1 1/2 pounds ground chuck
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon of butter
¼ cup special sauce
5 slices of American cheese
1 tablespoon minced onion
15 dill pickle slices

Steps:

  • In a bowl combine ground chuck and salt and pepper. Shape meat into 10 meat patties. Shape patties somewhat thin. Set a griddle to 350 degrees. Place meat on the griddle and cook for 3 to 4 minutes. Season with a sprinkle of salt and pepper. Flip burgers and cook for an additional 3 to 4 minutes on each side, or until juices from the meat run clear.
  • Spread softened butter on cut sides of bun and place on griddle until the bread begins to brown. Flip the middle bun and allow to toast on both sides.
  • Build the burger by starting at the bottom. The bottom bun, Big Mac sauce, onions, lettuce, cheese, hamburger patty, and the middle bun. Spread the Big Mac sauce, onion, lettuce, hamburger patty, two or three pickle slices, and finally the top bun.

⅔ pound ground beef (85% lean)
2 cups mayonnaise
2 tablespoons prepared yellow mustard
2 tablespoons sweet pickle relish
1 ½ teaspoons white wine vinegar, or more to taste
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground paprika
4 hamburger bun bottoms
2 hamburger bun tops
2 tablespoons minced onion, or to taste
½ cup shredded lettuce, or to taste
2 tablespoons dill pickle slices, or to taste
2 slices American cheese
salt and ground black pepper to taste

Steps:

  • Shape ground beef into 4 flat patties that will fit the hamburger buns. Place them on a tray lined with waxed paper; transfer to the freezer.
  • Mix mayonnaise, mustard, pickle relish, white wine vinegar, onion powder, garlic powder, and paprika in a bowl to make sauce. Refrigerate for 10 minutes.
  • Preheat a large skillet over medium heat. Toast buns in batches until lightly golden, 1 to 2 minutes.
  • Layer some of the sauce, 1 tablespoon minced onion, 2 tablespoons lettuce, and pickles on 2 bottom buns. Layer some of the sauce and remaining 1 tablespoon minced onion, 2 tablespoons lettuce, and American cheese on the other bottom buns.
  • Season patties with salt and pepper. Cook in the hot skillet 2 at a time until browned, 3 to 4 minutes per side. Place 1 patty over each bottom bun; stack and cover with top buns.

HILLBILLY BIG MAC

This take on the popular fast food sandwich/burger is my version made with Beef Bologna. It was easy to do. I got my bologna sliced (almost 1/2" thick) from the deli to get the slices a bit thicker than the thick cut bologna in the cold cut case. You can use 3 of the thick cut slices for each slice (so 6 total). It really does taste similar to the fast food version. I used cheese sliced a bit thicker as well but you could use 2-3 slices of the singles wrapped cheese. It is hillbilly because of the bologna and "light" bread substitutions. I hope you enjoy it.

2 slice(s) deli beef bologna, cut about 1/2" thick
3 slice(s) white bread, prefer 2 heels and one regular slice
1 slice(s) american cheese
3 teaspoon(s) mayonnaise
2 teaspoon(s) ketchup or catsup
7 slice(s) dill pickle
1/2 small onion, diced fine
1/2 cup(s) iceberg lettuce, diced fine

Steps:

  • Heat a skillet over med low heat. It does not have to be non-stick.
  • cut 4 small, about 1", slits into the outside edge of the bologna slices. They should be evenly spaced (or just eyeball it, LOL, no need to be exact) This will help the bologna lie flat and not curl up as it fries/browns during cooking.
  • Place the bologna in the hot skillet. If your skillet is small fry one slice at a time. Let the bologna brown but not burn.
  • While the bologna browns, mix the ketchup and mayo together. No need to dirty up a bowl, I just dollop the mayo on one side each of the bread slices and add the ketchup and spread it till it blends together. You will have 3 slices of bread spread with the sauce (mayo/ketchup mixture) Spread it to the edges. Like I said in the ingredients, I prefer to use the 2 "heel" end pieces of the bread as the outer slices of the sandwich.They help the sandwich have the look of a burger bun and the hold together better than with regular bread slices. But 3 regular slices of bread will work. Texas Toast (thick sliced bread) bread slices are great too.
  • Flip the bologna to brown the other side. Add the slice of cheese to the browned side of the first bologna slice so it will melt a little (only one bologna slice gets cheese added).
  • While that side browns Add the lettuce to one outer bun bread slice on the mayo/ketchup mixture and to the center slice piece on top of the mayo/ketchup mixture. You will have 2 slices with lettuce and sauce and one slice with only sauce.
  • Top the lettuce with the onion. You will have 2 slices of bread with sauce, lettuce and onion and one slice of bread with only sauce.
  • On the center slice of bread top the lettuce and onion with the pickle slices. Now you have one slice of bread with sauce, lettuce and onion. One slice of bread with sauce, lettuce, onion and pickle and one slice of bread with sauce only.
  • Place the browned bologna with the cheese on the slice of bread that has sauce, lettuce and onion.
  • If you are only cooking one slice of bologna at a time then add the second slice to the hot pan and let it be browning on both sides like the first slice.
  • Top the cheese from step 9 with the center slice of bread that has the sauce, lettuce, onion and pickle. With the pickle side facing up!
  • Once the second slice of bologna is browned on both sides, place it on the pickles.
  • Top the sandwich off with the last slice of bread, mayo/ketchup side touching the second slice of browned bologna.
  • I cut my sandwich in half but you don't have to. My Son says it tastes kinda like a Big Mac.

MC DONALD'S BIG MAC

1 hamburger bun with sesame seeds
1/2 additional hamburger bun
1/4 lb ground beef
1 dash salt
1 tablespoon kraft thousand island dressing
1 teaspoon finely diced onion
1/2 cup chopped lettuce
1 slice American cheese
2 -3 dill pickle slices

Steps:

  • With a serrated knife, cut the top off the extra bun half, leaving about a 3/4-inch-thick slice.
  • That will be the middle bun of your sandwich.
  • Place the three bun halves on a hot pan or griddle, face down, and toast them to a light brown.
  • Set aside, but keep the pan hot.
  • Divide the ground beef in half and press into two thin patties slightly larger than the bun.
  • Cook the patties in the hot pan over medium heat for 2 to 3 minutes on each side.
  • Salt lightly.
  • build the burger in the following stacking order from the bottom up: bottom bun, half of dressing, half of onion, half of lettuce, American cheese, beef patty, middle bun, remainder of dressing, remainder of onion, remainder of lettuce, pickle slices, beef patty, top bun.
