1 tablespoon olive oil
1 lb lean ground turkey
salt, to taste
Tasty Hearty Spice Blend, one pouch
½ medium white onion
8 corn tortillas
1 cup salsa
1 cup crumbled cotija cheese
1 lime, sliced into wedges

Steps:

  • Heat the olive oil in a large skillet over medium heat. When the oil is shimmering, add the onion and cook until starting to soften and caramelize, about 10 minutes.
  • Increase the heat to medium-high and add the ground turkey. Season with the salt and hearty spice blend. Cook, stirring occasionally, allowing the turkey to brown slightly. Once the turkey is cooked through, about 8 minutes, remove the pan from the heat.
  • Heat the tortillas in a clean skillet over medium heat or directly over a medium-low flame on a gas stove. Wrap the hot tortillas in a clean kitchen towel to keep warm as you heat the remaining tortillas.
  • Assemble the tacos: Fill the hot tortillas with the turkey filling and garnish with 1 tablespoon salsa and 1 tablespoon cotija cheese. Serve with lime wedges on the side.

2/3 cup uncooked brown rice
1-1/3 cups plus 4 to 5 tablespoons water, divided
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons cold butter
FILLING:
1/2 pound lean ground beef (90% lean)
1/2 cup chopped onion
1/2 cup chopped green pepper
2 garlic cloves, minced
1 cup water
1 envelope taco seasoning
2 large eggs, lightly beaten
1/4 cup minced fresh cilantro
1 cup shredded reduced-fat cheddar cheese
2 cups shredded lettuce
2 medium tomatoes, chopped
3/4 cup salsa
1/2 cup fat-free sour cream

Steps:

  • In a small saucepan, bring rice and 1-1/3 cups water to a boil. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender and water is absorbed. , Meanwhile, in a large bowl, combine flour, baking powder and salt; cut in butter until crumbly. Stir in enough remaining water to form a soft dough. On a floured surface, roll dough into a 12x8-in. rectangle. Press into a 13x9-in. baking dish coated with cooking spray. Bake at 400° for 13-15 minutes or until very lightly browned., For filling, in a large nonstick skillet, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Add water, taco seasoning and cooked rice. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until thickened. Remove from the heat. Stir in eggs and cilantro. Spread over crust. , Cover and bake for 15-17 minutes or until filling is set. Cut into squares. Top with cheese, lettuce and tomatoes. Serve with salsa and sour cream.

1 (8 ounce) can tomato sauce
8 fluid ounces water
1 (4 ounce) can diced green chile peppers
½ onion, chopped
1 (1.25 ounce) package taco seasoning mix
1 clove garlic, minced
12 (6 inch) corn tortillas
1 cup shredded lettuce, or to taste
½ cup Cheddar cheese, or to taste
½ cup diced tomatoes, or to taste
¼ cup chopped green onion, or to taste
¼ cup chopped cilantro, or to taste
2 tablespoons sliced olives, or to taste

Steps:

  • Preheat a large skillet over medium-high heat. Add turkey; cook and stir until browned, about 5 minutes. Add tomato sauce, water, green chile peppers, onion, taco seasoning, and garlic; simmer, stirring occasionally, until thickened, about 30 minutes.

2 tablespoons olive oil
1 small yellow onion, chopped (1 cup)
1 pound ground turkey (dark and light meat)
1 tablespoon chili powder
1 teaspoon coarse salt
1 tablespoon tomato paste
1 cup chicken broth or water
6 ounces cheddar cheese, shredded
1/2 head iceberg lettuce, shredded
1 medium red tomato, cored and chopped
10 hard taco shells
Sour cream, for garnish
Lucinda's Pico de Gallo, for garnish
Avocado, for garnish

Steps:

  • Heat oil in a large saute pan over medium-high heat. When oil shimmers, add onion and cook until onion becomes translucent. Add turkey and cook, breaking up meat with the side of a spoon, just until meat is cooked through, 3 to 4 minutes.
  • Stir in chili powder, salt, and tomato paste and cook 1 minute. Add broth and simmer, stirring occasionally, until liquid becomes thick and clings to meat.
