Steps:
- Cover filling ingredients with boiling water, cover and let stand for 5 minutes.
- Combine all dry ingredients
- Combine wet ingredients.
- Add-in wet ingredients and mix
- Spread base into floured square pan.
- Stir filling until smooth - consistency should be like that of applesauce.
- Spread filling over base.
- Cover with low fat granola or rolled oats.
- Bake in preheated 350 degree oven for 18-20 minutes.

Steps:
- Preheat oven to 350ºF.
- Coat an 8-inch square baking pan with cooking spray.
- Whisk together flour, baking powder, sugar, oats, apricots and sunflower seeds.
- Whisk together margarine and egg substitute.
- Quickly mix together wet and dry ingredients.
- Spoon into prepared pan and smooth top.
- Bake until firm, about 20 minutes.
- Cool completely before cutting into 8 rectangles.
- Yields 1 bar per serving.

Healthy refined sugar free, low fat oat bars. Cheap and easy.

- mix dry ingredients and add a glug of hot water (maybe a couple of tbs)
- add in honey and nut butter, mix all together really well
- mixture should be sticky but quite lumpy, stiff and fairly dry, not like a cake batter but like a solid lumpy and flakey ball, almost more like a dough
- press down hard into silicon baking tin
- cook for 20-30 mins in 200 degree oven (preheat or not is fine). Take out and press down hard ten mins in with back of a plastic ladle or similar. press down again on removal. To ensure it all holds. When it comes out of oven it should all hold together fairly well but can still be softish, or can be left in longer or left in switched off oven for crispy Cool in tin but cut before it completely cools

I came up with this when I wanted a quick, healthy breakfast that I could grab while I was taking care of a newborn. I had to omit dairy, eggs, and wheat from my diet due to her allergies. This recipe is the result of a desire to have my baked goods and make baby happy too.

- Preheat oven to 325 degrees F (165 degrees C). Spray miniature loaf pans with cooking spray.
- Mix oats and salt together in a bowl. Pour 1 cup boiling water over oats and stir until oats are evenly moistened.
- Stir 1/4 cup water and chia seeds together in a bowl until seeds start to gelatinize, 2 to 3 minutes.
- Stir honey, canola oil, agave nectar, vanilla extract, lemon extract, and lemon zest into oat mixture. Stir chia seed mixture into oat mixture. Beat oat-chia seed mixture using an electric mixer on low until batter is well combined. Spread batter into the prepared loaf pans, pressing with a spatula to evenly distribute.
- Bake in the preheated oven until sides are slightly browned and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool on a wire rack, 3 to 5 minutes; cut into slices.
