SUMMERY HERBED TUNA PASTA SALAD

- Bring a large pot of salted water to a boil.
- Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
- Cook the green beans in the boiling water until crisp-tender, 3 to 4 minutes. Transfer the beans to a colander with a slotted spoon and run under cold water to stop the cooking process. Add them to the bowl with the dressing.
- Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
- Add the tuna, basil, carrots, celery, chives and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

GRILLED TUNA WITH CHERRY-TOMATO SALAD AND HERBED BULGHUR
This grilled-tuna dish makes a quick and healthy meal. The herbed bulghur wheat can be made ahead and set aside while the rest of the ingredients are being prepared.

- Bring 2 cups water to a boil. Place bulghur in a large heatproof bowl; cover with the boiling water. Add 1/4 teaspoon salt; stir just to combine, and cover tightly with plastic wrap. Let steam until tender but still slightly chewy, 22 to 25 minutes. If all water has not been absorbed, drain bulghur in a sieve, then return to dried bowl. Let cool. Using a fork, stir in celery leaves, mint, cilantro, and coriander.
- Make cherry-tomato salad: In a medium bowl, toss the tomatoes and scallions with the oil, lemon juice, and 1/4 teaspoon salt. Season with pepper. Set aside.
- Heat a lightly oiled grill or grill pan over medium-high heat. Sprinkle both sides of each tuna steak with about 1/4 teaspoon salt; season evenly with pepper. Cook until first side is seared with grill marks, 3 to 4 minutes. Flip tuna, and cook 3 minutes more for medium-rare. Serve with herbed bulghur on the side and cherry-tomato salad spooned on top.

PENNE TUNA HERBED SALAD
I found this recipe in the local paper, and it is a family favorite. Perfect for summer.

- 1. place tuna in a small bowl:break into flakes using fork. Set aside,Heat large pot filled with water to boil. Add penne and 1 teaspoon salt; cook until al dente, about 12 minutes. Drain; transfer to large serving bowl, add lemon juice,olive oil, remaining 1/2 teaspoon salt, and pepper; toss to coat.
- 2. Add tuna, parsley,basil,cilantro and capers; mix gently. Taste and adjust seasoning. Cover; refrigerate to chill, about 1 hour.Serve at room temperature.
HERBED TUNA SALAD
This is the classic Raspberry's Tuna, which I added the herbs to. I think the orignal recipe comes from Moosewood, or Deaf Smith, I no longer remember. This is updated (2007) to reflect the opinion of the kindly reviewer, hopefully someone else will feel inclined to give it a shot.
