- Preheat oven to 400 degrees. Lightly spray 12 cup muffin tin.
- In a large bowl combine flours, wheat germ, brown sugar, baking powder, salt, cinnamon and nutmeg, stirring well.
- In a small bowl mash banana and add remaining ingredients except blueberries. Whisk until well blended. Make a well in the center of the flour mixture. Pour the banana mixture into the well and stir just till moist. Mixture will be lumpy. Gently fold in blueberries. Pour batter into muffin tins and bake for 15 minutes or until toothpick comes out clean.

Muffins store great in a covered container in the refrigerator - just warm in the microwave. I have been experimenting with cooking low fat and low cholesterol recipes for my husband. Bake in a pre-heated 400 degree oven.

Steps:
- Pre-heat oven to 400 degrees Fahrenheit.
- Prepare standard sized muffin tins by spraying with a low fat cooking spray or line with muffin cups.
- In one large bowl, combine first five ingredients, mixing all dry ingredients well.
- Stir in raisins.
- In a separate bowl combine the following wet ingredients: egg substitute, applesauce, milk. Stir well.
- Pour wet ingredients into dry ingredients and stir until moistened. Do not over-mix muffin dough.
- Spoon into prepared muffin tins.
- Bake in a pre-heated 400 degree oven for 18-20 minutes or until muffins are lightly browned on top and a toothpick inserted into the center of a muffin is dry when removed.

- Preheat oven to 400 Degrees.
- Peel and chop Golden Delicious Apple into Pieces.
- Squirt with juice of a half a lemon, to keep color.
- *Topping* Mix together: 2 Tablespoons Dark Brown Sugar, 1/4 Cup Pecans, and 1/2 Teaspoon Cinnamon. Set Aside.
- *Muffin Batter* Whisk together Dry ingredients: All ingredients from Whole Wheat Flour through Salt. Set Aside.
- Prepare Wet ingredients in a seperate bowl with a beater or in a mixer by adding in each ingredient one at a time as you beat or mix. Add in remaining ingredients from 3/4 Cup Brown Sugar through Vanilla Extract.
- *Combine* Add dry ingredients into wet, alternating with Buttermilk. Stir in Apples. Spray muffin tin with cooking spray and fill up each cup. Sprinkle with topping and bake for 20 minutes at 400 degrees. Enjoy. :).
