- In a bowl add butter, sour cream, and cream cheese. Add the garlic and herbs and mix together well. Season, to taste, with salt and pepper. Place in refrigerator and allow to chill.
HERB AND LEMON GOAT CHEESE SPREAD

- Place goat cheese in small bowl. Mix thyme, lemon peel and garlic in another small bowl; season with ground black pepper. Mix half of thyme mixture into goat cheese. Add olive oil to remaining half of thyme mixture. Form cheese into 2 1/2-inch round; flatten slightly. Place in center of plate. Spoon oil-thyme mixture over top of cheese. Surround cheese with baguette slices and serve.
GARLIC-HERB CHEESE SPREAD
This is quite close to the Philadelphia whipped garlic and herb cream cheese, but I like it better (and I can make it at 3am when I want some instead of having to run to the store).

ALMOND 'FETA CHEESE' SPREAD WITH HERB OIL (VEGAN)
From the Fab Five list in the April 2009 issue of Vegetarian Times. I never thought I'd have enough time to make vegan "cheese," but because this was one of the editors' picks I gave it a shot, and I'm so glad I did! Though it's called "feta cheese," in the title, it really is a creamy spread. I told my DH that it was an "almond spread" and he loved it! Asked what kind of cheese I used in it, and was surprised to learn there was none. The recipe is really easy, but takes lots of waiting time (not included in the times). I'm listing it exactly like in the magazine. But for the oil topping at the end, I think 1/4 cup oil is too much. Personally, I'm cutting it back to 2 tablespoons next time. Enjoy! Edited to add: The original recipe in the magazine says to bake it 200F for 40 minutes, but as several reviewers noted here (and I agree) it's better in a hotter oven. Try 400F and watch for it to brown. Baking is only needed to turn it from creamy to crumbly, so it's completely up to you.

- Place almonds in medium bowl and cover with 3 inches of water. Let soak 24 hours. Drain and rinse.
- Puree almonds, lemon juice, 3 T olive oil, garlic, salt and 1/2 cup water in blender or food processor for 6 minutes or until really creamy.
- Place a triple layer of cheesecloth in strainer and spoon almond mixture onto cheesecloth. Bring sides together twist into an orange-sized ball and secure with a twist tie. Chill for 12 hours.
- Line baking sheet with parchment and transfer almond ball from cheesecloth. Shape to look like a 6" round of brie (about 3/4" thick). (Note, I just put it into a pretty pottery bowl and baked it. Then I could pour the oil on top and serve it. No parchment needed.).
- Bake 40 minutes or until top is slightly firm. Cool. Then chill.
- Combine 1/4 cup olive oil with herbs and heat over medium low heat until heated through but not simmering. Cool to room temperature and drizzle over almond spread just before serving.
- Spread on crusty bread or crakers. You'll love it!

- 1. SPREAD: Combine cottage cheese, blue cheese, garlic, and lemon juice in a food processor or blender. Process until smooth. Add green onions, basil, and almonds. Blend until mixed but still lumpy and not smooth. Pour dip into serving bowl and refrigerate until ready to serve.
- 2. BREAD: Spread melted butter on both sides of bread slices. Lay on a non-stick cooking sheet. Stir together garlic powder and salt. Sprinkle on one side of buttered bread. Turn on broiler and allow it to heat up a moment. Broil bread about 6-8 inches from heating element for 30-45 minutes per side. Serve warm with Blue Cheese Herb Spread on the side.

GREEK STYLE YOGURT HERB CHEESE SPREAD

- Combine all of the ingredients in a medium mixing bowl. Put 4 layers of cheesecloth in a fine mesh sieve set over a large bowl or plastic container. Add the yogurt and cover with the cheesecloth overhang. Put a small plate directly on the cheesecloth and top with a 16-ounce can. Refrigerate for 1 hour. The desired consistency is that of Greek yogurt or thick sour cream. Store in the refrigerator, in an airtight container, for up to 10 days.

- Remove lid from cream cheese and soften in microwave, about 20-30 seconds. Save the container.
- Put in medium mixing bowl and whisk in milk until creamy.
- Stir in the rest of the ingredients until well mixed, making sure to scrape any stray ingredients from side of bowl.
- Put mixture back in the container (if you bought a stick of cream cheese just use a tupperware container with lid). Close and refrigerate at least an hour to let harden and to let flavors soak in.
