A variation of Applesauce-Raisin Muffins - 1 point per muffin if you are a Weight Watcher! UPDATED 5/10/2009: Since Kellogg's All Bran With Extra Fiber Cereal has been discontinued, I have updated my recipe to use General Mills Original Fiber One cereal instead. Luckily the Weight Watchers points value of 1 remains the same. Enjoy! :-)

Number Of Ingredients 13

2 cups Fiber One cereal, original
1 1/2 cups unsweetened applesauce
1/4 cup nonfat milk
3 large egg whites (I use liquid egg whites)
3/4 cup all-purpose flour
1/2 cup whole wheat flour (or you can even use all whole wheat and no white flour)
1/2 cup Splenda granular
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup toasted wheat germ (optional)
1 1/2 cups blueberries (fresh or frozen)

Steps:

  • In a large mixing bowl, combine the All Bran, Applesauce, Milk and Egg Whites and allow it to sit until softened.
  • Preheat the oven to 400 degrees.
  • In a separate bowl, stir together the flours, Splenda, baking powder, cinnamon, baking soda and salt.
  • Blend the cereal mixture thoroughly with the mixer.
  • Add the flour mixture and blend.
  • Stir in the Blueberries.
  • Spoon into muffin cups that have been sprayed with Pam or that have liners in them.
  • The muffin cups will be full.
  • Bake for approximately 20 minutes.

This is from the Weight Watchers magazine Easy Weeknight Favorites. My magazine says I first tried them in January 2006. They are very good for a lowfat muffin and easy to make. I am posting here because my magazine is falling apart and I am afraid I am going to lose it! (I have omitted the teaspoon of grated lemon rind and teaspoon of grated orange rind the original recipe calls for. I don't always have them around to grate so just make it without!)

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground allspice
1/4 teaspoon salt
3/4 cup nonfat milk
1/3 cup sugar
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 large egg, lightly beaten
1 cup frozen blueberries, thawed and drained
cooking spray

Steps:

  • Preheat oven to 400 degrees.
  • Combine first 4 ingreidents in a medium bowl; stir well. Make a well in center of mixture.
  • Combine milk through the egg; add to flour mixture, stirring just until moist. Gently fold in blueberries.
  • Divide batter evenly between 12 muffin cups coated with cooking spray. Bake at 400 for 20 minutes or until golden. Remove from pan immediately; cool on a wire rack.

1 1/2 cups zucchini, shredded, about 1 large zucchini
1 cup whole wheat flour
1/2 cup all-purpose flour
2/3 cup Splenda granular
1/3 cup brown sugar, not packed
1/2 cup liquid egg substitute, like Egg Beaters Original
1/2 cup unsweetened applesauce
3 tablespoons whipped light butter or 3 tablespoons Brummel and Brown spread
3 tablespoons walnuts, crushed divided
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine both types of flour, Splenda, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  • In a separate medium bowl, mix together the zucchini, egg substitute, applesauce, butter, and vanilla extract. Slowly add this mixture to the first bowl, and stir until thoroughly blended. Mix half the crushed walnuts (1 1/2 tbsp.) into the batter.
  • Line 9 cups of a 12-cup muffin pan with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 9 cups. Top each cup with a sprinkling of the remaining 1 1/2 tablespoons crushed walnuts.
  • Bake in the oven for 20 - 25 minutes, until a toothpick poked into the center of a muffin comes out clean. Let cool and then enjoy!

1 (15 ounce) can pumpkin puree

Steps:

  • Preheat the oven to 400 degrees.
  • Prepare a 12-cup muffin pan with nonstick spray.
  • Mix the two ingredients together. Don't add anything else that may be mentioned on the box, like eggs, oil or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this!

1 cup cream-style corn, canned
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup fat free egg substitute (like Egg Beaters)
1/2 cup nonfat sour cream
1/2 cup reduced-fat cheddar cheese, shredded
1/4 cup scallion, chopped
2 tablespoons artificial sweetener (i. e. Splenda granulated)
1 1/2 teaspoons baking powder

1/4 teaspoon hot sauce

Steps:

  • Preheat oven to 375 degrees.
  • Combine flour, cornmeal, Splenda, baking powder and salt in a large bowl.
  • In a separate small bowl, mix together all other ingredients -- then add the contents of the small bowl to the large one, and stir until well mixed.
  • Spray a 12-cup muffin pan with nonstick spray or line it with baking cups. Evenly distribute muffin batter among the cups.

1/3 cup liquid egg substitute (like Original Egg Beaters)
1/2 cup fat-free evaporated milk
1/2 cup fat-free half-and-half
3 tablespoons brown sugar, not packed
1 teaspoon brown sugar, not packed
1 1/2 teaspoons sugar-free french vanilla powdered coffee creamer
1 1/4 teaspoons vanilla extract
4 teaspoons granulated sugar

Steps:

  • Preheat oven to 325 degrees. In a medium pot, combine milk, half & half, and brown sugar. Bring to medium heat on the stove. Stir and cook until the sugar has dissolved and mixture is hot. Stir in the powdered creamer, blending well. Remove from heat.
  • In a large bowl, mix the egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture. Set four 4-ounce baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture into the cups.
  • Carefully pour hot water into the baking dish, around the cups, being careful not to splash any water into the custard (or on yourself!). The water should come about halfway up the outsides of the custard cups. Carefully transfer pan to the oven, and bake for about 28 minutes, until custards are set.
  • Remove from the oven, allow to cool, and then refrigerate custard cups until completely chilled. Once ready to serve, top each custard cup with 1 teaspoons white sugar. Using a hand-held butane kitchen torch, caramelize the sugar (in other words, blast with fire 'til browned).
