ROSIE'S PINEAPPLE CREAM PIE

Rosie was my grandmother. It was a long time favorite we thought was lost for the past 20 years. Found her recipe by accident last year. What a way to remember her and it's now a favorite of the next generation. I made up the prep/cook time since I never timed it. NOTE: Do not use fresh pineapple in this recipe. Fresh pineapple has much more acid than canned pineapple and the pie filling will not stay firm. Hope you enjoy the pie (It's still my favorite!)

Number Of Ingredients 7

2 cups milk
6 tablespoons flour
1 pinch salt
3 egg yolks
3/4 cup sugar
1 (20 ounce) can crushed pineapple, drained
1 baked pie shell (8 or 9 inch)

Steps:

  • Stir the milk, flour, salt, egg yolks and sugar on the stove until it thickens.
  • Take off heat and add pineapple.
  • Put in pie crust and let cool in refrigerator.
  • Serve with whipped topping.

PINEAPPLE NUT REFRIGERATOR PIE

Super fast and easy and the recipe makes 2 pies. This is a great recipe if you need a last minute take along item to a pot luck or family gathering! Got this recipe from a co-worker in the 1980's!

Number Of Ingredients 6

1 can(s) sweetened condensed milk - can use fat free
1/3 c lemon juice
1 can(s) 20 oz crushed pineapple well drained
1 1/8 c chopped pecans
8 oz cool whip - soft - can use fat free
2 pkg prepared graham cracker pie crust - can use low fat

Steps:

  • 1. Mix first 5 ingredients well. Easiest is to put pineapple in a large bowl, then sweetened condensed milk, then lemon juice, then fold in pecans and Cool Whip.
  • 2. Pour into two graham cracker crusts and put in refrigerator to chill. Chill about 2 hours before serving.
  • 3. Note that I put that it serves 16 - that is if they stop at one piece!! If you want larger slices, cut the pies into 6 pieces instead of 8 and then it serves 12.

1/4 cup lemon juice
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
Optional: Chopped toasted macadamia nuts and additional crushed pineapple

Steps:

  • Combine milk, pineapple and lemon juice; fold in whipped topping. Pour into prepared crust. Refrigerate until serving. If desired, serve with toasted macadamia nuts and additional crushed pineapple.

1 can(s) 14oz sweetened condensed milk
1 9 oz prepared whipped topping
4 Tbsp lemon juice
16 oz can(s) cruhed pineapple (drained)
chopped walnuts for topping

  • 1. Beat together condensed milk,whipped topping and lemon juice. fold in the drained crushed pineapple.

1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 (8 ounce) can crushed pineapple, slightly drained
1 cup flaked coconut
1 cup chopped pecans
1 (8 ounce) container of cool whipped topping, thawed (OR 2 cups whipping cream, whipped, and sweetened with 3-4 tbsp sugar)
1 graham cracker pie crust or 1 chocolate cookie pie crust

Steps:

  • In a med-large bowl, cream together the softened cream cheese and sugar with an electric mixer on high speed for 3-4 minutes.
  • Stir in the slightly drained crushed pineapple, coconut and pecans; mix well.
  • Carefully fold in half of the whipped topping, until filling is blended well.
  • Reserve the remaining half for top.
  • Spoon the filling into prepared crust.
  • Chill for several hours before serving.
  • NOTE: A alternative, is to fold in the full amount (2 cups) of whipped topping into the filling; this works quite well, and produces an even lighter texture of pie, but, allow more chilling time before serving for this method.
  • ALSO: this pie has a better texture, and holds up better and longer if prepared with Cool Whip topping.
