This recipe for low-fat broccoli soup makes a thick and satisfying dish that is delicious for a fall or winter lunch or any time of year.

2 teaspoons olive oil
3/4 cup onion, chopped
1 stalk celery, chopped
1 medium Yukon Gold potato, peeled and cubed
4 cups fresh broccoli chopped
2 cups low-sodium non-fat chicken, or vegetable broth
1 1/2 cups non-fat milk, or any plant-based beverage

Steps:

  • Gather the ingredients.
  • Heat oil on medium heat in a soup pot or Dutch oven .
  • Gently sauté the onion and celery for 3 to 4 minutes, until the onion is softened.
  • Add the cubed potato, broccoli, broth, and milk. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes, or until all the vegetables are tender.
  • Allow the soup to cool slightly. Transfer to a blender and blend until smooth in 2 or 3 batches.
  • Return the blended soup to the pot and heat gently until ready to serve.
  • Enjoy.

1 medium red onion, chopped
1 garlic clove, crushed
1 tablespoon sunflower oil or 1 tablespoon canola oil
1 bay leaf
1 lb broccoli, chopped
3/4 cup vegetable broth or 3/4 cup chicken broth
3/4 cup white wine
1 cup water
salt and pepper
1/4 cup sunflower seeds, toasted

Steps:

  • Saute the onion and garlic in oil with the bay leaf for 3 to 4 minutes.
  • Add broccoli, and broth, wine, and water. Note: if using already cooked broccoli, add in after simmering for 10 minutes to just heat.
  • Bring to a boil and simmer gently, covered for 10 minutes. The broccoli should be tender but still bright green.
  • Remove the bay leaf and cool slightly.
  • Blend the soup in blender or food processor until completely smooth.
  • Season to taste with salt and pepper.
  • Return to pot and reheat gently.
  • Pour the soup into bowls and sprinkle with the toasted sunflower seeds.

75g wholewheat penne
125g broccoli florets
125g fine beans , trimmed and halved
1 tbsp white miso paste
1 tsp grated ginger
2 tbsp sunflower seeds
1 tbsp extra virgin rapeseed oil
2 x skinless cooked wild salmon fillets

Steps:

  • Boil the pasta for 5 mins, then add the broccoli and beans, and cook 5 mins more or until everything is tender.
  • Drain, reserving the water, then tip the pasta and veg into a bowl and add the miso, ginger, seeds, oil and 3 tbsp pasta water. Flake the salmon into the pasta in large pieces and toss well. Spoon into containers and keep in the fridge until ready to eat.

2 cups fresh broccoli florets
2 bacon strips, cooked and crumbled
1 green onion, chopped
3 tablespoons raisins
1 tablespoon sunflower kernels
DRESSING:
1/3 cup mayonnaise
4 teaspoons sugar
2 teaspoons white vinegar

Steps:

  • In a bowl, combine the broccoli, bacon, onion, raisins and sunflower kernels. In a small bowl, combine the dressing ingredients; stir until smooth. Pour over broccoli mixture and toss gently. Cover and refrigerate for at least 2 hours before serving, stirring occasionally.
