Parmesan cheese and garlic liven up this spinach dish, which goes well with met entrees and main-dish casseroles. Sometimes, I use broccoli as a spinach substitute. It's equally delicious.

1/2 cup chopped onion
2 tablespoons butter
1 garlic clove, minced
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1/2 cup heavy whipping cream
1/3 cup whole milk
5 tablespoons shredded Parmesan cheese, divided
1/4 cup dry bread crumbs
1/2 teaspoon salt
1/4 teaspoon dried marjoram
1/8 teaspoon pepper

Steps:

  • In a large skillet, saute onion in butter until onion is tender. Add garlic; cook 1 minute longer. Stir in the spinach, cream and milk. Remove from the heat; stir in 4 tablespoons cheese, bread crumbs, salt, marjoram and pepper. , Spoon into a greased 1-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until cheese is lightly browned.

4 cups of fresh spinach, well rinsed and tough stems removed
2 cups fresh ricotta cheese
4 scallions, trimmed and minced
1/3 cup packed basil leaves, minced
2 tomatoes, chopped
2 tablespoons flat parsley, chopped
1/4 cup olive oil
Salt and freshly ground black pepper to taste
1 pound penne
1/2 cup pine nuts, toasted

Steps:

  • Blanch the rinsed spinach leaves in a large pot of well-salted boiling water until limp, about 1 minute. Drain the spinach and cool completely under cold running water. Pat dry and chop.
  • Put the ricotta cheese in a large bowl and beat with a fork until smooth. Stir in the spinach, scallions, basil, tomatoes, parsley and olive oil. Add salt and pepper to taste.
  • Cook the penne until tender in well-salted boiling water. Drain, toss with the ricotta mixture, garnish with the pine nuts and serve immediately.

Steps:

  • Heat oven to 350°F. Spray 12-inch ovenproof skillet with cooking spray.
  • In large bowl, mix Dip ingredients until blended. Set aside.
  • Separate dough into 8 biscuits. Separate each biscuit into 2 rounds. Place 1 cube of cheese on center of each biscuit round. Fold edges up and over cheese, pinch firmly to seal; roll into a ball. Place around edge of skillet with pinched end facing down.

2 cups water
2 tablespoons olive oil
2 tablespoons diced shallots
3 cups baby spinach leaves (about 3 ounces)
1 cup halved grape tomatoes (about 1/2 pint)
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh mint leaves
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Place the lentils in a pot with the water and bring to a boil. Cover and simmer for 30-35 minutes, until the lentils are tender but still retain their shape. Drain any excess water from the lentils and set them aside.
  • Heat the olive oil in a large skillet over a medium-high heat. Add the shallots and cook until they are softened, about 3 minutes. Add the spinach and cook until just wilted, about 2 minutes. Add the tomatoes, lentils, basil, parsley, and mint to the pan and stir to combine. Cook until warmed through, about 1 minute. Stir in the lemon juice, salt and pepper and serve.

Steps:

1 teaspoon salt
2 tablespoons butter
3 cups potatoes, cubed

  • In a soup pot, saute the onions, celery and salt in the butter for 5 minutes on a medium high heat.

1 pound spinach, washed
1 1/2 pounds ground chicken
2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon lemon zest
Pinch of ground cayenne
Pinch of ground nutmeg
1/2 teaspoon crushed fennel seeds
Pinch of ground cinnamon
1 cup roughly chopped cilantro leaves and tender stems
1 serrano chile, with seeds, finely chopped
1 egg, beaten
1 cup soft fresh bread crumbs, from about 4 slices of crustless sandwich bread
1/2 cup heavy cream, half-and-half or milk
All-purpose flour, for dusting
Extra-virgin olive oil, for frying
Lime or lemon wedges, for serving

Steps:

  • Blanch the spinach: Plunge leaves a handful at a time into a pot of boiling water. Leave just long enough to wilt, about 30 seconds, then drain in a colander and cool under running water. Remove and squeeze wilted leaves into a ball. Using a large knife, roughly chop spinach on a cutting board - you should have about 2 cups. Squeeze into a ball again to remove excess water. (This may be done several hours or up to a day in advance and refrigerated.)
  • In a large bowl, put chicken, salt, pepper, lemon zest, cayenne, nutmeg, fennel seeds, cinnamon, spinach, cilantro, chile, egg, bread crumbs and cream. Using your clean hands, knead everything together, mixing well. Leave to absorb seasoning for 15 minutes or overnight.
  • Test for seasoning: Take a small amount and flatten into a thin patty. Quickly cook in a small skillet, about 1 minute per side. Taste, then adjust the mixture's seasoning if necessary.
  • Using an ice cream scoop or spoon, form 24 rough balls and place on a baking sheet. (The mixture will be soft.) Lightly sprinkle the balls with a very small amount of flour.
  • Set a large, wide skillet over medium-high heat. Add olive oil to a depth of 1/4 inch. When oil is wavy, use a spoon to help slip in balls into skillet. Gently fry the balls without crowding. Adjust heat as necessary (high heat will make them tough.) Cook for about 4 minutes per side; they should be golden brown, not too dark. Serve with lime or lemon wedges.

  • Preheat oven to 450 degrees. Cook peas in a small pot of boiling salted water 1 minute. Drain; transfer to a food processor. Add 1/2 teaspoon lemon zest, 1 tablespoon juice, 1 tablespoon cheese, and 2 tablespoons oil. Season with salt and pepper; process until texture is similar to hummus. Add cilantro and 1 packed cup spinach; puree.
  • Pat chicken dry; season with salt and pepper. Stir together remaining 2 tablespoons cheese and 1/2 teaspoon zest. Heat 1 tablespoon oil in a large skillet over medium-high. Add chicken, skin-side down; cook until browned, about 5 minutes. Spoon off fat and discard. Flip chicken and sprinkle with cheese mixture.   • Meanwhile, toss remaining 3 cups spinach with remaining 1 teaspoon lemon juice and 1 tablespoon oil; season with salt and pepper. Serve chicken with puree, spinach, and lemon wedges.

Salt and freshly ground pepper
1/2 teaspoon freshly grated nutmeg
1 teaspoon minced fresh rosemary
1 teaspoon minced fresh thyme leaves
1 tablespoon minced fresh parsley
2/3 cup milk
5 large eggs
6 1/2 tablespoons olive oil
1/2 bunch spinach (about 1 pound), washed thoroughly and stems removed

Steps:

  • Whisk together flour, 1 teaspoon salt, 1/8 teaspoon pepper, nutmeg, and herbs in a large bowl. In another bowl, beat the milk, eggs, and 5 tablespoons olive oil. Whisk into flour mixture until smooth.
  • In a large pot, bring 6 quarts of water to a boil; add 1 tablespoon salt. Fill a potato ricer fitted with a 1/4-inch-hole attachment with batter and push it through into the boiling water, or use a colander, pushing batter through with a rubber spatula. Cook spaetzle until it floats to the top, about 30 seconds. Drain spaetzle in colander.
  • Heat remaining 1 1/2 tablespoons olive oil in a skillet over medium high heat. Add spinach and saute until it starts to wilt. Add spaetzle, season with salt and pepper, and cook until hot. Serve immediately.

3 tablespoons olive oil
2 cups chopped onions

1 10-ounce package frozen chopped spinach, thawed, squeezed dry
2 whole matzo sheets, finely crumbled (about 1 cup)
1 large egg, beaten to blend
For brisket
1 4-pound flat-cut brisket
2 pounds onions, thinly sliced
2 1/4 cups canned chicken broth
3 large carrots, peeled, cut into 1-inch pieces
3 celery stalks, sliced
5 garlic cloves, peeled
1 tablespoon chopped fresh thyme
1 bay leaf

Steps:

  • Make stuffing:
  • Heat oil in heavy large skillet over medium heat. Add onions, garlic and thyme; sauté until onions soften, about 5 minutes. Cool 15 minutes. Mix in spinach and matzo. Season stuffing with salt and pepper. Mix in egg.
  • Make brisket:
  • Preheat oven to 350°F. Cut deep pocket in 1 side of brisket, leaving 3/4-inch border of meat uncut on remaining 3 sides. Fill pocket with stuffing. Skewer or sew pocket closed. Sprinkle salt and pepper all over brisket.
  • Arrange half of onions in bottom of large roasting pan. Place brisket, fat side up, on onions. Top brisket with remaining onions. Pour 1/4 cup broth into pan. Bake brisket uncovered until meat and onions begin to brown, about 1 hour.
  • Add carrots, celery, garlic, thyme and bay leaf to pan around brisket. Pour remaining 2 cups broth over. Cover pan with foil. Reduce temperature to 300°F. Bake brisket until tender, about 2 1/2 hours longer. Remove from oven. Uncover pan; let brisket stand 30 minutes. Thinly slice brisket across grain. Overlap slices on platter. Surround with vegetables from pan. Spoon off fat from pan juices; season juices with salt and pepper. Serve brisket with pan juices.

1 (398 ml) can navy beans (drained and rinsed)
1 tablespoon chopped fresh basil
1/2 teaspoon dried oregano
2 tablespoons olive oil, divided
1 tablespoon white wine vinegar
3 lbs spaghetti squash
1 bunch spinach
1 tablespoon butter
1/2 cup chopped onion
2 garlic cloves, chopped fine
1/2 cup crumbled feta cheese
salt and pepper
grated parmesan cheese

Steps:

  • In a small bowl, combine beans, basil, oregano, 1 tablespoon olive oil and the vinegar:set aside.
  • Cut the squash in half and remove the seeds. Put each half face down in a glass pie plate with 1/4 cup of water. Cover with plastic wrap. Microwave each for 7 - 10 minutes until the flesh feels soft.Let it stand for 5 minutes and then pull out the strands of flesh and place then in a large bowl.
  • Meanwhile, wash and trim stems from spinach. Stack leaves and cut crosswise into 1/4 inch (5 mm) wide strips; set aside).
  • In a large frypan , heat butter and remaining one tablespoon of oil over medium heat. Add onion and garlic;saute for 1 minute.
  • Add spinach and saute for 2 to 3 minutes until the spinach is just wilted.
  • Add feta cheese and bean mixture; heat through.
  • Add salt and pepper to taste.
  • Add spinach mixture to squash and toss.
  • Transfer to serving platter and sprinkle with parmesan cheese.

You can have this meal on the table in less time than it takes for me to run a mile. Okay, I admit I am the slowest runner I know (I am more of a jogger, really) -- but still, that is a fast dinner. The key is taking advantage of canned lentils for a tender and hearty instant protein, as well as vegetables that require very little prep -- pre-washed baby spinach and grape tomatoes. They are seasoned in the skillet with chopped shallot, fresh thyme, and balsamic vinegar, then dolloped with creamy, rich ricotta cheese that is warmed slightly in the skillet, too. A sprinkle of fresh basil leaves takes you, deliciously, to the finish line for the win. I like to serve mine with some whole-grain, sourdough toast or baguette.

2 tablespoons olive oil
1/3 cup chopped shallot
1 garlic clove, minced
2 teaspoons chopped fresh thyme leaves, or 3/4 teaspoon dried
2 (15.5-ounce) cans lentils, drained and rinsed (about 3 cups)
1 tablespoon aged balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup grape tomatoes, quartered
2 cups lightly packed baby spinach leaves, coarsely chopped
1 cup part-skim ricotta cheese
6 large fresh basil leaves, cut into ribbons

Steps:

  • Heat the oil in a 10-inch skillet over medium heat. Add the shallots and cook until they have softened, about 1 minute. Stir in the garlic and cook for 30 seconds more. Stir in the thyme, then add the lentils, balsamic vinegar, salt, and pepper, and stir just enough to combine. Add the tomatoes and spinach, lower the heat to medium-low, cover, and cook, stirring occasionally, until warmed through and the vegetables have wilted, 5 minutes.
  • Make a well in the lentil mixture and dollop 1/4 cup of the ricotta cheese into it. Repeat with the remaining ricotta, creating separate wells. Cover and cook until the cheese is slightly warmed but not melted, 2 minutes. Sprinkle with the basil and serve.
  • Leftovers will keep in an airtight container in the refrigerator for up to 4 days.

My first attempt at making up a recipe for my slow cooker, and thought the results were great. The addition of fresh herbs added great flavour and by stirring the spinach through the stew at the end it is perfectly cooked.

800 g beef, cubed
3 onions, cut into wedges
3 carrots, sliced
4 stalks celery, sliced
1 can chopped tomato
2 tablespoons fresh basil
2 tablespoons fresh flat leaf parsley
2 tablespoons fresh rosemary
2 -3 cloves garlic, minced
3 bay leaves
3 red capsicums, any colour,roasted,skinned and chopped
1 bunch baby spinach leaves
2 tablespoons oil
2 tablespoons flour
1 cup beef stock
1/2 cup red wine (Shiraz was my preference, but any decent red will suffice)

Steps:

  • Heat oil in pan.
  • Shake Beef in plastic bag with flour to coat, cook in batches until browned.
  • Add all ingredients except spinach to slow cooker.
  • Cook on Low for 8 hours.
  • Add spinach to slow cooker, stir and cook until spinach is wilted (approx. 10 minutes).
  • Serve over rice or noodles.

2 cups herb stuffing mix
3/4 cup parmesan cheese, grated
1 teaspoon garlic, finely minced
1 medium onion, finely chopped
3 eggs, beaten
1/4 lb butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Thaw spinach and remove excess liquid.
  • Add remaining ingredients (stuffing mix, parmesan cheese, garlic, onion, eggs and butter) and mix well.
  • Form the mixture into small balls and place on a baking sheet.
  • Bake for 15 minutes at 350 degrees.

1 l clove garlic, minced
1/4 c butter
5 pkg frozen chopped spinach (thaw)
1 c cream
1 c milk
3/4 c parmesan cheese, grated
1/2 c fresh bread crumbs
1 marjoram leaf; crumbled
1 tsp salt
1/4 tsp pepper

Steps:

  • 1. Preheat oven to 350 degrees. Sauté onion and garlic in butter until tender.
  • 2. Combine all ingredients except 1/4 cup Parmesan. Turn into greased 2 quart baking dish.
  • 3. Sprinkle top with reserved cheese. Bake for 30 minutes.
