Easy, delicious, hearty Italian soup.

Number Of Ingredients 10

1 pound bulk Italian sausage
½ cup chopped onion
1 clove garlic, minced, or more to taste
10 cups beef broth
3 (15 ounce) cans black beans, rinsed and drained
2 (15.5 ounce) cans butter beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes, undrained
1 ½ tablespoons minced fresh basil
1 ½ teaspoons chopped fresh oregano
2 tablespoons shredded Parmesan cheese, or more to taste

Steps:

  • Heat a large saucepan over medium-high heat. Cook and stir sausage, onion, and garlic in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add broth, black beans, butter beans, diced tomatoes, basil, and oregano; bring to a simmer. Cover and cook for at least 10 minutes.
  • Sprinkle each serving with Parmesan cheese.

This is simple fare that the whole family will enjoy. I make this, or a close rendition, and freeze in batches for my toddler's lunches. But it's also a nice option for those times when you don't have a lot of time or headspace, but want to cook something from scratch that's satisfying and tastes like it cooked for ages.

1 tablespoon olive oil
1 pound bulk mild Italian sausage
3 carrots, chopped
3 ribs celery, chopped
½ large red onion, chopped
1 tablespoon tomato paste
1 (14 ounce) can no-salt-added cannellini beans, undrained
2 medium russet potatoes, peeled and cubed
½ teaspoon dried thyme
½ teaspoon dried oregano
salt and ground black pepper to taste
water to cover

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add sausage and cook until browned, breaking apart with a wooden spoon. Stir in carrots, celery, and red onion; cook until softened, 5 to 10 minutes. Stir in tomato paste and cook until fragrant, about 1 minute. Pour in beans with their liquid.
  • Add potatoes, thyme, oregano, salt, and pepper to the saucepan. Pour in enough water to cover, about 1 1/2 cups. Bring to a boil. Reduce heat and simmer until potatoes are tender and soup thickens, about 20 minutes.

My brother-in-law loved this soup. He said it was the best soup he had ever had. Best compliment I have ever had! I recently found this recipe on the back of a PREMIUM saltine cracker box.

1 lb italian sausage, sliced
1 onion, chopped
2 clove garlic, minced
1 tsp olive oil
2 can(s) (14 oz. each) 25%-less-sodium chicken broth
1 c water
1 can(s) (15 oz.) cannellini beans, rinsed
1 can(s) (14.5 oz.) stewed tomatoes, undrained
1 c rotini pasta, uncooked
1 1/2 c baby spinach leaves
1/2 c 2% milk shredded mozzarella cheese
saltine crackers
1 Tbsp oregano
salt & pepper, to taste

Steps:

  • 1. COOK sausage, onions and garlic in oil in a large saucepan 10 min., stirring frequently.
  • 2. ADD next four ingredients and seasonings. Bring to a boil. Stir in Pasta; cook 8 min. or until tender. Remove from heat.
  • 3. STIR in spinach; cover. Let stand 5 min. Top with cheese. Serve with crackers.

  • Cook - sausage, onions and garlic in oil in saucepan 10 minutes, stirring frequently ADD - next 4 ingredients. Bring to boil. Stir in pasta, cook 8 min. or until tender. remove from heat. STIR IN - spinach and cover. Let stand 5 min., top with cheese and serve with crackers.

1 onion, chopped
2 cloves garlic, minced
2 cans (14 oz. each) fat-free reduced-sodium chicken broth
1-1/2 cups water
1 can (15 oz.) cannellini beans, rinsed
1 can (14.5 oz.) stewed tomatoes, undrained
1 cup rotini pasta, uncooked
2 cups tightly packed torn stemmed kale
2/3 cup KRAFT Shredded Mozzarella Cheese

Steps:

  • Cook sausage and onions in large skillet on medium heat 8 min. or until sausage is evenly browned, stirring frequently and adding garlic for the last minute.
  • Add broth, water, beans and tomatoes; mix well. Bring to boil, stirring occasionally. Add pasta; stir. Return to boil; simmer on medium-low heat 10 min. or until pasta is tender, stirring occasionally. Remove from heat.
  • Stir in kale; cover. Let stand 5 min. or until kale is slightly wilted. Serve topped with cheese.
