Oma always makes this for her grand kids after she picks through her garden. Probably not good for the thighs but Oma's cooking is always good for the taste buds.

1 ¼ cups white sugar
1 teaspoon baking soda
½ teaspoon salt
2 cups all-purpose flour
2 eggs, beaten
1 cup sour cream
3 cups diced rhubarb
1 cup white sugar
¼ cup butter, softened
¼ cup all-purpose flour
ground cinnamon, for dusting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
  • In a large bowl, stir together 1 1/4 cups sugar, baking soda, salt and 2 cups flour. Stir in the eggs and sour cream until smooth, then fold in the rhubarb. Pour into the prepared dish and spread evenly. In a smaller bowl, stir together the remaining 1 cup sugar and butter until smooth. Stir in 1/4 cup flour until the mixture is crumbly. Sprinkle the mixture on top of the cake then dust lightly with cinnamon.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes.

1/3 cup chopped nuts ((I prefer pecans or walnuts.))
1/2 cup unsalted butter
1 1/2 cups sugar
1 large egg
1 teaspoon baking soda
1 cup buttermilk
1/2 teaspoon salt
2 cups + 1 tablespoon flour
3 cups chopped rhubarb
whipped cream, (optional)

Steps:

2 tablespoons butter, softened
1 cup white sugar
1 egg
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
2 cups diced fresh rhubarb
2 tablespoons melted butter
¼ cup all-purpose flour
¼ cup white sugar
½ cup butter
¾ cup brown sugar
½ cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square cake pan.
  • Beat 2 tablespoons softened butter and 1 cup white sugar with an electric mixer in a large bowl until light and fluffy. Beat egg into the butter mixture.
  • Mix 2 cups flour, baking powder, baking soda, and salt in a bowl; add flour mixture alternately with buttermilk, to the butter mixture, stirring just to combine into a batter. Fold rhubarb into the batter just until incorporated; pour into prepared pan.
  • Stir 2 tablespoons melted butter, 1/4 cup flour, and 1/4 cup white sugar together in a bowl until evenly moist; sprinkle over the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
  • Stir 1/2 cup butter, brown sugar, cream, and vanilla together in a saucepan over medium heat; bring to a boil and cook for 1 minute. Serve sauce immediately with the warm cake.

Number Of Ingredients 12

2 tablespoons sugar
1 1/3 cups sugar
1/2 teaspoon ground cinnamon
5 tablespoons canola oil
3 tablespoons unsweetened applesauce
1/2 cup egg substitute
1 cup sour milk (see note)
1 teaspoon baking soda
2 cups flour
1 tablespoon flour
3 cups rhubarb, diced
3 tablespoons finely chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 13 X 9 inch pan (glass is best) with non-stick cooking spray.
  • In a small bowl, combine 2 TBSP sugar and 1/2 tsp cinnamon.
  • Set aside.
  • In a large bowl, combine remaining 1 1/3 cup sugar, oil, applesauce, egg substitute, and sour milk.
  • In separate bowl, combine baking soda and flour.
  • Stir flour mixture into wet ingredients.
  • Stir in rhubarb.
  • Pour into prepared pan.
  • Sprinkle top of cake with walnuts (optional) and cinnamon/sugar mixture.
  • Bake in preheated oven for 40 minutes, or until top of cake springs back lightly when touched.
  • NOTE: To make sour milk, place one TBSP vinegar or lemon juice in a liquid measuring cup.
  • Add enough milk to equal one cup.
  • Let mixture sit several minutes to allow milk to curdle.
  • Buttermilk may be used in place of sour milk.
