CLASSIC GERMAN HEIDESAND COOKIES

Classic German Heidesand Cookies image

Delicious classic German Christmas cookies from the North: Heidesand. They melt in your mouth.... yummy!

Provided by Bake to the roots

Time 9h

Yield 25

Number Of Ingredients 13

170g Butter
170g Zucker
Prise Salz
1 TL Vanille Extrakt
250g Mehl (Type 550)
[/wc_tab]
[wc_tab title="English"]
(25-28 cookies)
6 oz. (170g) butter
6 oz. (170g) sugar
pinch of salt
1 tsp. vanilla extract
8.8 oz. (250g) all-purpose flour

Steps:

  • Add the butter to a small saucepan and heat up. Let boil (be careful, it will foam up a lot at the beginning) until it starts browning at the bottom of the saucepan and smells like nuts. Remove from the heat and pour into a heatproof bowl. Let cool down for about 50-60 minutes.
  • Add the melted butter to a large bowl and mix on high speed until light and fluffy. Add sugar, salt, and vanilla extract and mix in well. Add the flour gradually and fold in - the dough will look and feel like wet sand. Shape the dough into a log and wrap in plastic wrap. Place in the fridge overnight.
  • Preheat the oven to 340°F (170°C). Line a baking sheet with baking parchment and set aside. Take the dough out of the fridge and let it warm up a bit. Cut into (not too thick) slices and place on the baking sheet. Bake for 15-17 minutes. Take out of the oven, transfer to a wire rack and let cool down completely. Store in a tin box.

BETTY CROCKER'S SUGAR COOKIES

Betty Crocker's Sugar Cookies image

I have been making these cookies every year for Christmas since I was in high school!! I roll them really thin so they are crispy, not soft/chewy and only add sprinkles. This recipe is for a double batch, but can easily be divided. **Chilling dough not included in prep time**

GERMAN SAND COOKIES - HEIDESAND

German Sand Cookies - Heidesand image

This version contains nuts. Translated from "Back vergnuegen wie noch nie," one of my favorite German language cookbooks, acquired while living in Germany. German vanilla sugar comes in small paper packets and can be found in German markets - it is very fine & sparkly.

Provided by HeatherFeather

Categories     Dessert

Time 3h20m

Yield 70 cookies

Number Of Ingredients 5

250 g sweet unsalted butter, at room temperature
170 g granulated sugar, divided
125 g finely ground almonds or 125 g hazelnuts
375 g all-purpose flour
2 envelopes vanilla sugar (approx 2 tsp per envelope)

Steps:

  • Beat butter until light and fluffy using an electric mixer.
  • Measure out just 125 grams of the granulated sugar and add to the butter, mixing well.
  • Using a spoon, stir in the ground nuts, the flour, and 1 envelope of vanilla sugar (if you use the mixer now, you may toughen the dough).
  • Form dough into two logs and wrap well in waxed paper; let chill until firm, at least 2 hours.
  • Preheat oven to 150 C.
  • Have ready baking sheets lined with parchment paper (or greased).
  • Slice off rounds of dough, about 1 cm thick, and place onto baking sheets.
  • Bake in the center of the oven approximately 20 minutes per batch (they will be fairly light in color when ready).
  • While the cookies are baking, mix together the remaining 45 grams of granulated sugar and the remaining envelope of vanilla sugar and place in a bowl.
  • When you pull the cookies out of the oven, give them a few seconds to cool enough to handle, then gently drop the warm cookies one at a time into the sugar mixture to coat, then let them cool completely.
  • They should be covered in the sugar mixture on all sides.
