CHESS PIE
This classic Chess Pie recipe is a sweet custard pie made with eggs, sugar, milk, flour, cornmeal and citrus.

Steps:
- In a medium mixing bowl, cream the butter and sugar. Beat in the flour and cornmeal.
- Add the eggs, one at a time, beating well after each. When the egg mixture is well beaten add the milk, vanilla, lemon juice and zest beat until smooth.
- Add pie crust to 9'' pie plate and crimp the edges. Pour in filling.
- Bake at 350 degreed F for 55-60 minutes. Check the pie after 30 minutes and place a piece of aluminum foil on top to keep it from getting too brown. (I spray the foil with a non-stick spray to keep it from sticking to the top of the pie.)
- Allow to cool for one hour before serving.

HIGHWAY CAFE CHESS PIE
I obtained this recipe 40-years ago from the cook at the Highway Cafe in Scappoose, Oregon. I have never found its equal. Whenever I serve it, I am always asked for the recipe.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Soak raisins in boiling water for 10 minutes. Drain, and chop.
- In a medium bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, mixing well after each one. Stir in the vanilla, sour cream, walnuts and chopped raisins. Pour into the baked pie shell.
- Bake for 30 minutes in the preheated oven, or until firm in the center. Allow to cool completely before slicing.

It's restaurant-style quiche at home! This easy ham and Swiss cheese pie is sure to be a family-pleasing entrée.

Steps:
- Heat oven to 400°F. Grease 9-inch pie plate. Sprinkle ham, cheese and onions in pie plate.
- Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour into pie plate.
- Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with tomato and bell pepper.
