Hearty Lentil Soup With Spinach - Vegetarian Version image

I usually make this with bacon, but I can't eat meat on my current restricted diet, so I've tossed that smoky slab and added some other stuff! I've also almost doubled the original amounts of original recipe - I can't make small batches of soup! I pack it up in plastic containers and take them to work. *Please note that preparation time may vary. I'm a slow chopper and I accounted for that in the given time below!

1/4 cup olive oil (or thereabouts)
1 1/2 large onions, chopped fine
4 medium carrots, peeled and chopped medium
4 celery ribs, chopped medium
6 garlic cloves
2 (14 1/2 ounce) cans diced tomatoes
1 large bay leaf
2 teaspoons minced fresh thyme leaves
2 cups lentils
1/2 teaspoon salt
ground black pepper
8 cups vegetable broth
3 cups water
8 ounces spinach, baby whole or 8 ounces regular spinach, chopped

Steps:

  • Heat olive oil at medium-high heat.
  • Add onions, carrots and celery; cook, stirring occasionally, until vegetables begin to soften (4-8 minutes).
  • Add garlic and cook until fragrant (30 seconds).
  • Stir in tomatoes, bay leaf and thyme; cook until fragrant (30 seconds).
  • Stir in lentils, salt and pepper to taste.
  • Cover, reduce heat to medium-low and cook until vegetables are softened and lentils have darkened *7-10 minutes).
  • Uncover, add vegetable broth and water.
  • Bring to a boil, cover partially, and reduce heat to low.
  • Simmer until lentils are tender but not mushy (30-35 minutes).
  • Discard bay leaf.
  • Puree 3 cups soup in blender until smooth, then return puree to pot.
  • Stir in spinach until wilted.
  • Serve! (or place in plastic containers for work!).

2 cups uncooked brown rice
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
8 ounces (4 cups) fresh shiitake mushrooms, stems removed, caps thinly sliced
6 cups reduced-sodium chicken or vegetable broth
1/2 teaspoon dried rosemary, crumbled
1 can (15 ounces) chickpeas, drained and rinsed
2 bags (5 ounces each) baby spinach leaves
Coarse salt and ground pepper, to taste
1/2 cup grated Parmesan cheese

Steps:

  • In a large saucepan, bring 4 cups of water to a rapid boil. Stir in brown rice and return to a boil; reduce heat to a simmer and cover. Cook, without lifting lid, for 30 minutes.
  • Meanwhile, in a large saucepan or Dutch oven, heat oil over medium heat. Add onion and cook, stirring frequently, until tender, about 5 minutes. Add garlic and mushrooms and cook, stirring occasionally, until mushrooms are tender, about 5 minutes. Add broth and rosemary; bring to a boil. Cover and remove from heat.

2 garlic cloves, coarsely chopped
1 1/2 lbs 93% lean ground beef, 7% fat
1/2 cup Italian breadcrumbs
1 eggs, beaten or 1/4 cup egg substitute
2 tablespoons sun-dried tomato pesto
1/2 teaspoon kosher salt, divided
1/2 teaspoon pepper, divided
1 tablespoon canola oil
8 ounces assorted fresh vegetables, diced (onions, celery and carrots)
3 cups fresh spinach leaves
2 (16 ounce) cans cannellini beans, drained
1 (32 ounce) box unsalted chicken stock
1/2 cup parmesan cheese, grated

Steps:

  • Chop garlic.
  • Combine ground beef, bread crumbs, egg, tomato pesto, 1/4 teaspoon salt, and 1/4 teaspoon pepper until blended.
  • Shape into 1-inch meatballs (about 25-30); wash hands.
  • Preheat large stockpot on medium-high 2-3 minutes.
  • Place oil in pan; add meatballs (in batches).
  • Cook and turn 6 to 8 minutes or until browned.
  • Remove meatballs from pan and set aside.
  • Add trinity mix (onion, celery, carrots) and garlic to pan; cook and stir 2 to 3 minutes or until onions soften.
  • Add spinach; cook 2 to 3 minutes or until spinach begins to wilt.
  • Reduce heat to medium-low; stir in cannellini beans, chicken stock, meatballs and remaining 1/4 teaspoon each salt and pepper.
  • Simmer 5 to 7 minutes or until meatballs are 160 degrees Fahrenheit and soup is hot.
  • Top with Parmesan cheese and serve.

