CREAMY HERBED CHICKEN AND BROCCOLI PASTA SALAD



Creamy Herbed Chicken and Broccoli Pasta Salad image

Stir grilled chicken into this creamy pasta salad with broccoli and roasted red pepper.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
1/2 tablespoon olive oil
One 8-ounce boneless skinless chicken breast
2 cups bite-sized broccoli florets
8 ounces dried penne
1/2 cup jarred roasted red peppers, drained and chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat a grill or grill pan over medium-high heat until hot; brush with the oil. Season the chicken breast with salt and pepper. Grill the chicken, turning once, until well-marked and just cooked through, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Meanwhile, cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Transfer the broccoli to a colander with a slotted spoon and run under cold water to stop the cooking process. Add the broccoli to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the chicken and red peppers to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

6 cups loosely packed arugula
1/2 cup shredded Asiago cheese
1/4 cup finely chopped red onion

Steps:

3/4 pound fusilli lunghi pasta
1/4 cup vegetable oil
1 onion, chopped
3/4 pound ground chicken
1 cup shelled walnuts
1/3 cup minced fresh parsley
1 tablespoon paprika
1/2 cup plain, non-fat yogurt
Salt and freshly ground pepper to taste

Steps:

  • Bring a large pot of salted water to a boil, add pasta, and bring the water back to a boil and cook for 8 to 10 minutes until tender, but still firm to the bite. In a skillet heat oil, add onions and cook for 2 minutes. Stir in chicken, walnuts, parsley and paprika and cook until heated through and chicken is cooked. Now remove skillet from heat and stir in yogurt. Season to taste with salt and freshly ground pepper. Drain, pat dry and transfer pasta to a serving dish. Add sauce and toss to combine. Serve immediately.

1 teaspoon olive oil
2 tablespoons onions, finely chopped
1 carrot, diced small
3 boneless chicken breasts, cut 1/2 in cubes
1/2 teaspoon basil
1/2 teaspoon oregano
1/8 teaspoon thyme
1/8 teaspoon pepper
1 1/2 cups broccoli florets, small
12 ounces evaporated skim milk
9 ounces fresh angel hair pasta
3/4 cup parmesan cheese

Steps:

  • Heat oil in large nonstick skillet. Add onion and carrot and saute over med heat until onion is soft, not brown, about 5 minutes. Add some water if it seems dry.
  • Add diced chicken to pan and saute just until no longer pink, about 5 minutes. Sprinkle with basil, oregano, thyme and pepper. Add broccoli, cover and steam for 5 minutes. Stir in milk and warm but do not boil.
  • Meanwhile, boil water for pasta and cook according to pkg. directions; drain well. Stir pasta into sauce mix then add cheese.
  • Cover pan for 3-5 minutes or until sauce has thickened slightly. Serve immediately.

1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1 env. (0.75 oz.) GOOD SEASONS Garlic & Herb Dressing Mix
1/4 cup olive oil, divided
1 small zucchini, cut lengthwise in half, then crosswise into 1/4-inch-thick slices
1 cup cherry tomatoes, halved
1/2 cup thinly sliced red onions
1/4 cup KRAFT Grated Parmesan Cheese

  • Cook pasta as directed on package, omitting salt.

1 pound uncooked linguine
2 teaspoons vegetable oil
1 ½ cups fresh sliced mushrooms
½ cup chopped onion
1 clove garlic, minced
1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
½ teaspoon salt
½ teaspoon dried basil
¼ teaspoon ground black pepper
2 cups chopped tomatoes
¼ cup grated Parmesan cheese

Steps:

  • Cook pasta in about 4 quarts of boiling salted water until al dente. Drain.
  • Meanwhile, heat oil in a large nonstick skillet over medium high heat until hot. Add mushrooms, onions, and garlic; saute 2 minutes. Add chicken, salt, basil, and pepper; saute 5 minutes, or until chicken is done. Add chopped tomato, and saute an additional 2 minutes.

2 cloves garlic, minced
one medium onion, finely chopped
3 tablespoons chopped fresh Italian parsley
3 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
3 tablespoons lemon juice
3 tablespoons toasted pine nuts
1 teaspoon ground cinnamon
20 grape or cherry tomatoes, halved
2 boneless, skinless chicken breasts
1/3 cup grated parmigiano reggiano
1/3 cup grated pecorino romano
salt and freshly ground pepper to taste
1 pound bow tie pasta

Steps:

  • Cook pasta according to package directions. Heat 2 tablespoons of olive oil in a large saute pan. Season chicken breasts with salt and pepper and saute over medium heat until cooked through, about 5 minutes on each side. Remove chicken to a plate and tent to keep warm. Add remainder of olive oil to the same pan. Add onion and saute onion until translucent, about 5 minutes. Add garlic and saute 1-2 minutes. Add remaining ingredients except for chicken and cheeses. Mix well, and heat through, 2-3 minutes. Season with salt and pepper. Toss with hot pasta and cheeses. Transfer pasta mixture to platter individual serving plates. Slice chicken into 1/2 inch strips and arrange on top of pasta. Garnish with parsley sprigs and a little more grated cheese, if desired.

I found this recipe many years ago in a Cooking Light magazine and it is my husband's favorite pasta dish. It's quick and easy, low cal and low fat too. We are garlic lovers and usually add 3 cloves of garlic to the dish. A green salad and french bread make a super meal. Hope you enjoy it as much as we do!
