¾ cup all-purpose flour
¾ cup whole wheat flour
¼ cup ground quinoa
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¾ cup honey
½ cup coconut oil, melted
¼ cup almond milk
2 egg whites
1 ½ cups chopped kiwi fruit

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Whisk all-purpose flour, whole wheat flour, ground quinoa, baking powder, baking soda, and cinnamon together in a large bowl. Beat honey, coconut oil, almond milk, and egg whites together in another bowl. Pour honey mixture into flour mixture and stir until batter is just combined.
  • Fold chopped kiwi into batter. Divide batter between prepared muffin cups.
  • Bake in the preheated oven until golden brown and set, about 20 minutes.

1/2 cup coconut flour
1/2 teaspoon sea salt
1 teaspoon baking soda
4 eggs
3 tablespoons coconut milk
1/2 cup coconut oil
1 cup coconut sugar
1 tablespoon coconut extract
1/4-1/2 cup shredded coconut

Steps:

  • In one mixing bowl combine sifted coconut flour, salt, and baking soda.
  • In another mixing bowl, combine the eggs, coconut milk, coconut oil, coconut sugar, coconut extract.
  • Add the dry ingredients to the wet mix well but don't over mix.
  • Add shredded coconut and mix together.
  • Use a well oiled muffin tin and fill each one. Should make a dozen.
  • Bake at 375 degrees for 20-22 minutes.
  • Cool and enjoy. Can be frozen.

1/2 cup white flour or 1/2 cup brown flour
1/2 cup cornflour
1/4-1/2 cup oats
2 teaspoons natural bran
1 cup yoghurt
orange zest
1/4 cup sunflower oil
1/4 cup white sugar
2 teaspoons honey
1 teaspoon baking powder
1 teaspoon baking soda
2 eggs or 2 egg whites
1/4 cup raisins or 1/4 cup dried fruits
1 teaspoon vanilla

Steps:

  • Mix the yoghurt & the oats & set aside.
  • Mix the dry ingredients.
  • Beat the oil, sugar & honey for 2 minutes.
  • Add eggs one by one while beating.
  • Add the yoghurt & oats while beating .
  • Add the dry ingredients & beat until well mixed together.
  • Add the raisins & the orange zest lastly & mix by spoon for one minute in one direction.
  • Fill cups 2/3 full.
  • Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm or cold with coffee.
