BUTTERMILK GRANOLA BREAD

Buttermilk, honey and granola create a memorable loaf of homemade bread.

3 to 3 1/4 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons salt
1 package regular active or fast-acting dry yeast
1/2 cup water
1/2 cup buttermilk
2 tablespoons honey
2 tablespoons butter or margarine
2/3 cup Cascadian Farm® organic oats & honey granola or cinnamon raisin granola

Steps:

  • In large bowl, mix 1 cup of the flour, the salt and yeast. In 1-quart saucepan, heat water, buttermilk, honey and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in granola. Stir in enough remaining flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
  • Grease large cookie sheet with shortening or cooking spray. Shape dough into round loaf, about 5 inches in diameter and 3 inches high. Place on cookie sheet. Cover; let rise in warm place 45 to 60 minutes or until about 7 1/2 inches in diameter.
  • Heat oven to 400°F. Make 2 long cuts in top of dough to resemble one large "+" sign with sharp knife. Brush or spray top of dough with water. Bake 20 to 25 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

20 Minute Honey Granola - Easy image

This is a super easy granola recipe. It isn't overly sweet and is a real crowd-pleaser. It also makes your house smell fabulous for hours after you bake it. I normally add about 2 Tbsp. wheat germ and a tsp. brewers yeast to my dry ingredients - for nutritional value.

4 cups rolled oats
1/2 teaspoon salt
1 cup almonds (or other nuts, chopped)
1 tablespoon ground cinnamon
2 tablespoons ground flax seeds (optional)
1/3 cup oil (coconut oil works really well)
2/3 cup honey
1 teaspoon vanilla extract

Steps:

  • Heat oven to 300 degrees.
  • Combine oats, nuts, salt, cinnamon and flax in a large bowl and set aside.
  • Combine oil, honey and vanilla in another, smaller bowl.
  • Mix wet ingredients into dry - you may need to use your hands.
  • Then spread the mixture onto two cookie sheets lined with foil or parchment.
  • Bake 10 minutes. Then remove from oven and stir.
  • Bake an additional 10 minutes or until slightly golden.
  • Remove from oven and allow to cool completely.
  • When cooled, transfer into an airtight container for storage.

HONEY, GRANOLA, & YOGURT BREAD

I got this recipe with the booklet that came with my Breadman Machine. It makes a moist, slightly dense, chewy loaf that I really enjoy. I sometimes add in some raisins, depending on how many raisins were in the granola. The cooking time will depend on the cycle of your bread machine.

1 1/2 tablespoons canola oil
3 tablespoons honey
6 ounces plain low-fat yogurt
1/2 cup granola cereal
2 1/2 cups all-purpose flour
1/4 cup whole wheat flour
2 tablespoons powdered milk
1 1/2 teaspoons salt
2 1/2 teaspoons active dry yeast

Steps:

  • This is a Bread Machine Recipe: Put ingredients into Bread Pan in the order appropriate for your machine.
  • Bake on whole wheat cycle (if available), light setting.