Ladle some of the soup into bowls in the kitchen, and place the remaining soup in a tureen for seconds. Decorate the surfaces of both before serving.

2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 medium onions, finely chopped
2 garlic cloves, minced
2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
3 1/2 cups homemade or low-sodium store-bought chicken stock
2 pounds fresh English peas, shelled (about 2 cups)
1 pound spinach, tough stems discarded (about 12 cups packed leaves)
2 teaspoons fresh lemon juice
Heavy cream, for decorating

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add onions, garlic, 1 teaspoon salt, and a 1/4 teaspoon pepper. Cook, stirring, 3 to 5 minutes. Add stock, and bring to a boil.
  • Add peas, and return to a boil. Reduce heat, and simmer, stirring occasionally, until peas are tender and bright green, 2 to 3 minutes. Stir in spinach. Cover, and cook, stirring occasionally, until spinach has wilted, 2 to 3 minutes. Let cool slightly.
  • Working in batches, puree pea mixture in a blender, filling no more than halfway and adding up to 2 tablespoons water to each batch to achieve desired consistency. Stir in lemon juice, 1 teaspoon salt, and 1/4 teaspoon pepper. Ladle soup into bowls.
  • Fill a pastry or resealable plastic bag with cream. Snip off tip or corner of bag. Draw parallel horizontal lines across each serving of soup, spacing lines as desired.
  • Starting at bottom, drag the tip of a wooden skewer upward through the rows of cream. Starting at top and spacing as desired, drag skewer downward through rows of cream. Repeat, reversing direction every other line. Serve immediately.

1/2 lb. lean ground beef
1 onion, chopped, divided
3 cloves garlic, minced, divided
2 tsp. dried oregano leaves, divided
20 saltine crackers, finely crushed
1 egg, beaten
1 Tbsp. oil
2 cans (14 oz. each) reduced sodium beef broth
1 can (14-1/2 oz.) stewed tomatoes, undrained
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained

Steps:

  • Combine meat, 1/4 cup onions, 1/3 of garlic and 1/2 tsp. oregano in large bowl. Add cracker crumbs and egg; mix well. Shape into 1-inch balls.
  • Cook and stir remaining onions and garlic in hot oil in Dutch oven or large saucepan on medium-high heat 3 to 5 min. or until onions are tender. Add broth, tomatoes, spinach and remaining oregano; bring to boil. Add meatballs; cover. Simmer on low 20 to 25 min. or until meatballs are done.
  • Serve with additional saltines.

1/2 cup chopped onion
1/2 cup grated carrot
2 cups chopped fresh spinach
1 envelope knorr cream of spinach soup mix
2 1/2 cups milk
1/8 teaspoon fresh grated nutmeg
1/4 teaspoon fresh ground black pepper

Steps:

  • In a large saucepan, let the butter melt over medium heat.
  • Add in the onion, carrot, and spinach; cook and stir frequently for 3-4 minutes or until vegetables are softened.
  • Add the soup mix, then the milk; whisk until mixture is smooth.
  • Bring to a boil, add in nutmeg and pepper; lower heat to medium-low and simmer 5 minutes or so before serving.

20 units saltine crackers

1 tablespoons vegetable oil

Steps:

  • COMBINE meat, 1/4 cup of the onion, 1/3 of the garlic, 1/2 tsp. of the oregano in large bowl. Add cracker crumbs and egg; mix well. Shape into 1-inch balls; set aside.
  • COOK and stir remaining 3/4 cup onion and remaining garlic in hot oil in Dutch oven or large saucepan on medium-high heat 3 to 5 minutes or until onion is tender. Add broth, tomatoes with their liquid, spinach and the remaining oregano; bring to boil. Add meatballs. Reduce heat to low; cover. Simmer 20 to 25 minutes or until meatballs are cooked through.

8 oz shitake mushrooms sliced
6 c stock, vegetable or chicken

1 can(s) chick peas
10 oz spinach, fresh
salt and pepper
2 oz parmesan cheese, grated

Steps:

  • 1. In a large saucepan, bring the water to a rapid boil. Stir in brown rice and return to a boil; reduce heat to simmer. Cover and cook until rice is tender and has absorbed all the liquid, 30 to 40 minutes.
  • 2. Meanwhile, in a large saucepan or Dutch oven, heat oil over medium heat. Cook onions, stirring occasionally, until tender, about 5 minutes.
