Steps:
- Bring hibiscus, sugar, and 8 cups water to a boil in a large pot over high heat. Reduce heat to low and simmer 10 minutes. If using hibiscus flowers, strain mixture through a fine-mesh sieve into a large bowl; discard solids. If using tea bags, discard bags, then transfer mixture to a large bowl. Chill until cold, at least 2 hours. Transfer to a pitcher, pouring slowly so any fine particles remain in bowl. Stir in lemon juice.
- Do Ahead
- Aqua fresca can be stored in an airtight container and chilled for up to 5 days.

Steps:
- Put flowers and 3 cups water in a saucepan and bring to a boil; continue boiling approximately 5 minutes.
- Remove from heat and add remaining cup of water and sugar.
- Set aside at least 4 hours (or overnight).
- Strain into a pitcher and refrigerate.
- Serve well-chilled.

- Peel and thinly slice fresh ginger. Combine ginger, hibiscus flowers, and 3 cups boiling water in a medium pot. Let steep at room temperature for 30 minutes. Strain into a large pitcher, discarding solids. Add sugar; stir until dissolved. Add 8 cups cold water. Fill glasses with ice; pour agua fresca over and serve. DO AHEAD: Can be made 3 days ahead. Cover and chill.

- Scrape vanilla seeds into a medium saucepan; add pod, chile, orange zest, hibiscus, sugar, and 2 cups boiling water. Let steep until infusion cools to room temperature, about 30 minutes. Strain through a fine-mesh sieve into a large bowl, pressing on solids. Stir in lime juice and 2 cups cold water; chill agua fresca 1 hour.
- Divide agua fresca among ice-filled glasses. Garnish with lime wheels.

- Agua fresca can be made 3 days ahead. Cover and chill.
MINTED RASPBERRY HIBISCUS AGUA FRESCA

Steps:
- Bring 8 cups water to a boil ini a large saucepan. Add the raspberries, mint, and tea bags. Remove from heat. Let stand 1 hour at room temperature. Remove the tea bags, strain mixture through a sieve, reserving liquid. Discard solids. Add sugar and juice to tea, stirring until sugar dissolves.
- Garnish with mint sprigs.
- Makes 8 servings.
