SHRIMP POTATO NESTS #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. Little nests of potatoes filled with a shrimp puree topped with a small piece of shrimp. These little nests are great for superbowl parties or any occasion. I made similar nest (smoked salmon, sour cream) for Christmas Eve and people loved them. This is a sophisticated appetizer, so some may not like this but it is worthy of a try. I only put 30 mintues as a prep time because besides the time it takes to refrigerate the potatoes everything else is very easy and quick to do.

Steps:
- In a large pan bring unpeeled potatoes to a boil. Reduce heat, cover and cook 20 minutes. Drain, let cool and refrigerate at least 1 hour.
- Meanwhile, pulse shrimp and lemon zest in a processor. Add yogurt and Hidden Valley packet, process til combined. Refrigerate until ready to serve.
- Preheat oven to 425 degrees.
- Grease mini muffin pan. In a medium bowl coarsely peel potatoes and grate. Gently toss in salt and pepper. Place a heaping tablespoon of potato in muffin pan, press against sides to form and allow som to extend over rims. Do not spread to thin. Bake about 25 mintues. Cool in pan about 10 mintues. Carefully remove and place on a baking sheet lined with paper towels. (This process can be made up to 4 hours ahead and left at room tempature.).
- Preheat oven to 375 degrees.
- Bake nests for 6-8 mintues. Transfer to a serving platter. Spoon a dollop of the shrimp mix into each nest and top with a tiny piece of shrimp. Sprinkle with parsley and serve.

CROCK POT PESTO RANCH CHICKEN AND VEGGIES #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. You can't get much easier than this! With little prep work, all ingredients get mixed into the crock pot to create a complete meal. The pesto and ranch combine to make a delicious sauce that coats the chicken, potatoes and carrots. Our family just loved this recipe and I hope that you do, too! Steps:
- Cut the potatoes in half if they are small or into quarters if they are large.
- Put the potatoes, baby carrots and shallots into the bottom of the crock pot.
- Place the chicken breasts on top of the vegetables.
- In a small bowl, mix together the pesto and chicken broth with the packet of Hidden Valley Ranch Salad Dressing and Seasoning Mix until completely combined.
- Pour the pesto/ranch mixture over the chicken and vegetables.
- Mix everything together so the sauce covers all ingredients.
- Put the lid onto your crock pot and cook on low for 6-8 hours.
- Enjoy!

- Preheat oven to 400 degrees F.
- Season chicken pieses generously on each side with Hidden Valley Ranch seasoning mix and 1 TBSP smoked paprika. Let chicken stand for 20 minutes after being seasoned. Meanwhile, roast tomato in oven until skin is charred, peel and dice.
- Heat oil in large skillet, over medium high heat. Add chicken, without crowding, and brown well. Turn chicken and brown well. Add green pepper and shallots, and cook until soft. Add garlic and tomato, then cook 5 minutes while stirring. Add spinach, cook down, then add pepper sauce, reduce heat and simmer, covered, 30 minutes.
- Transfer chicken stew to 9", 2 QT casserole dish. Sprinkle with grated parmesan cheese. Bake until cheese is light brown on top.

- Preheat oven to 400 degrees F.
- If using a pizza stone, preheat the stone while preheating the oven.
- Prepare dough according to package directions.
- Transfer dough to baking sheet or if using pizza stone, continue with directions.
- Combine Hidden Valley Ranch and Greek Yogurt; set aside.
- Heat oil in a large skillet over medium-high heat. Add chicken tenders, garlic and pepper and saute until golden brown, about 10 minutes. Add mushrooms and spinach and saute till mushrooms are soft. Remove from heat. When chicken is cool enough to handle, dice chicken to yield a little over 1 cup. In a small bowl, toss chicken, with 2 tablespoons of Hidden Valley Ranch mixture. Set aside.
- Measure one cup Hidden Valley Ranch Mixture and spread evenly over pizza crust. Distribute chicken, mushrooms, and garlic over entire pizza surface. Add the cheeses.
- Using a pizza peel, transfer the pizza to the stone that has preheated in the oven.
- Cook for 20 min or until crust is golden brown and cheese is bubbly.

