HEARTY POTATO, BACON AND ONION SOUP
This soup is a favorite with my family, and is quick and easy.

Steps:
- In a large saucepan over medium high heat, saute the bacon for about 7 minutes, or until lightly browned. Reduce heat to medium, add the butter or margarine and onions and saute for about 5 minutes, or until onions are tender. Add the flour and stir well for one minute.
- Remove saucepan from heat and gradually add the water, stirring well. Return to stovetop, raising heat to high. Add the bouillon and potatoes, bring to a boil and then reduce heat to low. Simmer uncovered for about 10 minutes, or until potatoes are tender.
- In a small bowl, combine the egg yolks and the sour cream and mix together. Gradually add this mixture to the soup, stirring well. Heat through, but do not boil. Stir in the parsley just before serving.

HEARTY ONION SOUP GRATIN
There may be no better companion on a cold winter day thanthis comforting soup. The flavor depends on rich beef stock, so try making your own, or use best-quality store-bought stock. - Heat oil in a skillet over mediumheat. Cook onions untilsoft and translucent, about 8 minutes.Reduce heat to low. Addthyme, and cook, stirring occasionally,until onions are deepgolden brown, 35 to 40 minutes.Season with salt and pepper.
- Preheat broiler with rack about6 inches from heat source.Bring beef stock to a boil. Addcarrots and turnips. Reduceheat, and simmer, covered, untilvegetables are almost tender,about 5 minutes.
- Divide vegetables evenlyamong 4 ovenproof bowls usinga slotted spoon. Divide onionsamong bowls. Add 1 bay leaf toeach. Set bowls on a rimmedbaking sheet. Divide hot stockamong bowls.
- Top each with 1 slice of bread,then 2 slices of cheese. Broiluntil cheese is golden and bubbling,about 5 minutes. Transferto 4 serving bowls if desired.
HEARTY ONION SOUP
A full-meal soup as delicious as the restaurant classic. And a great way to use your leftover pot roast or oven-roasted beef and not waste the drippings. Its a meal in a bowl but a green salad and some hearty bread are welcome additions if you want them.

- Heat olive oil and butter together in a pan large enough to hold the onions and broth.
- Saute onions very gently in half olive oil and half butter until soft and golden but do not allow them to brown.
- Add beef and vegetables. Heat through.
- Add dripping and stock. Bring to boil and simmer 10 minutes.
- Divide into oven-proof bowls. Float the stale bread on top.
- Cover with the cheese and broil until the cheese bubbles and browns.

SWAGGY B'S HEARTY FRENCH ONION SOUP
This is my son's favorite soup. I've made it many different ways, but this rendition is his favorite. Serve topped with melted provolone cheese sprinkled with grated Parmesan over sliced baguette.

- Heat a large pot over medium-high heat; grease with cooking spray. Cook beef shanks until browned, 2 to 3 minutes per side. Transfer to a large plate.
- Melt butter in the same pot. Add yellow onions, white onions, and kosher salt; cook and stir until soft and lightly browned, about 15 minutes. Stir in garlic; cook until soft, about 5 minutes. Stir in flour until onions and garlic are coated. Add vegetable broth gradually, stirring until it is absorbed.
- Season soup with Worcestershire sauce, liquid smoke, salt, and pepper. Return beef shanks to the pot. Bring to a boil. Reduce heat and simmer, stirring occasionally, until beef falls off the bone, 3 to 4 hours.
- Transfer beef shanks to a cutting board with a slotted spoon. Shred beef and return to the pot. Discard bones.

- Saute onions in butter.
- Transfer onions to large saucepan. Add beef and chicken broths, coffee, salt, and pepper to taste.
- Simmer for several hours.
- Pour soup into individual oven-proof bowls.
- Top each bowl with croutons, then mozzarella cheese.
- Bake at 350 for 25 minute.
- *Note: To make croutons, slice day old French bread and broil for 3 to 4 minutes or until golden brown, turning each minute.
