IMPOSSIBLY EASY SHRIMP PIE

Steps:
- Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer shrimp, onions, basil and cheese in pie plate.
- In medium bowl, stir remaining ingredients until blended. Pour into pie plate.
- Bake 30 to 35 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving.

EZ SHRIMP PIE
A fast and easy recipe when you don't want to take the time to make homemade pie crust. You may use fresh or frozen shrimp, but parboil frozen shrimp before assembling. Pie may be made ahead and refrigerated until needed, then reheated. (9/15/07 Note: This recipe is over 20 years old and was made when my kids were little. Now I'd be more adventurous and use perhaps pepper jack shredded cheese or green chiles, or other add-ins,but this recipe pleased my family at the time. Of course, pinch the crescent rolls together when you put them in the pan, so they won't separate. Have fun experimenting with this easy and versatile dish.)

- Preheat oven to 350 dg.
- Line pie plate with crescent rolls, reserving unused dough.
- Saute green pepper, celery and onion in butter.
- Mix with remaining ingredients and salt and pepper to taste.
- Pour into pie shell.
- Piece any remaining dough over pie, then dot with butter.
- Bake for 40 minutes or until crust is brown.

- Preheat oven to 400 degrees F.
- In a large bowl combine green onions, basil, oregano, shrimp and cheese. Blend well.
- Add in the remaining ingredients and mix well.
- Spray a 8x8 glass baking dish with cooking spray and pour ingredients from the bowl into baking dish.
- Bake uncovered for 30-35 minutes.
- Wait a few minutes to cool before cutting.
- Serve with a salad if you so choose. Enjoy !

CHICKEN AND SHRIMP PIE
This is quite rich and lovely for entertaing. It can be made ahead and refrigerated 24 hours ahead. It may also be frozen. Thaw before baking. It goes well with a light salad such as Mandarin Salad.

Steps:
- Put chicken in a large pot with 8 C of water.
- Add pepper, parsley and vegetables.
- Bring to boil and simmer for 45 minutes or until tender.
- Let cool, discard skin and cut into bite-sized pieces.
- Strain stock and reserve 2 cups-save the rest for other uses.
- In small pot combine shrimp, wine and a pinch of salt.
- Cover and bring to boil; remove from heat.
- Drain, reserving 1/2 of cooking liquid.
- Sauce: In heavy saucepan melt butter.
- Whisk in flour and cook about 1 minute.
- Add reserved chicken stock and shrimp liquid.
- Bring to boil stirring and add 3/4 C of whipping cream sirring often for 5 minutes.
- Remove from heat.
- Whisk together egg yolks and remaining cream and add to mixture.
- Stir in parmesan.
- Season with pepper, nutmeg, and lemon juice Add parsley.
- Combine sauce with chicken and shrimp and mix lightly.
- Turn into 8 C dish sprayed with no-stick spray.
- Combine crumbs, 2 T parmesan, almonds and butter.
- Sprinkle over top.
- Bake in 400 oven or until golden and bubbling.

- Mix together first 5 ingredients, and place into 9" pie plate.
- Blend together last 5 ingredients in blender until smooth.
- Pour over mixture in pie plate and bake for 35-40 minutes.
BEAUFORT SHRIMP PIE

- Sauté the onion and bell pepper in butter until soft. In a casserole, make layers of the shrimp, breadcrumbs, and the onions and peppers. Beat together the milk, eggs, and salt and pepper to taste, and pour over the shrimp. Cut each strip of bacon into 4 pieces. Lay bacon on top of the casserole and bake at 325 degrees until the filling is set and the bacon is brown.