The Original Ranch dressing and seasoning dip is stuffed into the crust leaving no crust uneaten! With a side of the dip to dip the crust into. This recipe uses one package of The Original Ranch dressing and seasoning dip divided amongst the recipe. Take note in the photos the crust opens making it a perfect vessel to scoop up the dip. I always have roasted garlic in my refrigerator. If you want try it with fresh sliced very thin and may want to cut back to 2-3 cloves.

- Preheat oven to 500 degrees.
- Spinach Mixture:.
- In a large pan heat olive oil toss in the shallots and saute till translucent. Add the spinach and cut till wilted and moisture is evaporated. Remove to a bowl and toss in the roasted garlic, sun-dried tomatoes and the The Original Ranch dressing and seasoning dip. Set aside to cool.
- Shrimp:.
- Place the towel dried shrimp in to a bowl season with The Original Ranch dressing and seasoning dip, paprika, pepper and oregano. Set aside to marinade.
- Cheese Mixture:.
- Mix the cheeses together set aside.
- Place dry stone or a large rim-less oiled pan in oven to heat.
- On a floured work surface roll dough out to a large circle.
- Place on a generously floured / (corn meal) pizza peel (or cardboard square, or rim-less baking sheet).
- Top the dough:.
- Brush some of the oil from the bottom of the spinach mixture on the edge of the crust. Sprinkle the tablespoon of The Original Ranch dressing and seasoning dip along the edge. Then take the edge and fold it over to encrust the seasonings. Pressing to seal it.
- Spread the spinach layer evenly right to the seam.
- Top with the shrimp in a spiral on the outer edge and place four in the center.
- Sprinkle the cheese evenly over the whole pie, center right to the edge.
- Lower oven to 475.
- Carefully shimmy the pie onto the heated stone or pan.
- Bake 10-12 minutes.
- Mean while prepare dip mixing the sour cream and The Original Ranch dressing and seasoning dip together. Set aside.
- Remove with pizza wheel when bubbly and crisp to a wooden cutting board.
- Let set for 5-10 minutes if you can wait. ;).
- Slice and enjoy. When you get to the crispy crust dip it into the prepared The Original Ranch dip.
HIDDEN VALLEY RANCH SALAD DRESSING & SEASONING (COPYCAT)
My reverse-engineered recipe for this popular packaged dressing mix yields 6 batches. You can actually substitute chicken bouillon granules for vegetable bouillon granules, if you're not serving vegetarians. Xanthan gum, an emulsifier, is sold in health food stores.

- WHISK all of the SPICE MILL INGREDIENTS into a medium bowl.
- FUNNEL half of mixture into a clean spice mill or coffee grinder; MILL for 5 seconds.

- Make or buy one pizza dough that will make one 12" diameter pizza. Preheat oven to 500 degrees and place your pizza stone on the middle oven rack. Semi pack one cup of spinach leaves with stems removed. Put into a food processor. Add parmesan cheese, garlic, Hidden Valley Ranch mix, salt, pepper, almonds, and Extra virgin olive oil. Process, pushing sides down until a smooth puree results. Set aside. Heat 10" skillet between medium-low and medium heat. When heated, add 1 T. butter and 1 T. extra virgin olive oil. Add shallot slices for 30 to 45 seconds. Remove shallots to paper towel lined bowl. While pan is reheating, dry shrimp and then rub jerk seasoning on shrimp. Sautee shrimp for 1 and 1/2 minute per side. Remove to bowl and add 1 t. sriracha. Set aside. Take pizza dough and place on pizza peel. Take 1/3 Cup Hidden Valley pesto and evenly spread on dough. Top pesto with mozzarella. Add shallots and shrimp to top of pizza. Sprinkle smoked paprika on top. Place pizza on baking stone and bake for 6 to 7 minutes. Remove from oven and sprinkle on remaining parmesan cheese. Slice and enjoy.
