As most know Cinnamon is good for us. They are selling Cinnamon Capsules now for a variety of ailments. Cinnamon is one of my favorite spices, I love the smell and taste of it. I'm not a big coffee drinker so this Hot Cinnamon Tea is much more tasty to me. I like being able to make it ahead of time if necessary.

Number Of Ingredients 6

6 c filtered water, if available
6 stick cinnamon
6 regular tea bags
1/3 c packed brown sugar (or more to taste)
3 c regular milk, 1%, 2% or whole
a spoon full of whipped cream w/ a sprinkle of nutmeg to each cup(optional)

Steps:

  • 1. Place the 6 cups of water in sauce pan with the 6 cinnamon sticks. Bring to a boil, reduce heat, then simmer 30 minutes, leaving cinnamon sticks in water.
  • 2. Add the 6 tea bags to cinnamon water, simmer an additional 2-3 minutes. Remove cinnamon sticks and tea bags, discard.
  • 3. Add the brown sugar to hot cinnamon water, stir until all the sugar has dissolved. This won't take over 3 minutes on simmer.
  • 4. Stir milk in to cinnamon water, heat until pipping hot. To each cup, add a spoon of whipped cream on top with a few sprinkles of nutmeg if you like.

Add a cinnamon stick to an assam leaf tea to make this warming cinnamon-spiced brew that's great on cold days. Sweeten with a dollop of honey to taste

Yield Makes one 500-600ml pot (serves 1-2)

Number Of Ingredients 3

1 cinnamon stick
2 tsp assam leaf tea
honey to taste

Steps:

  • Fill a large teapot with just-boiled water to warm it and set aside. Heat 600ml water in a pan with a cinnamon stick until boiling.
  • Turn off the heat, add the assam tea leaves to the hot cinnamon water and leave to steep for 1-2 mins. Remove the cinnamon stick.
  • Empty the teapot and strain the tea into it. Serve with honey to sweeten to taste.
