This recipe combines hamburgers with onions, baby carrots, and potatoes in individually cooked foil packets. This makes clean up a snap, and keeps the grill clean, too. This also works well with round steaks.

2 pounds lean ground beef
1 onion, sliced
1 (16 ounce) package baby carrots
4 potatoes, peeled and sliced
seasoned salt to taste
salt and black pepper to taste

Steps:

  • Preheat grill for medium-high heat.
  • Form the ground beef into individual patties, and place each patty on a piece of foil large enough to hold the patty and some vegetables. Layer each patty with onion slices, carrots, and potato slices. Season with seasoned salt, salt, and pepper to taste. Wrap foil around food, and seal each packet tightly.
  • Grill 30 minutes, or until the potatoes are tender. Carefully open each packet (the steam that escapes will be very hot), and serve.

I don't know who came up with the colorful name for this recipe (from an old church cookbook), but it's sort of like sloppy joes with more substance and not in a sandwich. Served on Fritos and topped with shredded lettuce, cheese, and ranch dressing. It's not fancy, but it is a tasty and easy to prepare home-cookin' dish.

1 lb ground beef
1/2 onion, chopped
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
2 cups water
2 tablespoons sugar
2 garlic cloves, minced
1 teaspoon Accent seasoning
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon salt
1/4 cup white rice
0.5 (15 ounce) can kidney beans, drained
Fritos corn chips
shredded lettuce
shredded cheddar cheese
ranch dressing

Steps:

  • Cook and drain beef.
  • Add all other ingredients except toppings (last 4 ingredients).
  • Simmer until rice is tender, about 20 minutes.
  • To serve, place a handful of Fritos on plate, ladle meat sauce over Fritos, and top with lettuce, cheese, and Ranch.

2 teaspoons oregano
4 tablespoons sugar
1 teaspoon salt
2 teaspoons cumin seed
1 tablespoon minced onion
2 cloves garlic
3 (6-ounce) cans tomato paste
2 (8-ounce) cans tomato sauce
5 cans water
1 cup Minute rice
1 large package Fritos
1 pound shredded cheese
1 head lettuce, cut up
3 cups tomatoes, cut up
1 cup sliced dark olives
1 cup chopped green onions
1 pint sour cream
picante sauce

Steps:

  • Fry ground beef; drain off fat. Add chili powder, oregano, sugar, salt, cumin seed, minced onion, minced garlic, tomato paste and sauce, water, and rice. Bring to a boil. Simmer for 40 minutes. To serve, put in separate dishes in this order: Fritos, meat mixture, cheese, lettuce, tomatoes, olives, green onions, sour cream, and picante sauce.
