MEATY THICK MAN CHILI
Contrary to the title, it doesn't have men in it. However it is a man's best friend, it's thick, not as tomato-ey as most chili's. Best served with fresh bread.

Steps:
- Place the ground beef in a large pot over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain off grease. Place the pot over medium heat, and add the onion, garlic, green pepper, red pepper and kidney beans. Cook and stir for a few minutes. Stir in the tomato sauce and water, and season with chili powder. Simmer over low heat for 40 minutes uncovered.

TONY'S HE-MAN CHILI
Sounds delicious! I haven't tried it yet - just found it in Tony Chachere's Cajun Country Cookbook.

Steps:
- 1. Brown bacon in large Dutch oven. Remove, crumble and set aside. Slice sausage into one-inch pieces and fry in bacon fat until brown. Remove and set aside with bacon. Pour off excess fat and fry ground beef. Drain and set aside with other meats.
- 2. Pour off excess fat from pot. Saute onion, bell pepper, garlic, and hot pepper over low heat for 2 or 3 minutes. Mash tomatoes. Add tomatoes, Worcestershire sauce, Burgundy wine, and meats to onion mixture. Heat to boiling. Reduce heat and simmer. Season to taste with creole seasoning and simmer for 1/2 hour, stirring occasionally. Add beans with liquid and heat to boiling. Reduce heat and simmer for 1 hour, stirring occasionally.
HE-MAN CHILI
Steps:
- 1. In a skillet over medium-high heat, cook the bacon until evenly brown and crisp. Reserve juices in skillet, and set bacon aside. Brown the sausage in the bacon juices. Set aside. Cook the ground beef in the skillet until evenly brown. Set aside. Saute the onion and green pepper in the skillet juices until tender.
- 2. In a large pot over medium heat, mix the bacon, sausage, beef, onion, green pepper, and jalapeno pepper. Pour in the wine and tomatoes, and season with chili powder. Cook 20 minutes, stirring often.
- 3. Mix in the beans, and continue to cook and stir 25 minutes.
