5 large potatoes, peeled and thinly sliced
¾ cup chopped onion
3 tablespoons butter
¼ cup all-purpose flour
1 ¾ cups low-sodium chicken broth
2 tablespoons mayonnaise
2 cloves garlic, minced
¾ teaspoon salt
¼ teaspoon dried parsley
¼ teaspoon poultry seasoning
⅛ teaspoon ground black pepper
¼ cup chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 2 1/2-quart baking dish.
  • Layer potatoes and onion in prepared baking dish.
  • Melt butter in a saucepan over medium heat; stir in flour until smooth. Gradually add broth, mayonnaise, garlic, salt, parsley, poultry seasoning, and pepper; cook and stir until thick and bubbly, about 2 minutes. Pour mayonnaise mixture over potatoes and onion. Cover baking dish with aluminum foil.
  • Bake in preheated oven until potatoes are tender, about 1 hour 45 minutes. Remove foil and continue to bake until golden brown, about 15 minutes more. Sprinkle with chives to serve.

I clipped this recipe from our local newspaper quite some time ago and I have been making it ever since. It goes great with Baked Ham but try it with any other meat that strikes your fancy.

2 tablespoons butter
2 tablespoons all-purpose flour
2 1/2 cups milk
4 ounces herbed cream cheese
3/4 cup grated swiss cheese (grated)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper
1 pinch nutmeg
1 1/2 lbs baking potatoes, peeled,cut into 1/4 inch slices (about 5 med)
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350F degrees.
  • Butter 9-inch casserole dish.
  • In medium saucepan, melt butter.
  • Whisk in flour.
  • Cook 2 or 3 minutes at medium heat without browning, stirring constantly.
  • Gradually whisk in milk.
  • Bring to a boil.
  • Reduce heat.
  • Simmer gently 5 minutes.
  • Add cream cheese, swiss cheese, salt, pepper and nutmeg.
  • Stir until cheese melts.
  • Layer potatoes and butter sauce alternately in buttered dish, ending with sauce.
  • Sprinkle with Parmesan.
  • Bake 1 hour and 20 minutes or until potatoes are tender.
  • Let stand 5 to 10 minutes before serving.

I got this recipe from Veganomicon. I play around with the seasonings sometimes depending on the mood I'm in, but this is a great side dish for any meal!

Number Of Ingredients 12

2 lbs potatoes, sliced into 1/8 in. slices
3/4 cup vegetable broth
1/2 cup soymilk
1 tablespoon olive oil
3 garlic cloves, minced
3 tablespoons flour
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon dried rosemary
1/4 teaspoon paprika
black pepper
salt

Steps:

  • Preheat oven to 400°F; lightly grease a 9x13 glass dish.
  • Layer potatoes allowing them to slightly overlap.
  • Pour most of the vegetable broth over the potatoes.
  • Pour the soy milk and drizzle olive oil over potatoes.
  • Scatter minced garlic over everything and then sprinkle 2 tbsp of flour over them.
  • Drizzle with remaining vegetable broth to wet, then sprinkle with the last of the flour and spices.
  • Cover loosely with aluminum foil and bake for 35 minutes.
  • Uncover and bake for an additional 15 minutes.
