When my sister was in town, my daughter, my sister and I went to a Vegan and Raw Food restaurant! I was very much against it because to be truthful I didn't know what to expect & when we reached the restaurant, they weren't equipped to handle my wheelchair and it was a very bad experience! 2 large soft avocados
2 cups semisweet vegan chocolate chips
1/8 cup soymilk, possibly more needed
1 tablespoon vanilla extract
liquid sweetener, add as much as you want depending on taste
pre-made vegan pie crust
organic raspberries
1 tablespoon orange juice

Steps:

  • Take a pre made vegan crust and lay washe'd and dried raspberries along bottom of crust.
  • In a double boiler melt chocolate chips with soymilk and vanilla.
  • Add sweetener to taste.
  • Mix well, and take off from heat after fully melted so that it does not burn.
  • In a separate bowl mash up the avocado, or pulse in a food processor.
  • Add in orange juice,
  • Get all lumps out.
  • After chocolate cools a bit mix it in with mashed avocado.
  • This mixture should be thick and creamy.
  • Test the sweetness level.
  • Pour over raspberries and place in fridge to set.
  • Enjoy!
  • Top with a vegan whipped cream topping, if desired.

1/8 cup skim milk, possibly more needed
1 T vanilla extract
liquid sweetener, add as much as you want depending on taste
pre-made reduced fat pie crust
raspberries
1 T orange juice

Steps:

  • Take a pre made crust and lay washed and dried raspberries along bottom of crust. In a double broiler melt chocolate chips with milk and vanilla. Add sweetener to taste. Mix well, and take off from heat after fully melted so that it does not burn. In a separate bowl mash up the avocado, or pulse in a food processor. Add in orange juice, Get all lumps out. After chocolate cools a bit mix it in with mashed avocado. This mixture should be thick and creamy. Test the sweetness level. Pour over raspberries and place in fridge to set.

5 tablespoons unsalted butter, melted
1 1/2 cups graham cracker crumbs
1 tablespoon granulated sugar
Pinch of salt
2 medium hass avocados
1 8-ounce package cream cheese, at room temperature
1 14-ounce can sweetened condensed milk
2 1/2 tablespoons fresh lime juice
1 1/2 tablespoons fresh lemon juice
Pinch of salt
Whipped cream or confectioners' sugar, for garnish (optional)

Steps:

  • Make the crust: Preheat the oven to 350 degrees F. Brush an 8-inch springform pan with some of the melted butter. Mix the remaining butter with the graham cracker crumbs, sugar and salt in a bowl. Press the mixture into the bottom and up the sides of the prepared pan. Bake until golden brown, about 15 minutes. Cool completely on a rack.
  • Make the filling: Halve and pit the avocados, then scoop out the flesh and chop. Transfer to a bowl, add the cream cheese and beat with a mixer on medium speed until smooth. Add the condensed milk, lime and lemon juices, and the salt and beat until fluffy, scraping the bowl as needed. Pour the filling into the crust, press a piece of plastic wrap directly on the surface and chill at least 4 hours.
  • Remove the springform ring and slice the pie. Garnish with whipped cream or confectioners' sugar, if desired, and serve immediately (the top will start to brown as the pie sits).
