1 cup boiling water
2 pkg. (3 oz. each) JELL-O Orange Flavor Gelatin
2-1/2 cups sparkling water
2 cans (11 oz. each) mandarin oranges, drained
1 cup thawed COOL WHIP LITE Whipped Topping
1/4 tsp. ground red pepper (cayenne)

Steps:

  • Add boiling water to gelatin mixes in large bowl; stir 3 min. until completely dissolved. Stir in sparkling water; pour into 8 champagne glasses or dessert dishes. Refrigerate 30 min. or until thickened.
  • Top with oranges. Refrigerate 2 hours or until firm.
  • Combine COOL WHIP and red pepper; spoon over desserts just before serving.

1 (18.25 ounce) package yellow cake mix
4 eggs
1 cup vegetable oil
1 (11 ounce) can mandarin orange segments
1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
  • Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.

Except for the light whipped topping and the juice from the pineapple, this is almost sugar free. I got this from a Weight Watchers recipe swap. My kids inhale this stuff when I make it which is fine with me since they're getting some fruit and dairy in every serving, but they just think it's a sweet treat! (WW Points per serving = 1)

1 (3 ounce) box sugar-free orange gelatin
1 cup boiling water
1/2 cup cold water
1 cup crushed pineapple in juice
1 cup mandarin orange, drained
1 cup light whipped topping, thawed if frozen
1 cup low-fat plain yogurt

Steps:

  • In square 8x8 dish, combine gelatin and boiling water and stir until gelatin is dissolved.
  • Add cold water, pineapple and Mandarin oranges.
  • Chill until almost set.
  • Combine whipped topping and yogurt. Fold into gelatin mixture.
  • Chill for at least three hours, cut into 8 equal squares and serve.

1 (14 ounce) can sweetened condensed milk
2 lemons, juice of
1 (6 ounce) can mandarin oranges in juice
6 vanilla wafers
1 cup whipped cream

Steps:

  • In a bowl, blend the first 3 ingredients by hand.
  • In a buttered 8 inch square oven-prrof glass dish, place a layer of vanilla wafers.
  • Cover the wafers with the orange mixture.
  • Add a second layer of vanilla wafers.
  • Cover with whipped cream.
  • Sprinkle crushed vanilla wafer crumbs over the top.
  • Cover and refrigerate for 24 hours.
  • Serve!
