Pan-Roasted Fish Fillets With Herb Butter image

A blast of heat in a cast-iron pan and a basting of golden butter does wonders for plain fish fillets. This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

2 5- to 6-ounce fish fillets, like black bass, haddock, fluke, striped bass, tilefish, snapper or salmon, 1/2- to 1-inch thick
Salt and ground black pepper
3 tablespoons grapeseed or canola oil
2 tablespoons unsalted butter
2 sprigs fresh thyme, tarragon, chives or another herb
1 tablespoon chopped flat-leaf parsley, optional
Lemon wedges

Steps:

  • Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
  • Heat a heavy 10-inch nonstick or cast-iron skillet over high heat. When the pan is hot, add the oil. Place the fillets in the pan, skin side down (if applicable), laying them down away from your body. If fillets have skin, press down gently with a spatula for about 20 seconds to prevent curling.
  • Lower heat to medium and let sizzle until fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and add butter and thyme to pan. Tilt pan slightly to let the melted butter pool at one end. Use a spoon to baste the fish with the pooled butter. Continue basting until golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of your fish. Serve immediately with chopped parsley (if using) and lemon wedges.

1 cup butter, softened
1/3 cup mixed dried herbs of your choice (chives, thyme, basil, dill weed)
2 tablespoons grated lemon zest
2 tablespoons grated orange zest
2 tablespoons lemon juice
2 tablespoons orange juice
4 teaspoons confectioners' sugar
1/2 teaspoon salt
1 pound orange roughy, cod or haddock fillet

Steps:

  • Preheat oven to 375°. In a small bowl, combine first eight ingredients; beat until blended. Shape half of the butter mixture into a log; wrap in plastic and freeze. Place remaining mixture in a microwave-safe bowl; heat 1-2 minutes or until melted., Place fish fillets in an ungreased 13x9-in. baking dish. Drizzle with melted butter mixture. Bake, uncovered, 10-15 minutes or until fish flakes easily with a fork. Cut butter log into slices; serve with fish.

Lemon Herb Fish Fillets image

I adapted this simple recipe from Sara Moulton. Please note that the herbs and salt are divided - part for the fish and part for the sauce. You can use dried or fresh herbs, and you can use any light fish. The dried herbs I use are Herbes de Provence (a blend of thyme, marjoram, rosemary, basil, fennel, sage, and lavender) I'm sure various combinations will work. Or you can use 1/2 TBS each fresh chopped herbs: chives, chervil, parsley and tarragon from the original recipe.

16 ounces sole fillets
4 tablespoons flour
1 tablespoon dried herbs, divided (or 2 TBS fresh)
1/2 teaspoon salt, divided
1/2 teaspoon pepper
1 tablespoon butter
1/4 cup butter, cut into pieces
1 1/2 teaspoons fresh lemon juice

Steps:

  • Combine flour, half the herbs, and half the salt.
  • Season the fish with additional salt and pepper, then dredge in flour mixture to coat, shaking off the excess.
  • Heat 1 TBS butter in a large skillet over moderately high heat and cook fish 3 minutes on each side. Remove from pan.
  • Reduce heat to moderately low and add butter pieces and simmer until a light golden brown, about 5 minutes.
  • Remove skillet from heat and stir in lemon juice, remaining herbs, salt and pepper to taste.
  • Pour over fish fillets.

This is my favourite recipe for oven baked crusted fish fillets. I never really measured amounts, so the ratio herbs-parmesan-nuts as well as the total amount is an educated guess. I've so far used all kinds of nut mixes, you can even add in some ground sesame seeds. It's great with salad, but also with spinach, and I've also made it on the side of oven baked vegetables.

4 large fish fillets (codfish or other white fish)
3/4 cup(s) ground parmesan or pecorino cheese
1 cup(s) chopped fresh herbs (parsley, chive, dill, basil etc.)
1/2 cup(s) mixed ground nuts (walnuts, pecans, hazelnuts, macadamias, almonds, whatever floats our boat)
1 dash(es) salt
pepper, to taste
2 tablespoon(s) olive oil
1 lemon, juice of
1 tablespoon(s) butter

Steps:

  • Preheat oven to 220°C (425°F) and grease a baking dish which is large enough for the four fillets, then pour the lemon juice over the fillets and let them sit while preparing the crust
  • In a bowl, combine chopped herbs, nuts, parmesan and olive oil, a dash of salt and pepper to taste. Mix well with a fork and add more oil if needed until you have kind of a paste.
  • Pat the fillets dry, lightly salt them (skip that if you want less salt) and place them in the greased dish, they should not overlap each other!
  • Distribute the paste over the fillets until they are completely covered
  • Bake for about 10 minutes, the shortly remove to place some butter flakes on top of the crust. Put back into the oven and bake for additional 10-15 minutes
  • Serve with a large bowl of salad and enjoy

1/2 cup panko bread crumbs
1/4 cup freshly chopped parsley
2 tablespoon chopped basil, tarragon, or chives
4 small garlic cloves, finely chopped
1 teaspoon red pepper flakes
1/4 cup extra-virgin olive oil, plus more for the baking sheet
4 6oz pieces of tilapia, sole, or fluke

Steps:

  • Heat the oven to 450 degrees, Places the fish in an oiled rimmed baking sheet. Combine the bread crumbs, herbs, garlic, and red pepper flakes, in a small bowl. Brush each fish with olive oil, then season with salt and pepper. Add the oil to the bread-crumb mixture and stir to combine. Spoon, the bread-crumb mixture on top of the fish fillets to coat. Bake until bread crumbs are browned and fish is opaque, 5 to 7 minutes. Serve immediately

1 lb fish fillet (any type)
1/4 cup butter (melted)
2 teaspoons orange zest
2 tablespoons orange juice
1 tablespoon fresh chervil
1 tablespoon fresh parsley
1 teaspoon fresh thyme
1/2 teaspoon salt
1 dash nutmeg
1 orange

Steps:

  • In a mixing bowl combine melted butter, orange zest, orange juice, salt and nutmeg. Finely chop chervil, parsley and thyme and add to mixture.
  • Whisk to combine.
  • Slice fillets into four 1/4lb portions (if required) and place into a ziplok bag. Add half of the butter/herb mixture. Let rest for 10 minutes. Reserve remaining half of herb/butter mixture for dipping or dressing cooked fillets.
  • Slice orange into 12 thin slices. Place 8 slices in a shallow baking dish. (Two slices per fillet.).
  • Remove fillets from bag and position on top of orange slices. Pour remaining liquid from bag over fish.
  • Preheat oven to 400 deg F. and bake for 10 minutes for each 1 inch thickness of fish. (four 1" thick pieces = 40 min approx.).
  • Arrange a bed of micro greens on serving dish and place fillet on top. Compliment with a serving of wild rice drizzled with reserved herb/butter and garnish with shards of orange zest, and sprig of parsley.
  • Place an orange slice on each plate for appearance, and your done.
  • As an option, serve reserved herb/butter in a small side dish for dipping.
