Steps:

  • Stir together first five ingredients.
  • Brush tenderloin with olive oil and roll in the crumb mixture until completely covered.
  • Roast at 425° for about 25 minutes or until meat thermometer reads 160.
  • Rest 10 minutes before slicing.

2 pork tenderloins (about 3/4 lb each)
1 cup soft bread crumbs (about 1 1/2 slices bread)
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh or 1/2 teaspoon dried thyme leaves
1 tablespoon olive or vegetable oil
1/2 teaspoon salt
1/2 teaspoon fennel seed
1/4 teaspoon coarsely ground pepper
2 cloves garlic, finely chopped

Steps:

  • Heat oven to 450°F. Spray shallow roasting pan and rack with cooking spray. Place pork tenderloins on rack in pan.
  • In small bowl, mix remaining ingredients. Spoon herb mixture evenly over pork. Insert ovenproof meat thermometer so tip is in the thickest part of pork. Cover pork loosely with foil.
  • Bake 20 minutes; remove foil. Bake uncovered 10 to 15 minutes longer or until thermometer reads 155°F. Cover pork loosely with foil and let stand 10 to 15 minutes or until thermometer reads 160°F. (Temperature will continue to rise about 5°F, and pork will be easier to carve.)

1 (2 -3 lb) boneless pork tenderloin (fat left on)
2 tablespoons extra virgin olive oil
2 garlic cloves (minced)
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 cup Dijon mustard
1/2 tablespoon salt
1/8 cup dry white wine
1/4 cup chicken stock
fresh ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Place pork tenderloin, fat side up, on a rack in a roasting pan.
  • Pour olive oil, chicken stock and wine over the pork tenderloin.
  • Brush both sides of pork tenderloin with Dijon mustard and place on rack in roasting pan with fat side up.
  • Combine the rest of the seasonings in a small bowl and sprinkle over the pork tenderloin.
  • Roast pork tenderloin, uncovered, for 15 minutes, and then reduce the heat to 375 degrees, and roast for an additional 45 minutes.
  • Test for doneness using an instant-read thermometer. When the internal temperature reaches 135-140 degrees, remove the roast from the oven. Allow it to sit for about 15 minutes before carving, as it continues to cook while resting.
  • You can whisk a little flour into the pan juices to make a gravy.

My husband created this recipe combining several he had seen online. This was delicious. The 8 month-old baby loved hers pureed with some squash. I estimated the time, but am not sure.

3 -4 lbs pork tenderloin (1 or 2 pieces)
herbs
4 tablespoons olive oil
6 garlic cloves
1 tablespoon kosher salt
1 teaspoon dried thyme (2 if fresh)
1 teaspoon dried basil (2 if fresh)
1 teaspoon dried rosemary (2 if fresh)
1/8 teaspoon pepper
prepared stuffing
8 ounces cream cheese
4 ounces goat cheese
1 (10 ounce) package frozen chopped spinach
5 pieces bacon

Steps:

  • 1. Cook bacon until crisp. Once cooked & cool, chop finely.
  • 2. Thaw and drain spinach.
  • 3. In a medium metal bowl on very low heat, combine cream cheese, goat cheese, spinach, & bacon. The heat allows easier mixing.
  • 4. Butterfly tenderloin(s).
  • 5. Tenderize tenderloin with mallet.
  • 6. Place stuffing in tenderloin & tie with kitchen twine.
  • 7. Combine rub mixture ingredients and massage onto outside of tenderloin(s).
  • 8. Roast tenderloin(s) at 475 deg F for 30 minutes.
  • 9. Continue roasting at 400 deg F for 45-60 min or until pork reaches internal temp of 165 deg F.
  • 10. Remove and let cool for 20 minutes while pork continues to cook.

1/2 cup brown sugar, firmly packed
1 1/2 tablespoons herbes de provence
1 1/2 teaspoons ground coriander
1 teaspoon salt
1/4-1/2 teaspoon pepper
1 1/2 lbs pork tenderloin

Steps:

  • Combine the brown sugar, herbes de Provence, coriander, salt and pepper in a small bowl.
  • Rub this mixture evenly onto the tenderloins and place into a slow cooker.
  • Set on low and cook for 4-6 hours or until internal temperature of 145 degrees F is reached.
  • Removed from slow cooker and let rest 10 minutes before slicing.
  • Also removed juices from slow cooker and let cool slightly, they will thicken up like a syrup.

