Ginger, soy and pineapple come together to make a delicious, craving-satisfying marinade for Ahi tuna steaks. Plate on top of green beans and top with grilled pineapple for a complete, healthy (high protein, low fat) meal. This recipe comes together so quickly for a tasty weeknight meal.

1/4 cup pineapple juice
2 tablespoons soy sauce
1 teaspoon ginger, grated
1/2 teaspoon light brown sugar
sriracha sauce (to taste)
4 ahi tuna steaks (6 oz each)
1 lb fresh green beans, trimmed and washed
4 pineapple slices
cracked pepper
cooking spray
1 tablespoon olive oil
1/2 tablespoon brown sugar

Steps:

  • Heat grill (or grill pan) to medium high heat.
  • Combine first five ingredients to make the marinade. I love Sriracha, but add slowly, because it is HOT!
  • Sprinkle Ahi tuna steaks with cracked pepper. Spray grill with non-stick spray. Grill each steak for 3-4 minutes each side (for a rare to med rare finish). While cooking, brush each side with marinade.
  • Towards the end of the grilling time, add pineapple slices and grill each side for 1 minute.
  • Meanwhile, heat a separate frying pan to medium high heat. Add olive oil, a splash of the marinade and 1/2 tablespoon of brown sugar. Add green beans and stir fry (7-8 minutes).
  • Plate the tuna steaks on top of 1/4 of cooked green beans. Top each steak with a pineapple slice.
  • Serve with a swirl of Sriracha on each plate and extra marinade on the side for dipping.

4 tuna steaks
peanut oil or vegetable oil, for searing
salt
1/4 cup orange juice
1 tablespoon olive oil
2 teaspoons fresh thyme leaves
1 clove garlic, minced
1 teaspoon orange zest
1 teaspoon lime zest
1/2 teaspoon ground pepper
1 cup chopped fresh pineapple
1 cup chopped yellow bell pepper
1/3 cup rice vinegar
1 tablespoon minced jalapeno chile
1/2 teaspoon curry powder
1/2 teaspoon ground pepper
1 tablespoon olive oil

Steps:

  • Prepare marinade by combining marinade ingredients in shallow dish.
  • Add tuna and coat with marinade.
  • Cover and refrigerate at least 1 hr or more, turning occasionally.
  • Prepare pineapple sauce by puree in blender until smooth.
  • Add bell pepper, vinegar, jalapeno chili, curry powder and ground pepper.
  • process until smooth.
  • Gradually add olive oil.
  • Heat large skillet over high heat.
  • Add small amount of peanut oil to skillet so tuna does not stick.
  • Remove tuna from marinade, season with salt to taste.
  • Add tuna to skillet and cook until brown on each side, about 3 mins per side.
  • Spoon sauce on plate.
  • Place tuna on top of sauce.
  • Serve.

¼ cup sesame oil
2 tablespoons mirin (Japanese sweet wine)

1/2 medium fresh pineapple, peeled and cut into 1/2-inch slices
1 small onion, diced
2 jalapeno peppers, seeded and diced
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
4 tuna steaks (6 ounces each)

1/4 teaspoon salt
1/4 teaspoon pepper

Saito serves the fish with wasabi-laced mashed potatoes.

5 1/2 tablespoons sesame oil
4 cups green cabbage (about 8 ounces)
3 ounces fresh shiitake mushrooms, stemmed, caps sliced
1 baby bok choy, very thinly sliced (about 3 ounces)
1 large carrot, cut into matchstick-size strips (about 3 ounces)
4 green onions, thinly sliced
6 tablespoons oyster sauce
3 1/2 tablespoons reduced sodium soy sauce
3/4 cup chicken stock or 3/4 cup canned low sodium chicken broth
1/4 cup butter, 1/2 stick
3 tablespoons rice vinegar
36 ounces ahi tuna steaks, each about 3/4 inch thick

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat.
  • Add cabbage, mushrooms, bok choy, carrot and green onions and stir-fry until vegetables are crisp-tender, about 3 minutes.
  • Add 3 tablespoons oyster sauce and 3 tablespoons soy sauce; stir 1 minute to blend flavors.
  • Season to taste with salt and pepper.
  • Transfer vegetable mixture to medium bowl.
  • To same skillet (do not clean) add the broth, 1/2 tablespoon oil, remaining 3 tablespoons oyster sauce, remaining 1/2 tablespoon soy sauce, butter and vinegar.

2 teaspoons garlic powder

4 (10 inch) flour tortillas, warmed
½ whole fresh pineapple - peeled, cored, and diced
½ medium red onion, diced

Steps:
