12 cups frozen corn
1 cup water
1/2 cup butter, cubed
2 tablespoons minced fresh parsley
2 teaspoons salt
1 teaspoon dill weed
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon dried thyme

Steps:

  • In a large saucepan, combine corn and water. Bring to a boil. Reduce heat; cover and simmer until corn is tender, 3-4 minutes. Drain; stir in the remaining ingredients.

15 oz corn (1 can)
1 tablespoon butter
1 garlic clove (minced or pressed)
1 teaspoon dried parsley (or 2 teaspoons fresh parsley)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Drain off half of the liquid from the corn.
  • Pour the remaining liquid and corn in a small saucepan over medium heat.
  • Add butter, garlic, parsley (if using dried), salt and pepper.
  • Simmer until the liquid is almost completely gone, about 5-7 minutes.
  • Taste and adjust seasonings (if you're using fresh parsley, add at this point).

8 to 10 ears of corn on the cob (yellow or white corn)
3 tablespoons unsalted butter
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the husks and the silk from the corn and cut the kernels off as close to the husk as possible without removing any of the husk. You should have about 7 cups of kernels.
  • Melt the butter in a large, heavy saute pan. Add the corn, salt, and pepper and saute uncovered on medium-low heat for 8 to 10 minutes, stirring occasionally, until all the starchiness in the corn is gone. Taste, for salt and pepper, and serve.

HERB CRUSTED SALMON AND ARTICHOKES SAUTEED IN HERB-INFUSED BUTTER



Herb Crusted Salmon and Artichokes Sauteed in Herb-Infused Butter image

2 pounds salmon fillet
Salt and pepper
1 shallot
4 cloves garlic
1 or 2 tablespoons fresh dill
1 or 2 tablespoons fresh lemon thyme
1 or 2 tablespoons fresh cilantro
Lemon zest
1 yellow chile
1 lemon, juiced
3 tablespoons olive oil
2 tablespoons olive oil
2 tablespoons butter
1/2 white onion, diced
4 cloves garlic
Chile flakes to taste
1 tablespoon fresh lemon thyme
1 tablespoon fresh chives
2 large globe artichokes halved, trimmed, choke removed
Water - enough to steam artichokes

Steps:

  • For the salmon: Oil the bottom of a casserole dish. Place salmon in dish and sprinkle with salt and pepper. Chop and combine the following in a bowl: shallots, garlic, herbs, lemon zest, chile, lemon juice, olive oil. Cover salmon with mixture, and place in a preheated 350 degree oven for 25 to 30 minutes or until a fork pulls out smoothly from thickest part of the salmon.
  • For the artichokes sauteed in herb infused butter: In a large skillet over medium high heat, add butter and oil. Saute onions, garlic, chile, herbs, reduce heat, making sure garlic doesn't burn. Once oil is infused, place artichoke, heart side down, into oil. Saute for a few minutes, and then add enough water to steam them. Cover and reduce heat. Steam artichokes gently for up to 2 hours, or until flesh removes from leaves easily. More water will need to be added to the pan periodically. Serve with lemon-garlic-butter for dipping.

1/2 yellow onion, chopped
1 red bell pepper, diced
1 tablespoon olive oil
1 zucchini, cubed
Kosher salt and freshly ground black pepper
2 ears fresh corn, shucked, or 1 cup frozen corn, thawed

Steps:

  • Cook the peppers and onions in olive oil in a large saute pan over medium heat until soft. Add the zucchini and season with salt and pepper. Meanwhile, lightly char the corn on a gas burner, using tongs to turn, 2 minutes. Let cool, and then cut the kernels off the cob. Add the corn kernels to the pan and cook the whole mixture 5 more minutes. Serve.

1 lb zucchini (Sliced Half Moon)
1 lb napa cabbage (Sliced Thin)
1 lb baby bok choy (Sliced Thin)
5 tablespoons seasoned rice vinegar
5 tablespoons sesame seed oil
1 tablespoon fresh garlic clove (Minced)
1 tablespoon fresh thyme (Chopped)
4 tablespoons fresh cilantro (Chopped)
1 teaspoon fine sea salt
1 teaspoon fresh ground black pepper
5 tablespoons toasted sesame seeds (White)

Steps:

  • Place vinegar and 3-tablespoons oil into a saucepan. Season with sea salt and fine black pepper to taste. Bring to a boil, reduce to simmer for 3-4 minutes or until sauce thickens and hold sauce warm.
  • Heat a large saute pan, add sesame seed oil, garlic and saute 1-2 minutes. Add corn, zucchini, cabbage, baby bok choy, thyme, cilantro and sauté 2-3 minutes. Add warm dressing and and toss. Reseason with salt and pepper to taste.
  • Serve vegetables on warm plates.
  • Garnish with Toasted White Sesame seeds.
