700 g pivetti 00 rinzfornato flour or other fine bread or pizza flour
12 g salt
8 g instant yeast
490 g water
1 egg whisked with about 1 teaspoon water
Opt. poppy seeds, sesame seeds, or other topping if desired.

Steps:

  • 1. In a large bowl, mix dry ingredients. Stir in water with a spoon until a ragged mass forms and all lose flour is incorporated but don't worry too much about lumps -- similar to mixing biscuit dough. Cover with a damp tea towel and let sit at room temperature for 45 minutes.
  • 2. On a lightly oiled surface, do one stretch-and-fold, working in or discarding any remaining dry lumps of flour, return to bowl, cover and let sit 45 minutes.
  • 3. STRETCH-AND-FOLD INSTRUCTIONS: lightly oil a flat surface about 12" x 18" in area. Flop the dough out of the bowl and onto the oiled surface. Use your hands to stretch or gently press the dough into a rectangle. Fold the rectangle of dough in thirds as you would a piece of 8 1/2" x 11" paper to put in a business envelope. Then fold in thirds again the other way. Flop the resulting roll of dough back into the bowl. With each successive stretch-and-fold, the dough with develop more gluten and be harder to stretch.
  • 4. Do a second stretch-and-fold, return to bowl, cover and let sit 45 minutes.
  • 5. Do a third stretch-and-fold, oil the bowl and return the dough to it, cover and let sit 45 minutes.
  • 6. Divide into 12 equal pieces. (The scale can again be useful here.) Gently shape into balls and place on parchment paper lined baking sheets for eventual baking. Let rest another 20 minutes.
  • 7. Preheat the oven to 375F and make the egg wash by whisking the egg and 1 teaspoon of water together.
  • 8. Paint the rolls with an egg wash and optionally, sprinkle with poppy seeds, sesame seeds or other garnish. Wait 2 minutes and repeat egg wash and poppy seeds. Optionally, score a cross in the top with a very sharp knife for decoration.
  • 9. Bake for 35 minutes or until they are golden and the interior temperature is 200F. Flip upside down or place on a rack to cool thoroughly before eating.

2 eggs
1/2 cup soft butter
1 teaspoon salt
1/4 cup sugar
4 cups bread flour

Steps:

  • Add all ingredients to bread machine according to your manufacturer's directions.
  • Set for dough cycle.
  • When cycle is complete, remove dough and shape as desired.
  • Place on lightly greased baking sheet and cover with plastic wrap.
  • Let rise until doubled (this step is important - don't rush it).
  • Bake at 375° for 12 to 15 minutes or until golden brown.
  • To keep them soft, brush with melted butter immediately after removing from oven.

¼ cup white sugar, divided
2 ½ teaspoons dry yeast
¾ cup warm water
1 ½ teaspoons ground cinnamon
2 eggs
¾ cup applesauce
½ teaspoon salt
4 ½ cups all-purpose flour
2 tablespoons honey
½ cup raisins

Steps:

  • Stir 1 tablespoon of the sugar and the yeast into the warm water in a small bowl. The water should be no more than 100 degrees F (40 degrees C). Let stand for 5 minutes until the yeast softens and begins to form a creamy foam. Whisk together the cinnamon and 2 tablespoons sugar in a small bowl; set aside.
  • Beat together the eggs, applesauce, salt, and the remaining 1 tablespoon of sugar in a large bowl. Stir in the yeast mixture. Beat in half of the flour mixture until no dry spots remain. Stir in the remaining flour, a 1/2 cup at a time, mixing well after each addition to form a sticky dough. Turn it out onto a lightly floured surface and knead until fairly smooth but still sticky, about 8 minutes.
  • Lightly oil a large bowl, then place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) for 30 minutes. Grease a 9x13 inch baking pan.
  • Deflate the dough and turn it out onto a lightly floured surface. Roll the dough into a 16x20 inch rectangle. Spread the honey over the dough; sprinkle evenly with the cinnamon sugar and raisins. Beginning with the long side, roll the dough tightly into a log shape, and pinch to seal the seam. Cut into 12 equal size pieces. Place the rolls into the prepared pan cut side up. Cover the pan with a damp cloth and let rise until doubled in volume, about 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown, about 30 minutes.

