4 medium tart apples, peeled and thinly sliced
1/4 cup sugar
1 tablespoon all-purpose flour
2 teaspoons lemon juice
1/4 teaspoon ground cinnamon
TOPPING:
2/3 cup old-fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons cold butter
Vanilla ice cream, optional

Steps:

  • Toss apples with sugar, flour, lemon juice and cinnamon. Transfer to a greased microwave-safe 9-in. deep-dish pie plate., Mix first four topping ingredients. Cut in butter until crumbly; sprinkle over filling. , Cover with waxed paper. Microwave on high until apples are tender, 5-7 minutes. If desired, serve with ice cream.

I've been following the glycemic index diet for about ten years now. However, that doesn't stop me loving dessert! I've adapted my grand mother's apple crumble to suit the principles of the diet. It's really easy and quick to make and taste oh so yummy. If you leave it out over night the crumble will be really moist the next day and I think its better like that!

1/2 cup buckwheat flour
1/2 cup whole wheat flour
1 cup quick oats
1 cup fructose (or other sugar substitute)
1/3 cup I Can't Believe It's Not Butter® Spread (or butter or margarine)
4 -5 cooking apples (I use Bramley)
2 cups raspberries

Steps:

  • Preheat oven to 180C.
  • Pell and cut the apples and boil them for about 15 minutes.
  • Melt butter in microwave for about 20 seconds.
  • Combine the flour, oats and fructose in large bowl and mix well with hands.
  • Add the melted butter and mix well with hands.
  • Spread apples and raspberries in baking dish and pour the flour mixture on top.
  • Cook for about 25-30 minutes depending on how crunchy you like it.
  • Note: If you make a lot of crumbles it might be worth buying an Apple Peeler Corer Slicer (you can get them online) which will make cutting & peeling the apples almost joyful!

1 cup brown sugar
1/4 pound butter (1 cube) - (softened for 1 hour)
1-cup whole wheat flour
5 pounds apples (granny smith or pippin)
Cinnamon

Steps:

  • 1) To make the crumble topping, mix together butter, flour and brown sugar. You can use a fork - or your fingers. 2) Wash, peel and slice apples (not too thick). Can slice in Cuisinart. 3) Spread apples in an 8x11 rectangular Pyrex. Make sure they are piled pretty high because they shrink. Sprinkle with cinnamon. 4) Crumble the topping over the apples. 5) Bake at 325 for 1 hour or until apples are nice and soft. If not cooking fast enough raise to 350. 6) Serve warm or at room temperature. If it's too hot, you can't taste the apples.

This is our favorite apple crisp. It has a thick layer of a granola topping on it. It is made with Splenda and whole wheat flour to make it a healthier apple treat.

1/2 cup Splenda granular
1/2 cup whole wheat flour
1/2 cup pecans, chopped
1 1/2 cups rolled oats
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup butter, softened
6 cups apples, sliced
1 tablespoon lemon juice

Steps:

  • Mix the butter, Splenda, whole wheat flour, pecans, rolled oats, cinnamon and nutmeg together in a large bowl. Set aside.
  • Peel, core and slice about 6-8 apples. We like to use gala apples as they don't get mushy when baked.
  • As you are slicing them, add them to a bowl with some water to cover them and 1 tablespoon of lemon juice. This will prevent them from turning brown on you while you finish slicing all the apples.
  • Drain the apples.
  • Place them in a baking dish with high sides that you have sprayed with cooking spray.
  • Cover the apples with the topping.
  • Bake at 350F for about 30 minutes or until the apples are soft and the topping looks crispy.

1/4 cup brown sugar
1/2 cup whole wheat flour (or white flour)
1/2 cup rolled oats
2 tablespoons fleishman's olive oil spread, you could use butter (or other healthy butter-like spread (not the kind with added water)
1 tablespoon honey
2 tablespoons cinnamon
cooking spray

Steps:

  • Preheat oven to 375°F.
  • Dice your apples and put them in the bottom of an 8x8-inch baking pan.
  • Mix the remaining ingredients, except for the honey and cooking spray. I start with a spoon and then use my fingers to get that butter mixed in thoroughly.
  • Spread the above mixture on top of the apples.
  • Spray with cooking spray and drizzle with honey.
  • Bake at 375°F for 35 minutes.