1/4 cup chopped fresh parsley
3 tablespoons grated fresh Romano cheese
2 teaspoons chopped fresh thyme
1 (1-pound) pork tenderloin, trimmed
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons Dijon mustard
1/2 teaspoon fennel seeds, crushed
1 garlic clove, minced
Cooking spray

Steps:

  • Preheat oven to 450°. Place slice of bread in a food processor, and pulse 10 times or until coarse crumbs measure 1/4 cup. Combine the breadcrumbs, 1/4 cup chopped parsley, cheese, and 2 teaspoons thyme in a shallow dish. Sprinkle pork with salt and pepper. Combine Dijon mustard, fennel seeds, and garlic in a small bowl. Rub pork with mustard mixture, and dredge in breadcrumb mixture. Place the pork on a jelly-roll pan coated with cooking spray. 3 T olive oil
1 T kosher salt
3 T chopped fresh thyme
1 1/2 pounds pork tenderloins
2 T chopped fresh parsley
Garnish: fresh herb sprigs

Steps:

  • Peel a 1 inch strip around center of each potato. Place potatoes in a large bowl. Add butter and next 3 ingredients, tossing gently. Place potatoes on a lightly greased rack in a broiler pan. Bake at 425 degrees for 20 minutes; remove from oven. Stir together breadcrumbs and next 5 ingredients. Moisten tenderloins with water; press crumb mixture over tenderloins, and place on rack with potatoes. Bake at 425 degrees for 25 more minutes until potaotes are tender, and a meat thermometer inserted into thickest portion of tenderloins registers 160 degrees. Sprinkly potatoes with parsley and slice tenderloins. Garnish, if desired.

1 large pork tenderloin (about 1 1/4 pounds), trimmed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 bunch scallions, finely chopped
3 tablespoons finely chopped fresh parsley, plus more for topping
3 tablespoons finely chopped fresh dill
2 stalks celery, thinly sliced
4 cloves garlic, minced
1 cup converted rice
1 14-ounce can no-salt-added diced tomatoes
3 tablespoons grated parmesan cheese, plus more for topping

Steps:

  • Preheat the broiler and line a baking sheet with foil. Pat the pork dry, brush with 1 tablespoon olive oil and season with salt and pepper. Toss half each of the scallions, parsley and dill in a small bowl; rub all over the pork. Transfer to the baking sheet and set aside.
  • Heat the remaining 1 tablespoon olive oil in a large Dutch oven or pot over medium-high heat. Add the remaining scallions, the celery, garlic and rice. Cook, stirring, until the vegetables are tender, about 2 minutes. Add the tomatoes, 2 cups water and 1 teaspoon salt. Bring to a boil, then reduce the heat to medium low; cover and gently simmer until the rice is tender, about 20 minutes.
  • Meanwhile, broil the pork, turning once, until lightly browned and a thermometer inserted into the center registers 145 degrees F, 16 to 20 minutes. Let rest 5 minutes.
  • Stir the parmesan and remaining parsley and dill into the rice; season with salt and pepper. Slice the pork and serve with the rice. Top with more parmesan and parsley.

1/2 cup fresh oregano
1/2 cup fresh rosemary
1/2 cup fresh thyme
6 large garlic cloves
1 1/2 tbsp coarse ground sea salt
1/2 tsp lemon pepper
2 tbsp fresh ground peppercorn medley
3-4 tbsp olive oil
all purpose flour
1 cup worcestershire
2 cup low sodium soy sauce
one whole pork tenderloin

Steps:

  • Start by marnating pork in soy and worcestershire. I will usually chop up a garlic clove or two to go in there as well. Then cut up you herbs. After getting those chopped finely, slice the garlic. After slicing in wafer-shaped thin pieces, proceed to chop those as well. Put herbs, garlic, spices, and olive oil in a bowl and mix. I have never measured exactly how much oil, so add until you see everything coated, but not drenched. Put in fridge and chill. Not you guys, the herbs: ) After marinating 4-5 hours, remove pork from sauce and discard. Drench the tenderloin in flour until evenly coated, and pack the herb mixture around tenderloin until evenly coated and chill. I grill this, so I have no baking prep. I start a medium size fire, charcoal of course, and grill it, making sure to turn every 5-6 minutes to keep from blackening. Total time 20-26 minutes. Often serve with fresh steamed broccoli and a rice side. Enjoy!

Herb Mix:
1/2 C Parsley
3 Tbsp Paprika
1 Tbsp Garlic Powder
2 Tbsp Basil
2 Tbsp Kosher Salt
1 Tbsp Pepper
1 Tbsp Oregano
1 Tbsp Fennel Seed
1/2 tsp Thyme
Water
2-4 Lbs of unseasoned Pork Tenderloin

Steps:

  • Mix all of the seasonings into a bowl. Dried herbs work well. If you have access to fresh feel free to try it out. As I usually make this in winter and have a great stock of spices from Penzeys, I use dried. Slowly add water to the seasonings to make a paste. It should be thick. Place pork tenderloins in a baking dish (I usually use a 9X13 casserole ) Rub the paste on to cover the top and sides of the pork. It is easiest to spread this on with your fingers. Let the pork sit for about 20 minutes to baste in the seasonings. Bake in a 325º oven for 30-45 minutes. Pork should cook to 145º. If ends cook faster than the middle, cover them with foil and continue baking until the thickest part measures 145º. Let pork rest about 5 minutes before slicing.
