HIBISCUS-LEMON AGUA FRESCA

Yield Makes about 7 cups

Number Of Ingredients 3

1 cup dried hibiscus flowers or 10 hibiscus tea bags
1/4 cup sugar or agave syrup
2 tablespoons fresh lemon juice

Steps:

  • Bring hibiscus, sugar, and 8 cups water to a boil in a large pot over high heat. Reduce heat to low and simmer 10 minutes. If using hibiscus flowers, strain mixture through a fine-mesh sieve into a large bowl; discard solids. If using tea bags, discard bags, then transfer mixture to a large bowl. Chill until cold, at least 2 hours. Transfer to a pitcher, pouring slowly so any fine particles remain in bowl. Stir in lemon juice.

  • Aqua fresca can be stored in an airtight container and chilled for up to 5 days.

2/3 cup dried hibiscus flowers
4 cups cold water, divided
1/3 cup granulated sugar, to taste

Steps:

  • Put flowers and 3 cups water in a saucepan and bring to a boil; continue boiling approximately 5 minutes.
  • Remove from heat and add remaining cup of water and sugar.
  • Set aside at least 4 hours (or overnight).
  • Strain into a pitcher and refrigerate.
  • Serve well-chilled.

1 fresh ginger, 2 1/2" piece
1 1/3 cups hibiscus flowers
3/4 cup plus 2 tablespoons sugar

Steps:

  • Peel and thinly slice fresh ginger. Combine ginger, hibiscus flowers, and 3 cups boiling water in a medium pot. Let steep at room temperature for 30 minutes. Strain into a large pitcher, discarding solids. Add sugar; stir until dissolved. Add 8 cups cold water. Fill glasses with ice; pour agua fresca over and serve. DO AHEAD: Can be made 3 days ahead. Cover and chill.

1 vanilla bean, split in half lengthwise
1 Thai chile, split in half lengthwise
4 (3-inch) strips orange zest
1/2 cup dried hibiscus flowers or 24 hibiscus tea bags
1/2 cup sugar
1/2 cup fresh lime juice
Thin lime wheels (for serving)

Steps:

  • Scrape vanilla seeds into a medium saucepan; add pod, chile, orange zest, hibiscus, sugar, and 2 cups boiling water. Let steep until infusion cools to room temperature, about 30 minutes. Strain through a fine-mesh sieve into a large bowl, pressing on solids. Stir in lime juice and 2 cups cold water; chill agua fresca 1 hour.
  • Divide agua fresca among ice-filled glasses. Garnish with lime wheels.

  • Agua fresca can be made 3 days ahead. Cover and chill.

MINTED RASPBERRY HIBISCUS AGUA FRESCA

A tropical drink from Jamaica, great summer drink! Hibiscus is used often in the Caribbean islands. Adapted from Cooking Light magazine.

8 cups water
2 cups fresh raspberries (or frozen)
1/4 cup of fresh mint, coarsely chopped
6 hibiscus tea bags (or hibiscus and rose hips tea bags)
3/4 cup sugar
1 tablespoon fresh lemon juice
8 mint sprigs

Steps:

  • Bring 8 cups water to a boil ini a large saucepan. Add the raspberries, mint, and tea bags. Remove from heat. Let stand 1 hour at room temperature. Remove the tea bags, strain mixture through a sieve, reserving liquid. Discard solids. Add sugar and juice to tea, stirring until sugar dissolves.
  • Garnish with mint sprigs.
  • Makes 8 servings.