2 packages (1/4 ounce each) active dry yeast
1/4 cup warm water (110° to 115°)
4 cups warm milk (110° to 115°)
1 cup sugar
1 cup shortening
7 to 7-1/2 cups all-purpose flour, divided
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Melted butter, optional

Steps:

  • In a bowl, dissolve yeast in water. Add milk, sugar, shortening and 4 cups flour; beat until smooth. Cover and let rise in a warm place for 2 hours. Add baking powder, baking soda, salt and enough remaining flour to form a soft, slightly sticky dough. Cover and refrigerate until ready to use. Turn onto a heavily floured surface; pat to 1/2-in. thickness. Cut with a biscuit cutter or drop by 1/4 cupfuls onto a greased baking sheets. Cover and let rise until nearly doubled, about 30 minutes. bake at 350° for 10-15 minutes or until lightly browned. Brush tops with butter if desired. Dough may be refrigerated up to 3 days. Punch down each day.

6 egg whites
1 1/2 c butter (no substitutions!), softened
4 c powdered sugar
1 c honey
2 loaves frozen bread dough, or make your own favorite yeast roll recipe

Steps:

  • 1. If using frozen bread dough, thaw according to package directions. Cut each loaf into 12 pieces. If using your own dough recipe, divide into 24 pieces. Lightly butter (2) 9x13 baking dishes. with lightly floured hands, roll dough into "rope" shape, then coil into "snail" shape roll and place in the prepared baking pan. Repeat with each piece of dough, placing 12 rolls into each pan. Cover with plastic wrap that has been sprayed with nonstick pan coating spray. Let rise in a warm place until rolls have doubled in size.
  • 2. While the rolls are raising, prepare the honey batter. In a glass or stainless steel bowl that is completely clean and residue free, beat egg whites until stiff peaks form. Gradually add powdered sugar until all is incorporated. Blend in the softened butter until well combined, then blend in the honey. Preheat oven to 325 degrees, and space the racks evenly.
  • 3. When the rolls have fully risen, place a very generous dollop of batter on every roll, making sure that each one is covered well. Place the pands in the preheated oven and bake for 45 - 50 minutes until the tops are golden brown and the rolls are cooked through. Allow the rolls to cool slightly and serve warm. When serving use a good spatula that will go all the way under the roll and the gooey honey goodness that is underneath.

1 - 10 oz box frozen chopped spinach (thawed)
1 - 14 oz can(s) artichoke hearts (put them in a blender until they are creamy)
1 c parmesan cheese
1 c mozzarella cheese (shredded)
1 - 15 oz jar(s) alfredo sauce
2 tsp minced garlic
1 Tbsp butter (melted)
1 egg (beaten)
4 oz cream cheese (softened)
2 can(s) crescent rolls

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. Mix ingredients thoroughly (except butter & egg & saving a little mozarella cheese for the end) in a bowl.
  • 3. Open Crescent Rolls.
  • 4. Put 1 tsp or tbs of your mixture onto each piece of the dough & close each one.
  • 5. Spread a little of the egg over the edges of each roll to hold it together.
  • 6. Spread the remaining egg over each roll.
  • 7. Bake for 35 - 45 mins or until rolls are brown.
  • 8. When your rolls start to brown, spread butter on them & sprinkle a little Mozzarella Cheese over them.

