CHEWY CHOCOLATE CHIP OATMEAL COOKIES

I modified Beatrice's Excellent Oatmeal cookies very slightly. I came up with something that my boyfriend went CRAZY over! I've never seen him enjoy cookies to that extent! He said I blew his mother's recipe away.

1 cup butter, softened
1 cup packed light brown sugar
½ cup white sugar
2 eggs
2 teaspoons vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
  • Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

While dabbing in the kitchen one day, my husband, Dale, came up with these hearty cookies. I begged him to make them again, but he hadn't written down the recipe. Ten batches later, he finally recaptured the wonderful flavor.

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups quick-cooking oats
1 package (11-1/2 ounces) milk chocolate chips
2 cups chopped walnuts
1-1/2 cups All-Bran cereal

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the remaining ingredients. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

1/2 cup butter or 1/2 cup margarine, softened
1/2 cup peanut butter
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar (white)
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup wheat bran (or 1 cup 100% Bran cereal)
1 1/2 cups quick-cooking rolled oats
1/2 cup crushed cereal (honey nut cheerios is a good choice) or 1/2 cup add more wheat bran
1/4 cup peanuts (optional)

Steps:

  • Cream butter, peanut butter and sugars until light and fluffy.
  • Beat in eggs and vanilla.
  • Combine flour, baking powder, baking soda and salt; blend into creamed mixture.
  • Stir in chocolate chips, cereal, bran, rolled oats and peanuts.
  • Preheat oven at 375 degrees.
  • Form small balls unto greased baking sheets (for chewy cookies leave in a ball, for crispier cookies flatten a bit).
  • Bake in oven for 8 to 10 minutes or until lightly browned.
  • Cool on racks.

1 large egg, room temperature
1 large egg yolk, room temperature
1-1/2 cups old-fashioned oats
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chunks
1 cup chopped dates
1/2 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and egg yolk. In another bowl, mix oats, flours, baking soda and salt; gradually beat into creamed mixture. Stir in remaining ingredients., Shape 1/4 cupfuls of dough into balls; flatten to 3/4-in. thickness. Place 2 in. apart on ungreased baking sheets., Bake 13-15 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool. Serve warm or at room temperature. To reheat, microwave each cookie on high for 15-20 seconds or just until warmed. Freeze option: Freeze unbaked cookies in a freezer container, separating layers with waxed paper. To use, place dough portions 2 in. apart on ungreased baking sheets; let stand at room temperature 30 minutes before baking. Bake as directed, increasing time by 1-2 minutes.
