HEALTHY TASTY TURKEY MEATLOAF

Healthy Tasty Turkey Meatloaf image

Super tasty, high in protien & fiber and super lowfat. The kids will clean their plates! I'm posting the "almost no-fat" version of this dish. You may substitute 2 real eggs for the egg substitute, use "lean"rather than "super lean" turkey and add a little olive oil for flavor if you want, it will still be very low in fat. This recipe sometimes has a bit of trouble binding - if someone has any ideas to help this to bind better let me know - thanks and enjoy!

Time 1h20m

Number Of Ingredients 15

1/4 cup quinoa
1/2 cup water
1 teaspoon olive oil
1 small onion, chopped
1 large clove garlic, chopped
1 (20 ounce) package ground turkey
1 tablespoon tomato paste
1 tablespoon hot pepper sauce
2 tablespoons worcestershire sauce

1 teaspoon ground black pepper
2 tablespoons brown sugar
2 teaspoons worcestershire sauce
1 teaspoon water

Steps:

  • 1. Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
  • 2. Preheat an oven to 350 degrees F (175 degrees C).
  • 3. Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool.
  • 4. Stir the turkey, cooked quinoa, onions, tomato paste, hot sauce, 2 tablespoons Worcestershire, egg, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil lined baking sheet. Combine the brown sugar, 2 teaspoons Worcestershire, and 1 teaspoon water in a small bowl. Rub the paste over the top of the meatloaf.
  • 5. Bake in the preheated oven until no longer pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let the meatloaf cool for 10 minutes before slicing and serving.

HEALTHY TURKEY VEGGIE MEATLOAF

HEALTHY TURKEY VEGGIE MEATLOAF image

Categories     turkey     Bake     Quick & Easy     Dinner     Healthy

Number Of Ingredients 16

1 1/2 lbs of 99% fat free ground turkey breast
1/2 cup of shredded zucchini
1 small onion, chopped
1 bag of fresh baby spinach
1 large egg, beaten
1/2 cup of seasoned bread crumbs
2 tablespoons Olive Oil
2 tablespoons Ketchup
2 tablespoons Sriracha
Adobo Seasoning
1 Tablespoon Crushed Red Pepper Flakes
Salt
Black Pepper
Cooking Spray
Loaf Pan
Optional: Cut up pieces of raw red pepper

Steps:

  • Heat your oven to 375 degrees. Spray a loaf pan with non-stick cooking spray. Chop one small onion and sauté it with one tablespoon of olive oil. Once the onions are soft, add the baby spinach. You may need to add an additional half a tablespoon-tablespoon of olive oil to prevent burning and sticking. Once the spinach is wilted, allow the mixture to cool. Add one slightly beaten egg to your turkey meat. Throw in the bread crumbs (You can omit the bread crumbs for carb free cooking-it doesn't alter the recipe too much-it's mearely a binding agent.) and add ketchup and Sriracha. If you prefer something more flavorful, add more of both. Sprinkle on the crushed red pepper flakes, and add Adobo, salt, and pepper to your desired taste. If adding red peppers, do so now. Once the spinach/onion mixture is cool enough to touch, add to the turkey mix. Blend together all ingredients with your hands until they are combined. Make sure to not overly blend the mix as it can become tough. Add the mixture to your sprayed loaf pan. Cook the meat loaf for 45 minutes. After 45 minutes, crank up the heat to 400 and cook until desired crispiness.