1 TB yeast
1/4 cup warm water
1/2 tsp. sugar
1 cups warm milk
1/2 cup vegetable oil
1/2 cup sugar
1 tsp. salt
1 cup flour
2 eggs
3-4 cups flour

Steps:

  • Instructions Mix 1 TB yeast with ¼ cup warm water and ½ tsp. sugar. Let stand until bubbly. In a large bowl mix 1 cup warm milk, ½ cup oil, ½ cup sugar, 1 tsp. salt with a wooden spoon. Add 1 cups of flour to mixture, and mix well. Add 2 eggs and beat until smooth (mix vigorously be hand). Add yeast mixture and mix vigorously until smooth. Add 3-4 cups flour to the yeast mixture. Dough should be very sticky. Pour the dough into a large bowl. Cover with a tea towel and let rise for a few hours until it has doubled in size. Once the dough has doubled in size punch down and divide in half. Roll dough onto a floured surface making a circle about 12 inches round. Dough should be about ⅜" thick. Brush dough with melted butter. Cut circles with a pizza cutter into 12 pieces (like a pizza). Roll from rounded edge to the point to make a crescent roll. Place into a greased pan (we use an 11 x16 metal pan and do 3 across and 8 rows down). Cover dough with a tea towel and let rise for a few hours until it doubles in size. Bake at 375 until light lightly browned, which is about 15-20 minutes. NOTE: Touch rolls to see if they bounce back - if they do not, bake a little longer). Brushed with melted butter right while warm. ENJOY!

1 package large flour tortilla
2 (10 ounce) packages frozen chopped spinach
1 cup mayonnaise
1 (16 ounce) container sour cream
1 (16 ounce) package ranch dressing mix
1/2 cup dry bacon bits (i use Bacos)

Steps:

  • Defrost the 2 packages of spinach.
  • Drain any excess water from defrosted spinach.
  • In a large mixing bowl, combine the mayonnaise, sour cream, powder ranch dressing, and bacon bits and stir thoroughly.
  • After mixing ingredients, add the spinach and continue to stir until all of the spinach is completely mixed with the other ingredients.
  • Lay out uncooked flour tortilla and spread mixture over flour tortilla (DO NOT put too much otherwise when rolling the tortilla the excess mixture will spill out!) Roll the tortilla tightly.
  • Continue process until all tortillas are used.
  • Set for 1 hour in the refrigerator.
  • Take out the rolls and cut them into smaller segments.
  • Ready to serve!

2 teaspoons active dry yeast
1 tablespoon dark brown sugar
1/4 cup lukewarm water
3/4 cup milk
3/4 cup rolled oats
1/2 cup butter cut into cubes
2 tablespoons molasses
2 teaspoons salt
1 egg
2 1/2-3 cups flour (unbleached all-purpose or bread flour)
2-3 tablespoons melted butter for brushing tops of rolls

Steps:

  • Dissolve yeast in 1/4 cup lukewarm water with a pinch of sugar. Let stand until bubbly. If it doesn't get bubbly, throw it out and get some new yeast. Scald milk then add it to the butter in your mixing bowl. When butter has melted, add brown sugar, rolled oats, molasses, and salt. Blend thoroughly and cool to lukewarm. Add egg and mix well. Add the yeast and mix to incorporate it. Then mix in 2 ½ cups of the flour. Add what you need to of the remaining ½ cup of flour until the dough loses its sheen. Let rest for 10 minutes. Scrape the dough out of the mixing bowl and put it in a greased bowl. Turn to coat and cover with plastic wrap and refrigerate for a minimum of two hours. It can sit overnight as well. It doesn't rise a lot. Turn out the chilled dough on a floured work surface and knead or fold and turn the dough slightly. Cut dough into 12 balls. Press each ball into a flat rectangle with your fingers, then roll up and tuck ends under. Place seam-side down in a well-buttered 9 inch round pan. Brush all over with ½ of melted butter and sprinkle with a little of the rolled oats. Let rise until doubled in size in a warm place, about two hours. Preheat oven to 350° F. Bake for 35-40 minutes or until rolls are nicely browned and sound hollow when you tap their tops. The internal temperature should be 190 degrees. Remove from the pans and brush generously with remaining melted butter. Let cool on a rack for 5-10 minutes.
