PEANUT BUTTER HAYSTACKS

1 cup butterscotch chips
½ cup peanut butter
½ cup salted peanuts
2 cups chow mein noodles

Steps:

  • Melt butterscotch chips and peanut butter on top of a double boiler, or in a microwave. Blend together.
  • Stir peanuts and noodles gently into the melted peanut butter mixture.
  • Drop dough by forkfuls onto waxed paper. Cool until set.

Haystack Cookies are an easy no bake cookie with white chocolate, butterscotch chips, peanut butter and chow mein noodles you can make in under 20 minutes!

12 ounces white chocolate disks (, (melting disks work better than chips which tend to burn))
12 ounces butterscotch chips
1 cup peanut butter (, (avoid natural peanut butters))
12 ounces chow mein noodles

Steps:

  • Add the white chocolate and butterscotch chips together in a large microwave safe glass bowl.
  • Microwave in 30 second increments, stirring well in between each one, until fully melted (should be 90 seconds total).
  • Stir in the chow mein noodles and the peanut butter until well mixed.
  • Using a 2 tablespoon sized scoop, scoop out 30 "cookies" onto two parchment paper lined baking sheets and let them sit at room temperature for 1 hour to harden or put them in the refrigerator for 10 minutes to harden before serving.

I got this recipe from a good friend. I can't say enough about these. If you don't like super-sweet cookies, this is for you. Not to mention it's packed full of "goodness"

1/3 cup peanut butter
2/3 cup honey
2/3 cup cold water
1/3 cup mashed banana
1 teaspoon salt
2/3 cup flour
2/3 cup quick-cooking oats
4 cups flaked coconut
1 cup chopped nuts
2 cups chopped dates

Steps:

  • Mix peanut butter, honey, banana, water and salt. Add rest of ingrediant and mix together. Form a ball using a tablespoon and press each ball together tightly. Place each ball onto a sprayed cookie sheet and bake at 350 degrees for approximately 20 minutes.
  • My friend used raw honey, natural-smooth peanut butter, unsweetened coconut and raw honey.
  • Enjoy!

1 cup semisweet chocolate chips
1 cup milk chocolate chips
3 cups chow mein noodles
1/2 cup roughly chopped almonds
1/2 cup shelled pistachios
2 tablespoons assorted holiday sprinkles

Steps:

  • Heat 2 inches of water in a pot to a simmer. Add the semisweet and milk chocolate to a bowl and place over the pot of simmering water. Allow to melt, stirring occasionally, 4 to 5 minutes.
  • Meanwhile, add the noodles, almonds and pistachios to a large bowl and set aside.
  • When the chocolate has melted completely, pour over the noodle and nut mixture. Mix until everything is well coated in the melted chocolate.
  • Using 2 spoons, drop tablespoon mounds onto 2 parchment-lined baking sheets. Sprinkle the holiday sprinkles over the top. Allow to dry completely before storing, about 1 hour.

  • In a saucepan bring sugar, cocoa, milk and butter or margarine to a boil. Remove from heat.
  • Stir in oats, coconut, nuts and salt. Drop quickly from teaspoon on wax paper. Let cool.

2/3 cup water, cold

2/3 cup whole wheat flour
2/3 cup oats, quick
4 cups unsweetened coconut, Flaked
1 cup pecans, chopped
2 cups dates, chopped

Steps:

  • Mix together peanut butter, honey, water and salt. Combine flour, oats, coconut, pecans & dates. Add wet ingredients to the dry and mix together. Form balls the size of walnuts, pressing together lightly. Place on parchment paper and bake at 350 degrees for 15 minutes or until lightly browned. Makes 60 cookies.
