepper, minced

1/4 cup apple cider vinegar
1 1/2 lbs lean ground beef, thawed
4 medium potatoes, peeled and diced
1/2 red pepper, diced
2 green onions, sliced
1/3 cup lemon juice
1/4 cup olive oil

4 ounces monterey jack cheese

Steps:

  • For the Ground Beef in Adobo Sauce:.
  • Mix the first seven ingredients well in a medium-sized bowl. Soak the ground beef in the adobo sauce for 1-2 hours. After soaking, strain excess moisture off using a colander (it's fine to have a little excess moisture, as it will steam your potatoes. Too much, and your meat patties will fall apart).
  • For the Hobo Dinner Potatoes:.
  • In a small bowl, whisk together the lemon juice and olive oil. Toss with potatoes, red peppers and onions.
  • To Assemble:.
  • Preheat oven to 375 degrees. To assemble the meat patties, divide ground beef in adobo sauce into 8 balls. Press into patties. Place 1 oz. Monterrey Jack cheese (cut in squares) on each patty, as pictured below. Place another patty on top, and press together to seal. To assemble your hobo dinners, tear off a large piece of aluminum foil. Place one adobo patty on the bottom, and spoon potato mixture on top. Sprinkle with salt and pepper. Seal well. Bake for 1 -1 1/4 hours or until potatoes are tender.

4 large carrots, peeled and sliced lengthwise
1 onion, peeled and sliced into rings

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 9x13 inch baking pan with aluminum foil.
  • Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onion rings. Season with salt, pepper and garlic salt to taste.
  • Cover with aluminum foil and seal edges. Bake in preheated oven for 1 hour, or to desired doneness.

I have been making these for 40 years and eating them since I was a kid. My Momma used to put cabbage in hers. I like the zucchini squash and broccoli also. You can pretty much use any veg you want in these. Be sure to use butter or margarine for a sauce that is yummy. Otherwise it will be too dry. It may not look very pretty but...

2 lb lean hamburger at least 80% / 20%
5 medium potatoes (any kind is fine) peeled & sliced
1 medium yellow or white onion (sliced)
2 medium zucchini squash (cleaned and sliced)
2 large yellow squash (cleaned & sliced)
2 medium heads of broccoli (cleaned & sliced)
4 - 5 Tbsp butter (unsalted) or margerine cut in cubes
salt & pepper to taste

Steps:

  • 1. Pre heat oven to 400 degree. First I get a heavy duty aluminum foil and make 2 sheets where they cross each other in the middle. (to make it larger than a regular sheet). Place a good portion of hamburger, in a patty, approx. 7 to 9 inches in diameter and about 1/2 to 3/4 inch thick, on the foil. Salt & pepper to taste.
  • 2. Place sliced onions and potatoes next on top of the hamburger. Salt & pepper again. (some will slide off to the side) That is ok. Then place the squash and broccoli (or what ever veggies you have) on top of that. Pyramid style. Again, it's ok if they slide to the side a bit.
  • 3. Salt & pepper to taste again. (we like salt & pepper) Add the butter or margarine on top of all of the veggies. I use about 2 - 3 Tbsp. on each serving depending on the amount of veggies added.
  • 4. I then fold it up around the whole thing. Try to keep it as triangular as possible. Add another piece of foil underneath of this and fold it up around the whole thing. This is to catch any liquid that might seep out. Seal it up on top.
  • 5. Bake at 400 degrees for approx. an hour. Check it at 45 minutes and see it the potatoes are soft. The meat should be done if it is not too thick of a patty. The juice is what is great with this meal it is the best tasting veggies ever. And you just dump it onto a plate and enjoy it. Throw the aluminum foil away. And not much left to clean up too.

6 small potatoes, cubed
1 large onion, diced
3 carrot, sliced
6 Tbsp dales steak seasoning
dash(es) cajun seasoning
dash(es) garlic salt
salt and pepper to taste

Steps:

  • 1. Lay out 6 large pieces of foil.
  • 2. Make 6 patties, put on foil and place a dimple in the middle of pattie with thumb. Fill dimple with 1 Tb. of dale's seasoning. Top meat with cubed vegetables and onion. Sprinkle garlic salt, cajun seasoning, salt and pepper on vegetables and meat.
  • 3. Bake at 350 for 1 hour or until vegetables or tender.

This is so easy plus you get to throw away the vessel you cooked it in. You can cook them in the oven, on the BBQ or on hot coals of a camp fire. I usually go for the BBQ. It is a complete dinner in a packet.

1 pound(s) 93% ground beef
3 - potatoes sliced
- salt and pepper to taste
2 - carrots sliced
1 - onion sliced
- garlic powder to taste
4 tablespoon(s) water or stock if you have it
4 - sheets of foil about 12x18

Steps:

  • Mix hamburger, salt, pepper and garlic powder to taste and make 4 patties. Put them on the foil in the center.
  • Put sliced onions next then the carrots and potatoes on top of the onion. Just kind of eyeball them and make each packet even with the slices on top. You can add a little more salt and pepper. If you like you can also put some green bean on top of the other ingredients. Add one tablespoon of stock or water to each packet.
  • fold the long side of the foil to the center and just keep folding until it is tight. Then roll up the ends towards the center until you have a nice packet. Bake at 350 in the oven for about an hour or on the BBQ grill at medium heat for about 30 minutes. If your burgers are too thick it might take 15 minutes longer. I use the non stick foil which is a little stronger.
